Spiced Rum Sidecar Twist from San Francisco’s Cocktail Scene

The Cable Car is a spiced rum take on the classic Sidecar — same citrus-forward structure, but warmer and a little sweeter thanks to the rum and a cinnamon-sugar rim. It was created by Tony Abou-Ganim at San Francisco’s Starlight Room in the 1990s, and it’s held up well. Four ingredients, five minutes, and it tastes like you put in more effort than you did.

What makes this version work

Two things matter here. First, shake hard and long enough — a full 15 seconds until the shaker is genuinely cold on the outside. That’s what dilutes the drink correctly and chills it without watering it down. Second, use freshly squeezed lemon juice. Bottled juice is more acidic and less bright, and in a short drink with only four ingredients, that difference is obvious. Everything else is straightforward.

About the ingredients

  • Orange curaçao: This is an orange liqueur made from dried bitter orange peel. Cointreau works well and is easy to find. Triple sec is a cheaper substitute — it’s sweeter and thinner, so if you use it, drop the simple syrup to 0.25 oz to keep the drink balanced.
  • Spiced rum: Captain Morgan and Sailor Jerry are the go-to options. Both bring vanilla and clove notes that work with the citrus. A plain white rum won’t give you the same warmth — skip the swap if you can.
  • Superfine sugar for the rim: Regular granulated sugar works fine. Superfine just sticks a little more evenly. Skip the garnish — not worth the extra dish — but don’t skip the rim; it genuinely changes the first sip.

Leftovers and make-ahead

You can batch the liquid ingredients ahead of time — combine the rum, curaçao, lemon juice, and simple syrup in a sealed jar or bottle and refrigerate for up to 24 hours. Give it a stir before using since the citrus can settle. Don’t shake it with ice until you’re ready to serve; shaking in advance just dilutes it and kills the chill. The cinnamon-sugar rim mix keeps indefinitely in a sealed container at room temperature, so making a larger batch (the recipe card suggests ½ cup sugar to 1 tsp cinnamon) is genuinely useful if you’re making these for a group.

If something goes sideways

  • The drink tastes flat or thin: You probably under-shook it. Shake again with fresh ice for a full 15 seconds. Proper agitation integrates the ingredients and adds the right amount of dilution.
  • It’s too sweet: The curaçao brand makes a big difference. A sweeter triple sec plus the full 0.5 oz of simple syrup can tip the balance. Cut the syrup first, then reassess.
  • The rim sugar falls off into the drink: The glass wasn’t cold enough, or you used too much moisture on the rim. Use just a thin swipe of lemon — you want the rim barely damp, not wet. Chill the glass in the freezer for 5 minutes before rimming.
  • The drink is cloudy: You skipped the fine mesh strainer or your strainer has wide holes. A standard cocktail strainer alone won’t catch citrus pulp and small ice shards. Double-strain through a fine mesh sieve held over the glass.
  • It tastes boozy and harsh: The lemon juice is probably too low — measure carefully. The acid is what keeps the rum in check. Also check that your simple syrup is a true 1:1 ratio; a weak syrup leaves the drink unbalanced.

Spiced Rum Sidecar Twist From San Francisco'S Cocktail Scene - ThefoodiebunchTiffany Manners
The Cable Car Cocktail is a modern classic born out of 1990s San Francisco cocktail culture, a citrus-forward spiced riff on the Sidecar. It was created by Tony Abou-Ganim at the Starlight Room, a rooftop bar famed for its golden-age glamour. This drink packs a sophisticated yet welcoming punch—zesty orange notes, warm baking spices from spiced rum, and the delicate zing of fresh lemon juice come together to create a cocktail that is equally suitable for an aperitif or a nightcap.

Equipment

  • Cocktail shaker
  • Fine mesh strainer
  • Jigger
  • Martini or coupe glass
  • Zester (optional)

Ingredients

  • 1.5 oz spiced rum use a quality brand like Captain Morgan or Sailor Jerry
  • 0.75 oz orange curaçao use a premium brand like Ferrand Dry Curaçao or Cointreau
  • 1 oz fresh lemon juice freshly squeezed only for optimal flavor
  • 0.5 oz simple syrup 1:1 ratio, made fresh with equal parts sugar and water
  • 1 tbsp superfine sugar for rimming the glass
  • 1 pinch ground cinnamon to mix with sugar for the rim
  • 1 piece lemon twist for garnish

Instructions

  • Start by preparing your glass. Mix 1 tablespoon of superfine sugar with a pinch of ground cinnamon in a shallow dish. Moisten the rim of a chilled martini or coupe glass with a lemon wedge, then rotate the rim through the sugar-cinnamon mix to coat. Set aside.
  • In a cocktail shaker, combine 1.5 oz of spiced rum, 0.75 oz orange curaçao, 1 oz fresh lemon juice, and 0.5 oz simple syrup. Fill the shaker with ice, cover, and shake vigorously for 15 seconds until the outside of the shaker is frosted and the drink inside is thoroughly chilled.
  • Strain the mixture using a fine mesh strainer into the prepared glass to create a smooth texture free from ice shards and citrus pulp.
  • Garnish with a fresh lemon twist expressed over the glass to release oils, then rest it delicately on the rim or drop it gently into the drink.

Notes

  • For a smokier variation, try replacing the spiced rum with a barrel-aged rum.
  • You can make the cinnamon-sugar rim in bulk: Mix 1/2 cup sugar with 1 tsp cinnamon and store in an airtight container.
  • If you prefer a slightly drier taste, reduce the simple syrup to 0.25 oz.

Frequently asked questions

Can I make this without a cocktail shaker?

Yes, but you’ll need something with a tight lid — a mason jar with a lid works. The goal is vigorous shaking with ice for 15 seconds, so whatever you use needs to seal completely and handle the cold without cracking.

What can I use instead of orange curaçao?

Triple sec is the most common substitute and is available at most grocery stores that carry spirits. It’s sweeter than curaçao, so reduce the simple syrup to 0.25 oz to compensate.

Do I have to use a coupe or martini glass?

No — those glasses just keep the drink cold longer since there’s no ice in the finished cocktail. A rocks glass works fine if that’s what you have; just chill it in the freezer for a few minutes first.

Can I make a non-alcoholic version?

You can get close using a non-alcoholic spiced rum alternative (Lyre’s Spiced Cane Spirit is widely available) and a non-alcoholic orange liqueur or a splash of orange juice with a little extra simple syrup. The flavor won’t be identical, but the cinnamon-sugar rim and lemon juice still carry the drink.

How do I scale this up for a party?

Multiply all four liquid ingredients by the number of servings and mix in a pitcher — it keeps in the fridge for up to 24 hours. Shake individual portions over ice to order, or shake in batches of two to three at a time. Rim the glasses ahead of time and let them sit; the sugar sets and holds well.

My lemon juice tastes bitter — what went wrong?

You likely squeezed too hard or used the pith and seeds. Squeeze firmly but stop before you’re pressing the rind — the white pith releases bitter compounds. Strain the juice through a small sieve before adding it to the shaker.
