A Buttery Nipple is two ingredients and five minutes, which makes it one of the easiest shots to pull off for a group. The layered look does the work for you — pour carefully and it arrives at the table looking intentional. If you’re making a round for guests, the math scales cleanly and nothing needs cooking or chilling ahead of time beyond keeping the bottles cold.

Before you start

The only technique that actually matters here is the pour. Irish cream is denser than you might expect, but it’s still lighter than butterscotch schnapps, so it will float — if you slow it down. Hold the back of a bar spoon just above the surface of the schnapps and pour the Irish cream over it in a thin, steady stream. Go too fast and the layers collapse into each other immediately. That’s the whole job. The second thing worth knowing: temperature affects how cleanly the layers hold. Warm liqueurs mix more readily, so pull both bottles from the fridge right before you pour, especially if you’re making several shots back to back.

What can go wrong

  • Layers merge before serving: This usually means the pour was too fast or the glass was warm. Rinse shot glasses with cold water and dry them right before filling, and slow your pour to a near-drip over the spoon.
  • Irish cream curdles or looks grainy: Irish cream can curdle if it contacts something acidic or if it’s been open too long. Check the bottle’s expiration date and make sure your schnapps isn’t an unusual flavored variety with citrus notes.
  • Shot tastes flat or too sweet: Butterscotch schnapps varies a lot by brand — some are much sweeter than others. If a batch tastes one-dimensional, a very small pinch of flaky salt on top of the Irish cream layer can sharpen the flavor without changing the look. Skip the garnish beyond that — not worth the extra dish.
  • Scaling up causes inconsistent layers: When making multiple shots at once, pour all the schnapps first across every glass, then go back and layer the Irish cream one glass at a time. Trying to do both steps simultaneously leads to rushed pours and broken layers.
  • Shot glass too narrow: A very narrow shooter makes the spoon technique nearly impossible. A standard 1.5 oz shot glass with a slightly wider mouth gives you enough room to maneuver the spoon without touching the sides.

About the ingredients

Butterscotch schnapps is the ingredient most people don’t keep on hand. DeKuyper is the most widely available brand in the US and works fine. Irish cream is more forgiving — Baileys is the benchmark, but store-brand versions hold layers just as well and cost noticeably less when you’re buying for a crowd. If someone at the table doesn’t drink alcohol, there’s no clean non-alcoholic substitute that replicates the layered effect, so it’s worth knowing upfront rather than improvising on the spot.

Make-ahead notes

You can pre-measure both liqueurs into separate small pitchers or squeeze bottles up to a few hours ahead and keep them refrigerated — this speeds up service significantly when you’re pouring for a group. Do not pre-layer the shots in glasses; the layers will slowly merge within 10 to 15 minutes, so pour and serve immediately. There is no freezer application here. Opened Irish cream should be used within about six months and stored in the fridge; butterscotch schnapps is shelf-stable and keeps for a year or more at room temperature.

Can I make a big batch of Buttery Nipple shots ahead of time?
