This is a straightforward pork and cabbage soup built on a short ingredient list — pork shoulder, green cabbage, smoked paprika, and chicken broth. It takes about 20 minutes of hands-on work, then the pot does the rest. Make it when you need something filling and low-effort that actually tastes like it took effort.

Before you start

Two things matter most here. First, the sear on the pork: get your pot genuinely hot before the meat goes in, and don’t crowd the pieces. If they steam instead of brown, you lose the fond — those browned bits stuck to the bottom of the pot that give the broth its depth. Work in batches if needed. Second, let the paprika toast in the dry-ish pan for a full minute before adding liquid. Smoked paprika can taste flat and dusty if it never gets any heat; that one minute wakes it up and makes a real difference in the finished soup.

Mistakes to avoid

  • Cutting the cabbage too small. Rough, palm-sized chunks hold up through 90 minutes of simmering. Small pieces turn to mush well before the pork is tender.
  • Skipping the deglaze scrape. After you pour in the broth, use a wooden spoon to scrape every browned bit off the bottom. If you leave it, it can scorch during the long simmer and turn the soup bitter.
  • Adding the vinegar too early. Apple cider vinegar goes in at the very end, off the heat or just before. Adding it during the simmer cooks off the brightness you’re putting it in for.
  • Not tasting before serving. Pork shoulder and store-bought broth vary a lot in saltiness. Give the soup a taste in the last 10 minutes and adjust — it often needs more salt than you’d expect.
  • Rushing the simmer. Pulling the soup at 45 minutes because the cabbage looks done will leave the pork chewy. The full 90 minutes is what makes pork shoulder actually tender. Skip the garnish — not worth the extra dish.

Storage and reheating

Let the soup cool to room temperature, then transfer to airtight containers. It keeps in the fridge for up to 4 days and actually tastes better on day two once the flavors have had time to settle. For longer storage, freeze it in portions for up to 3 months — leave a little headspace in the container since the broth expands. Reheat on the stovetop over medium-low heat, stirring occasionally, until it’s steaming throughout. The microwave works too; cover the bowl loosely and heat in 90-second intervals, stirring between each. The cabbage softens a bit more with each reheat, which most people find perfectly fine.

  • 1 pound pork shoulder cubed into 2-inch pieces, ideally organic
  • 1 head green cabbage roughly chopped
  • 1 large onion finely diced

Aromatics and Seasoning

  • 2 cloves garlic minced
  • 1 tsp paprika smoked, adds depth
  • 2 liters chicken broth preferably homemade or low-sodium

Finishing Touches

  • 1 tbsp apple cider vinegar to brighten flavors
  • 1 pinch salt to taste
  • 1 pinch black pepper freshly ground, to taste

Instructions
 

  • Heat a large pot over medium-high heat and add a splash of olive oil.
  • Sear the cubed pork shoulder until browned on all sides, about 5-7 minutes.
  • Add the diced onion and minced garlic to the pot, cooking until the onions turn translucent and fragrant.
  • Sprinkle the paprika over the mixture, stirring constantly to avoid burning. Allow the spices to bloom for about 1 minute.
  • Pour in the chicken broth and deglaze the pan, scraping any browned bits off the bottom.
  • Add the chopped cabbage, reduce the heat to low, and let the soup simmer gently for 1.5 hours, or until the pork is tender.
  • Finish the soup with a tablespoon of apple cider vinegar, and season with salt and pepper to taste.

FAQ

Can I use a different cut of pork instead of shoulder?

Pork shoulder is the best choice here because it becomes tender and stays juicy over a long simmer. Leaner cuts like loin or tenderloin will dry out and turn stringy after 90 minutes — if that’s all you have, add them in the last 30 minutes instead.

My broth looks thin — how do I fix it?

Remove the lid for the last 20 minutes of simmering to let some liquid evaporate and concentrate the flavor. You can also mash a few pieces of the softened cabbage against the side of the pot with a spoon — it thickens the broth slightly without changing the texture much.

Can I make this in a slow cooker?

Yes, but still do the sear and the paprika bloom on the stovetop first — skipping those steps in a slow cooker version produces a noticeably blander soup. After that, transfer everything to the slow cooker and cook on low for 6 to 7 hours or high for 3 to 4 hours, adding the vinegar at the end.

Do I need to core or pre-cook the cabbage before adding it?

No pre-cooking needed — just remove the outer leaves, cut out the tough core, and roughly chop the rest. The long simmer takes care of everything, and raw cabbage goes straight into the pot with no issues.
