The Blue Hawaiian is a blended cocktail — white rum, blue curaçao, coconut cream, and pineapple juice — that comes together in about five minutes with a blender and a cup of ice. It’s genuinely easy to make at home, and the ingredients are cheap enough that you can batch a round for a small group without spending much. If you’ve got a bottle of rum sitting around and a can of coconut cream in the pantry, you’re most of the way there.

The short version of why this works

Two things matter here. First, use coconut cream, not coconut milk — cream is thicker and higher in fat, which gives the drink its smooth, almost milkshake-like body. Coconut milk will blend up thin and watery. Second, the ratio of crushed ice to liquid is what controls texture. One cup of crushed ice to about five ounces of liquid (as written) gives you a thick, scoopable slush. Cut the ice and you get a thin, soupy drink; add too much and the blender struggles and the flavor gets diluted. Get those two things right and the rest takes care of itself.

Storage and reheating

This drink doesn’t store well once blended — the ice melts and the layers separate within about 20 minutes. If you want to prep ahead, combine the rum, blue curaçao, coconut cream, and pineapple juice in a jar or pitcher and refrigerate for up to 24 hours. When you’re ready to serve, pour the pre-mixed liquid into the blender with fresh ice and blend as usual. Don’t freeze the finished drink; the texture won’t recover once thawed.

Troubleshooting

  • Drink is too sweet: Blue curaçao brands vary a lot in sweetness. If yours is very sweet, cut it back to ¾ oz and add a small squeeze of fresh lime juice to balance it out.
  • Color looks green instead of blue: This usually means your pineapple juice is too yellow and is mixing with the blue curaçao. Use a curaçao with a deeper, more saturated blue color, or reduce the pineapple juice slightly. The color is always more vivid right after blending before everything fully mixes.
  • Blender won’t catch the ice: Add the liquid to the blender first, then the ice on top. If your blender is underpowered, let the ice sit for two minutes to soften slightly before blending.
  • No blue curaçao on hand: Substitute with triple sec or Cointreau for the orange flavor, then add a small drop of blue food coloring — same result, and the note in the recipe card already confirms food coloring works fine for the mocktail version.
  • Drink tastes flat or boozy-harsh: This usually means the coconut cream is low quality or the rum is rough. A tablespoon of canned cream of coconut (like Coco López) stirred in after blending smooths it out considerably — skip the garnish, not worth the extra dish — and rounds off any sharp edges from cheaper rum.

Ingredients
 
 

  • 1 ½ oz white rum 45ml, choose a clean, smooth white rum for the best flavour
  • 1 oz blue curaçao 30ml
  • 1 ½ oz coconut cream 45ml, use full-fat canned coconut cream, not coconut milk — the higher fat content creates a thick, creamy texture
  • 2 oz pineapple juice 60ml, freshly pressed gives the brightest flavour, but store-bought 100% pineapple juice works well
  • 1 cup crushed ice 150g
  • 1 slice fresh pineapple for garnishing
  • 1 piece maraschino cherry for garnishing

Instructions
 

  • In a blender, combine the white rum, blue curaçao, coconut cream, pineapple juice, and crushed ice.

  • Blend on high for 15-20 seconds until completely smooth and thick with no visible ice chunks — the consistency should be like a thick milkshake or frozen daiquiri.
  • Pour into a hurricane glass or tall cocktail glass that has been chilled in the freezer for at least 15 minutes.
  • Garnish with a fresh pineapple slice wedged onto the rim and a maraschino cherry on a cocktail pick.

Substitution: Swap blue curaçao for triple sec or Cointreau plus one drop of blue food colouring for the same citrus flavour and colour.
Non-Alcoholic Version: Replace rum and curaçao with extra coconut cream and pineapple juice, plus one drop of blue food colouring.
Pro Tip: Chill your hurricane glass in the freezer for 15 minutes before serving — a cold glass keeps the frozen texture intact significantly longer.

FAQ

Can I use coconut milk instead of coconut cream?

No — coconut milk will make the drink thin and watery. Coconut cream has a much higher fat content, which is what gives the blended drink its thick, creamy texture. If you only have full-fat canned coconut milk, scoop the solid cream from the top of an unshaken can and use that instead.

What can I use instead of blue curaçao?

Triple sec or Cointreau work as a direct swap for the orange-citrus flavor. Add a small drop of blue food coloring to the blender if you want the color — a little goes a long way, so start with one drop.

Can I make this without a blender?
