This is a straightforward ground beef and tater tot casserole — one skillet, one baking dish, about 70 minutes total. The filling comes together on the stovetop while the oven heats, so there’s no waiting around. It feeds six people from mostly freezer and pantry staples, which is reason enough to keep it in regular rotation.

Ingredient notes

  • Cream of mushroom soup (10.5 oz can): This is the sauce base, so the brand matters more than you’d think. A watery store-brand can make the filling loose. Go with a thicker, name-brand version if you’ve had runny casseroles before.
  • 85% lean ground beef: The fat content here is intentional. Leaner beef dries out during the bake; 85/15 keeps the filling moist without making it greasy if you drain excess fat after browning.
  • Frozen mixed vegetables: Go straight from the freezer — don’t thaw them first. Thawed vegetables release extra water and can make the filling soupy.
  • Tater tots (32 oz): Arrange them frozen and straight from the bag. A single snug layer gives you the best crust. Skip the garnish of fresh herbs if you’re tempted — not worth the extra dish.
  • Whole milk: Skim or 2% will work in a pinch, but whole milk gives the sauce better body.

Why this recipe works

Two things make this casserole reliable. First, building the sauce on the stovetop before it goes into the oven means the cream of mushroom soup and milk have already combined with the beef drippings and aromatics — you’re not relying on the oven to do that work, so the filling is cohesive rather than separated and watery. Second, the cheese goes on in the last 10 minutes rather than at the start. Add it too early and it scorches before the tots are done; add it at the end and it melts into a clean, even layer without burning at the edges.

If something goes sideways

  • Tots are soft, not crispy: Your oven likely didn’t fully preheat, or the dish was covered at some point. Make sure the oven is fully up to temperature before the dish goes in, and leave it completely uncovered the entire bake.
  • Filling is watery: This usually means the vegetables were thawed before adding, or the beef wasn’t drained. If you catch it before baking, stir in a tablespoon of cornstarch mixed with a splash of cold milk to tighten it up.
  • Cheese browned too fast: Oven runs hot, or the dish was on a high rack. Move it to the center rack and check at 7 minutes instead of 10.
  • Beef filling tastes bland: Cream of mushroom soup varies a lot in sodium. Taste the filling before it goes into the baking dish and adjust salt then — it’s much harder to fix after baking.
  • Tots stuck to the beef layer: This happens when the filling is too wet and the tots sink in. Spread the beef mixture as flat and even as possible, let it cool for two or three minutes off the heat before adding the tots, then press them on gently rather than pushing them down.

  • 1 tbsp olive oil Extra virgin
  • 1 lb ground beef 85% lean, grass-fed for best flavor
  • 1 cup onion finely chopped
  • 3 cloves garlic minced
  • 1 can cream of mushroom soup 10.5 oz, organic preferred
  • 1 cup milk whole
  • 2 cups frozen mixed vegetables such as peas, corn, and carrots
  • 1 tsp salt
  • ½ tsp black pepper freshly ground
  • 1 package tater tots 32 oz, preferably organic
  • 1 cup cheddar cheese shredded

Instructions
 

  • Preheat your oven to 200°C (390°F).
  • In a large skillet, heat the olive oil over medium heat until shimmering. Add the ground beef and cook until browned, about 5-7 minutes, ensuring to break it up with a wooden spoon.
  • Add the onion and garlic to the ground beef, continuing to sauté until the onion becomes translucent, roughly 3-4 minutes.
  • Stir in the cream of mushroom soup and milk, allowing the mixture to come together into a simmer. Mix in the frozen vegetables, salt, and black pepper then remove from heat.
  • Transfer the beef mixture into a 9x13-inch baking dish, spreading it evenly. Arrange the tater tots in a single layer on top.
  • Bake in the preheated oven for about 30 minutes or until the tater tots are golden and crispy. Sprinkle shredded cheddar cheese over the top and return to oven for another 10 minutes until the cheese melts and bubbles.
