The French Martini is three ingredients shaken together in about five minutes — vodka, Chambord (a raspberry liqueur), and pineapple juice. It comes out fruity, slightly tart, and just sweet enough, with a natural foam on top from the pineapple juice. If you want something easy to make at home that looks and tastes like a proper cocktail, this is a good place to start.

Before you start

The one thing that actually matters here is how hard you shake. Pineapple juice needs a full 15 seconds of vigorous shaking — not a gentle swirl — to create the frothy layer that sits on top of the finished drink. That foam is not decoration; it changes the texture of the first few sips. The second thing worth doing before you pour: chill your martini glass. Fill it with cold water and a few ice cubes while you prep, then dump it right before you strain. A warm glass flattens the drink fast, and a cold one keeps it tasting sharp for longer.

Common problems and fixes

  • The drink tastes too sweet: Chambord is already quite sweet, and some pineapple juices add even more sugar. If your first sip is cloying, add a small squeeze of fresh lemon juice — about a teaspoon — before shaking. It brings the whole thing back into balance without changing the flavor much.
  • No foam on top after straining: This usually means you didn’t shake hard enough, or you paused mid-shake. Commit to a full 15 seconds of hard shaking without stopping. The foam forms from the pineapple juice emulsifying with the cold air trapped in the shaker.
  • The drink is watery: You over-shook, or your ice was already half-melted before you started. Use fresh ice straight from the freezer, and stop at 15 seconds. Over-shaking dilutes the drink noticeably.
  • The color looks pale or dull: You probably used too little Chambord or measured loosely. Stick to the 15 ml in the recipe — it’s a small amount, but it controls both the color and the raspberry flavor. A splash is not the same as a measured pour.
  • The glass is too warm and the drink goes flat quickly: Chill the glass first (see above). If you don’t have time, at minimum rinse it under cold tap water and shake off the excess right before pouring.

Keeping and reheating

This cocktail does not keep well once made — the foam disappears within a few minutes and the ice dilution continues even after straining. If you want to make it ahead for a group, you can pre-mix the vodka, Chambord, and pineapple juice in a sealed jar or bottle and refrigerate it for up to 24 hours. Keep it cold and give it a good shake in the shaker with fresh ice right before serving each glass. Skip the garnish — it’s not worth the extra dish — and just pour and serve. Do not freeze the pre-mixed liquid; the pineapple juice separates and the texture after thawing is off.

  • Shake vigorously for about 15 seconds until thoroughly chilled. The cocktail should feel cold to the touch when ready.
  • Strain the mixture into a chilled martini glass.

Pro Tips: Shake hard — the pineapple juice creates the signature frothy foam on top. The cocktail should feel ice-cold to the touch before you strain it. Use freshly pressed pineapple juice for a bolder, more natural flavour and better foam.
Substitutions: Try a splash of fresh lime juice for a citrusy zing. You can substitute Chambord with another raspberry liqueur, though Chambord’s depth and sweetness are hard to replicate exactly.
Serving Suggestion: Serve in a well-chilled martini glass or a coupe glass. A frozen glass keeps the drink colder longer — pop yours in the freezer for 15 minutes before serving.
Make-Ahead: You can pre-measure the vodka, Chambord, and pineapple juice into a small bottle and refrigerate for up to 4 hours. When ready to serve, pour over ice in a shaker and shake until frothy.

Do I need a cocktail shaker, or can I use something else?

You really do need something with a tight lid that can hold ice and liquid safely while you shake hard. A mason jar with a screw-top lid works fine in a pinch — just make sure it seals completely before you start shaking.

Can I use canned or carton pineapple juice instead of fresh?

Yes, canned or carton pineapple juice works and is what most people use at home. Fresh-pressed juice gives a slightly brighter flavor, but the difference is small and not worth the effort unless you already have a pineapple on hand.

What kind of vodka should I buy for this?

A mid-range, unflavored vodka is all you need — nothing fancy. Avoid flavored vodkas like citrus or vanilla, which will throw off the balance of the drink.

Is there a non-alcoholic version I can make?

You can get close by replacing the vodka with sparkling water or a neutral non-alcoholic spirit, and swapping the Chambord for a small amount of raspberry syrup (about a teaspoon, since syrup is much sweeter than the liqueur). The result won’t be identical, but the pineapple-raspberry flavor is still there.

How do I make more than one serving at a time?

Just multiply the ingredient amounts by however many servings you need, but shake in batches — don’t overload the shaker or it won’t chill and foam properly. Two servings per shake is a reasonable limit for a standard cocktail shaker.
