The Lava Flow is a blended cocktail made with light rum, coconut rum, pineapple juice, coconut cream, and strawberry purée — two separate blends that get layered and swirled together in the glass. It takes about 10 minutes and makes 2 drinks. The main reason to make it is that the layered red-and-white effect looks genuinely impressive for the effort involved, and most of the ingredients are pantry staples or easy freezer finds.

Before you start

The one technique that actually matters here is keeping the two blends separate until they hit the glass. If you blend everything together, you lose the visual effect entirely — and that’s most of what makes this drink worth making. Blend the strawberry and ice first, pour it into the glasses, then blend the rum mixture without rinsing the blender (a quick wipe is fine). Pour the rum blend slowly over the back of a spoon held just above the strawberry layer if you want a cleaner separation before swirling. The second thing worth knowing: coconut cream separates in the can, so stir or shake it thoroughly before measuring — an unblended lump of fat will leave your rum mixture grainy rather than smooth.

Shopping notes

  • Coconut cream vs. coconut milk: Coconut cream is thicker and richer. Full-fat coconut milk works as a substitute — just use the same amount and expect a slightly thinner, less sweet result. Cream of coconut (like Coco López) is sweetened, so if that’s what you have, cut back on any added sugar and know the drink will be noticeably sweeter.
  • Strawberry purée: You don’t need to buy it pre-made. Frozen strawberries blended straight from the bag work well and are usually cheaper than fresh. No need to thaw them — they double as part of your ice.
  • Coconut rum: If you only have light rum, add a small splash of coconut extract (about ¼ teaspoon) to the blender. It’s not identical, but it gets you close enough. Skip the garnish — not worth the extra dish.
  • Pineapple juice: Canned or carton juice is perfectly fine here. Fresh-squeezed is lovely but makes no meaningful difference once blended with rum and coconut cream.

Troubleshooting

  • The layers sink and mix immediately: Your strawberry purée is probably too thin. Blend it with more ice so it’s thick enough to support the rum mixture on top. It should hold a soft-serve consistency, not pour like juice.
  • The rum blend is icy and chunky, not smooth: You likely used too much ice or didn’t blend long enough. Run the blender for a full 30–45 seconds on high. If it’s still chunky, add a small splash of pineapple juice to loosen it and blend again.
  • The drink tastes flat or watery: Crushed ice melts faster than cubed ice during blending, diluting the drink quickly. Use the drink immediately after blending — it doesn’t hold well. If you’re making these for a group, blend in batches right before serving rather than ahead of time.
  • The coconut cream clumps in the blended mixture: It wasn’t stirred before measuring. If you notice clumps after blending, run the blender for another 20 seconds — the clumps usually break down with more time.
  • The strawberry layer tastes bland: Frozen strawberries vary a lot in sweetness. Taste the purée before pouring — if it needs a lift, stir in a small squeeze of lemon juice or a teaspoon of sugar before blending.

Ingredients
 
 

  • 2 oz light rum 60ml
  • 2 oz coconut rum 60ml, such as Malibu
  • 4 oz pineapple juice 120ml, freshly squeezed if possible
  • 2 oz coconut cream 60ml, well-stirred before measuring
  • 2 oz strawberry purée 60ml, from fresh or frozen strawberries
  • 1 cup ice crushed, about 140g

Instructions
 

  • Add the strawberry purée and ½ cup (70g) of crushed ice to a blender. Blend on high for 15–20 seconds until smooth and slushy. Divide evenly between two glasses.

  • Without washing the blender (a quick wipe is fine), add the light rum, coconut rum, pineapple juice, coconut cream, and remaining ½ cup (70g) crushed ice. Blend on high for 15–20 seconds until smooth and creamy.

  • Slowly pour the coconut-rum blend over the back of a spoon held just above the strawberry layer in each glass. This slows the pour and creates a cleaner separation between the two layers.
  • Drag a cocktail stirrer or bar spoon gently through the layers once or twice to create the signature lava-swirl marble effect. Serve immediately.

Notes

Storage: Lava Flow cocktails cannot be stored — the ice melts and layers collapse within minutes. Measure and prep ingredients up to 2 hours ahead, but blend just before serving.
Make-Ahead: Pre-portion all liquid ingredients into two separate containers (strawberry in one, rum mixture in the other) and refrigerate. When ready, just add ice and blend.
Substitution: Swap both rums for equal parts pineapple juice and coconut water for a virgin version. The layered effect still works.
Pro Tips: Use frozen strawberries instead of fresh purée plus ice — they act as both flavour and ice, giving a thicker, slushier texture without extra dilution. Pour the white rum blend over the back of a spoon held just above the strawberry layer for cleaner separation before swirling.
Serving Suggestion: Serve in hurricane glasses garnished with a fresh strawberry on the rim. Pair with coconut shrimp, poke bowls, or grilled pineapple skewers for a Hawaiian-themed spread.

Can I make this without alcohol?
