The Jungle Bird is a five-ingredient shaken cocktail — dark rum, Campari, pineapple juice, lime juice, and simple syrup — that comes together in about ten minutes. It’s genuinely bitter-sweet in a way that makes it interesting rather than cloying, which is why it holds up well when you’re making a round for a group. If you’ve been looking for a cocktail that isn’t just another vodka soda situation, this is a solid choice.

Why this recipe works

Two things matter here. First, the ratio of Campari to pineapple juice is doing the heavy lifting — the Campari cuts through the sweetness of the pineapple so the drink doesn’t taste like fruit punch, while the pineapple softens the bitterness enough that the Campari doesn’t dominate. Second, shaking hard over ice for a full ten seconds properly chills and dilutes the drink. Under-shaking leaves it too strong and slightly harsh; the brief dilution from the ice melt is part of the recipe, not a mistake.

What can go wrong

  • Using bottled lime juice: Bottled lime juice is noticeably more acidic and flat-tasting than fresh. With only 15 ml in the drink, bad lime juice is easy to detect. Squeeze it fresh.
  • Pouring over a full glass of ice and then straining: If you fill the serving glass with ice before straining, you’ll get a watered-down drink within minutes. Use a moderate amount of ice in the rocks glass so there’s room for the liquid without it sitting on a mountain of ice.
  • Batching without pre-diluting: If you’re making this for a group and mixing a large batch in a pitcher, you won’t be shaking individual portions. Add about 20–25 ml of cold water per serving to the batch to replace the dilution you’d normally get from shaking. Skip this and the batch will taste sharp.
  • Using a white or silver rum: Light rum makes the drink taste thin and one-dimensional. The recipe calls for dark rum specifically because the molasses depth holds its own against the Campari. Jamaican dark rum — something like Appleton Estate — works especially well.
  • Making simple syrup on the spot and adding it warm: Warm syrup raises the temperature of your shaker contents before you’ve even started. Make the syrup ahead and refrigerate it, particularly if you’re batching for guests.

Ingredient notes

  • Campari: There’s no true substitute that replicates its exact bitterness and color, but Aperol works in a pinch — the result will be sweeter and less bitter, which some people actually prefer. Reduce the simple syrup by half if you go that route.
  • Simple syrup: The recipe uses a 1:1 ratio (equal parts sugar and water by volume). If you want to make a larger batch to keep in the fridge, it holds well for up to four weeks refrigerated. Our simple syrup guide covers the full process.
  • Pineapple juice: Fresh-squeezed is best, but good-quality 100% pineapple juice from a carton (not a cocktail blend) is a perfectly reasonable choice, especially when scaling up.

Keeping and reheating

This is a shaken cocktail, so it doesn’t store well once made — the ice dilutes it and the carbonation-free mix goes flat in texture quickly. That said, you can batch the base (rum, Campari, pineapple juice, lime juice, and simple syrup, combined and pre-diluted as noted above) in a sealed jar or pitcher and refrigerate it for up to 24 hours. Give it a good stir before serving. Skip the garnish — not worth the extra dish — and just pour the batch over ice in individual glasses when you’re ready. Do not freeze the batch; the citrus juice separates and the texture suffers.

  • ½ oz Campari 15 ml
  • 1 ½ oz pineapple juice 45 ml, freshly squeezed if possible
  • ½ oz lime juice 15 ml, freshly squeezed
  • ½ oz simple syrup 15 ml, 1:1 ratio of water and sugar
  • 1 piece pineapple wedge for garnish
  • 1 piece cocktail cherry for garnish, such as Luxardo or Amarena

Instructions
 

  • Combine dark rum, Campari, pineapple juice, lime juice, and simple syrup in a shaker filled with ice.

  • Shake vigorously until the mix is well chilled, about 10 seconds.
  • Strain through a Hawthorne strainer into a rocks glass (double old-fashioned) filled with fresh ice.
