This is a chicken pot pie made with store-bought puff pastry instead of a traditional pie crust — which means you get a shatteringly flaky, golden top with almost no extra effort. The filling is a straightforward cream-and-broth sauce loaded with chicken and vegetables, and the whole thing comes together in about 80 minutes. It’s the kind of dinner that looks like you tried harder than you did.

What makes this version work

Two things actually matter here. First, browning the chicken before it goes into the sauce — those 5–7 minutes in the skillet build flavor that simmering alone won’t give you. Don’t rush it or crowd the pan, or the chicken steams instead of browns. Second, letting the filling thicken properly before it goes under the pastry. If the sauce is still thin when you assemble, it will bubble up and make the underside of the puff pastry soggy. Give it the full 5 minutes of simmering and stir as it thickens — you want it to coat a spoon before it goes into the dish.

Shopping notes

  • Puff pastry: Most grocery stores carry it in the freezer section, usually in 17–18 oz packages with two sheets. One sheet is enough to top a standard 9-inch baking dish. Thaw it overnight in the fridge — counter-thawing can make it sticky and hard to handle.
  • Chicken broth: Low-sodium store-bought works fine. If you use regular-sodium broth, hold back on the added salt and taste before seasoning.
  • Mixed vegetables: A standard frozen peas-and-carrots blend is perfectly good here. Skip the corn if you don’t have it — the recipe holds up without it.
  • Heavy cream: Half-and-half works as a swap if that’s what you have, though the sauce will be slightly thinner.

What can go wrong

  • Soggy pastry bottom: This happens when the filling is too hot and steamy at assembly, or too thin. Let the filling cool for 5–10 minutes off the heat before laying the pastry over it, and make sure it’s fully thickened first.
  • Pastry doesn’t puff: Usually caused by pastry that got too warm before baking. If your kitchen is hot or you’ve been handling the dough a lot, pop the assembled dish in the fridge for 10 minutes before it goes in the oven.
  • Filling boils over in the oven: Place the baking dish on a foil-lined sheet pan — skip the garnish of extra pastry cutouts on top, not worth the extra dish — and it will catch any drips without a mess.
  • Rubbery chicken: Overcooking the chicken in the skillet and then baking it again is the culprit. Pull it off the heat as soon as it’s just cooked through and no longer pink in the center during the browning step.
  • Bland filling: Taste the sauce before it goes into the baking dish. The flour can mute seasoning — you may need a bit more salt than the recipe suggests depending on your broth.

Storage and reheating

Leftovers keep in the fridge for up to 3 days, covered tightly. Reheat individual portions in a 180°C (350°F) oven for 15–20 minutes — this keeps the pastry from going completely limp, which is what happens in the microwave. If you’re in a hurry, the microwave is fine for the filling, but the pastry will soften. You can freeze the baked pie for up to 2 months; thaw it overnight in the fridge before reheating in the oven. Freezing the unbaked assembled pie also works — go straight from freezer to oven and add 15–20 minutes to the bake time, checking that the pastry is deep golden before pulling it out.

Ingredients
 
 

  • 1.1 lbs boneless, skinless chicken breasts cubed into 1-inch pieces, about 500g
  • 2 tablespoons olive oil regular or light olive oil — save extra virgin for finishing
  • 1 cup yellow onion finely chopped, about 150g
  • 2 cloves garlic minced
  • 2 cups mixed vegetables peas, carrots, and corn; fresh or frozen, about 300g
  • ¼ cup all-purpose flour about 30g
  • 2 cups chicken broth preferably homemade, about 480ml
  • ½ cup heavy cream about 120ml
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper freshly ground
  • 1 sheet puff pastry approximately 320g / 11oz, thawed according to package instructions
  • 1 medium egg beaten, for egg wash

Instructions
 

  • Preheat your oven to 200°C / 400°F (180°C fan-forced).
  • In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook until golden brown, about 5-7 minutes. Remove and set aside.

  • In the same skillet, add the onions and sauté until translucent, about 3 minutes. Add the garlic and cook for 1 minute more.

  • Stir in the mixed vegetables and cook for another 2 minutes. Sprinkle the flour over the vegetables and stir to coat.

  • Gradually pour in the chicken broth while stirring continuously, then add the cream, salt, and pepper. Let the mixture simmer until it thickens, about 5 minutes. Return the chicken to the skillet and mix well. Remove from heat.

  • Roll out the puff pastry on a lightly floured surface to about 3mm (⅛-inch) thickness and cut it about 2.5cm (1 inch) larger than your 9-inch (23cm) baking dish on all sides.

  • Pour the filling into a 9-inch (23cm) deep-dish pie dish (at least 5cm / 2 inches deep), or divide among four individual 12cm (5-inch) oven-safe ramekins. Drape the puff pastry over the filling, fold the overhanging edges under and crimp with a fork to seal against the rim of the dish. Cut 3–4 small slits in the top to allow steam to escape. Brush the top with the beaten egg for a deep golden glaze.

  • Bake for 30–35 minutes until the pastry is deep golden brown and puffed, and the filling is bubbling through the steam vents. The internal temperature of the filling should reach at least 74°C / 165°F.

Notes

Storage: Refrigerate leftovers tightly covered for up to 3 days. Reheat in a 180°C / 350°F oven for 15–20 minutes to keep the pastry crisp — microwaving will soften it.
Freezer-friendly: Freeze baked pies for up to 2 months. Thaw overnight in the fridge before reheating. You can also freeze unbaked assembled pies — bake from frozen at 200°C / 400°F, adding 15–20 minutes to the bake time.
Make-ahead: Prepare the filling up to 2 days ahead and refrigerate. Assemble with pastry and bake when ready — allow an extra 5 minutes of bake time if the filling is cold.
Substitution: Swap heavy cream for full-fat coconut cream for a dairy-lighter filling, or use rotisserie chicken (about 2 cups shredded) and skip the browning step entirely.
Pro tip: Deglaze the pan with 2–3 tablespoons of dry white wine after browning the chicken — it lifts the fond and adds a subtle depth to the sauce that broth alone can’t match.

Can I use rotisserie chicken instead of raw chicken breasts?

Yes, and it saves real time. Use about 2 cups of shredded rotisserie chicken and skip the browning step entirely — just add it back in with the sauce after it thickens. The flavor will be slightly different since you won’t get those browned bits, but it’s a solid weeknight shortcut.

Do I need a specific type of baking dish?

A standard 9-inch pie dish or a similar-sized oven-safe skillet both work. The main thing is that the dish is deep enough to hold the filling without it bubbling over the sides — at least 2 inches of depth is helpful.

Can I make this ahead of time?

My puff pastry cracked when I tried to unroll it — what happened?
