This is a straightforward smash burger — 80/20 ground beef, American cheese, a buttered potato bun, and a four-ingredient sauce you mix in one bowl. The whole thing is done in 25 minutes, and the technique is simpler than most weeknight dinners. If you want a genuinely crispy, juicy burger at home without a grill or special equipment, this is the recipe to start with.

What makes this version work

Two things matter here and nothing else. First, the heat: your cast-iron skillet needs to be fully preheated — not warm, not medium-high, but actually smoking before the beef touches it. That’s what creates the dark, crispy crust on the outside while the inside stays juicy. Second, the fat content in the beef: 80/20 ground chuck has enough fat that you don’t need oil in the pan, and that fat is what keeps a thin patty from drying out in the 2–3 minutes it takes to cook. Leaner beef will give you a drier, tougher result every time, so don’t substitute it.

What can go wrong

  • The patty sticks to the spatula when you smash it. This usually means you skipped the wax paper between the spatula and the meat. A small square of wax paper lets you press hard without the beef tearing apart when you pull the spatula back.
  • The burger steams instead of searing. This happens when the pan isn’t hot enough before you add the beef. Don’t rush the preheat — 3 to 4 minutes on high heat is the minimum for cast iron. If you see steam but no sizzle when the ball hits the pan, pull it off and wait longer.
  • The cheese doesn’t melt properly. American cheese melts fast, but only if you flip and immediately lay the slice on the hot patty. If you wait even 30 seconds after flipping, the surface cools and the cheese just sits there. Flip, cheese on, done.
  • The bun gets soggy before you finish assembling. Toast the buns right before you need them, not at the start of cooking. A toasted bun holds up to the sauce; a bun that sat on the counter for five minutes while you cooked the patties will go soft fast. Skip the extra garnish of raw onion on top of the sauce — not worth the extra prep when thinly sliced onion underneath the patty does the same job.
  • The patties are uneven thickness after smashing. Press straight down with the spatula, not at an angle. Uneven pressure gives you a patty that’s thick in the middle and paper-thin at one edge, which means part of it overcooks before the rest is ready.

Leftovers and make-ahead

Cooked smash burger patties keep in the fridge for up to 3 days in an airtight container. Reheat them in a dry skillet over medium heat for about 2 minutes per side — the microwave works in a pinch but turns the crust soft. The burger sauce keeps refrigerated for up to a week in a sealed jar, so making a double batch is easy and saves time next round. Raw beef balls can be shaped and stored in the fridge for up to 24 hours before cooking; keep them loosely covered so they don’t dry out on the surface. Fully assembled burgers don’t store well — build them fresh each time.

Ingredients
 
 

For the Burger Patties:

  • 1.5 pounds ground beef (80/20 blend) look for freshly ground chuck for a juicier patty
  • 1 teaspoon kosher salt to season the patties
  • 0.5 teaspoon freshly ground black pepper

For the Burger Build:

  • 4 slices American cheese preferably deli-style for better melt
  • 4 pieces potato burger buns toasted for added texture
  • 2 tablespoons unsalted butter for toasting the buns
  • 0.25 cup dill pickle chips optional
  • 0.25 cup shredded iceberg lettuce cold and crunchy
  • 1 medium red onion thinly sliced

For the Burger Sauce:

  • 0.25 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon pickle juice from dill pickles

Instructions
 

  • Divide the 1.5 pounds of ground beef into 4 equal balls (about 6 ounces each). Do not overwork the meat—keep them loose for better texture.
  • Preheat a cast iron skillet or griddle over high heat until just smoking—about 3-4 minutes. No oil needed due to high-fat content in the beef.
  • Place the beef balls on the hot surface and immediately smash them down with a metal spatula until very thin—roughly 1/4" thick. Use wax paper between the meat and spatula if needed.
  • Season with kosher salt and black pepper. Let cook undisturbed for 2-3 minutes until the edges are crispy and deeply browned.
  • Flip and immediately top with American cheese. Cook another 1 minute until the cheese melts. Remove from heat.
  • While burgers cook, toast the buns in a skillet with melted butter until golden brown, about 1-2 minutes.
  • Mix together mayonnaise, ketchup, mustard, and pickle juice in a small bowl to create the burger sauce.
  • Assemble Each Burger: Bottom bun with sauce, lettuce, onion, smashed patty with cheese, pickles, and more sauce. Cap with top bun.

  • For a gluten-free version, use gluten-free buns.

Common questions

Can I use a regular stainless steel or nonstick pan instead of cast iron?

A heavy stainless steel pan works fine; a nonstick pan is not recommended. Nonstick coatings aren’t designed for the high heat this recipe needs, and most manufacturers advise against it — you won’t get the crust, and you may damage the pan.

How do I know when the skillet is actually hot enough?

Hold your hand a few inches above the surface — you should feel strong, immediate heat radiating up. A drop of water flicked onto the pan should evaporate almost instantly; if it just sizzles and sits, keep waiting.

Can I use 85/15 or 90/10 ground beef if that’s what I have?

You can, but the result will be noticeably drier and less flavorful. The fat in 80/20 is what keeps a thin patty juicy; leaner beef works better in thicker burgers where there’s more interior moisture to retain.

Do I really need to smash the patty immediately, or can I wait a few seconds?

Smash it the moment it hits the pan — within the first 10 seconds. Once the outside of the beef starts to cook and firm up, you can’t flatten it further without the patty crumbling or tearing unevenly.

Can I make this for a crowd without everything getting cold?

Yes — keep finished patties on a wire rack set over a baking sheet in a 200°F oven while you cook the rest. Don’t stack them or cover them tightly, or the crust will steam and go soft.
