This is a blended tomato soup made with heirloom tomatoes, fresh basil, and a splash of heavy cream — straightforward enough for a weeknight but good enough to serve to guests. The whole thing comes together in one pot in about an hour, and the result is smooth, rich, and genuinely satisfying. If you have ripe tomatoes and a blender, you’re most of the way there.

Ingredient notes

  • Heirloom tomatoes: These are worth seeking out when they’re in season because they’re sweeter and less watery than standard supermarket tomatoes. Out of season, good-quality canned whole tomatoes (about 800g drained) work better than pale fresh ones.
  • Heavy cream: Use full-fat for the smoothest result. For a dairy-free version, full-fat coconut cream works — just know it adds a faint coconut flavor that most people don’t mind but some notice.
  • Broth: The recipe calls for chicken or vegetable broth. Either works, but a low-sodium version gives you more control over the final seasoning since you’re reducing the soup for 20 minutes.
  • Fresh basil: Don’t substitute dried here — the basil goes in at the end and dried won’t give you the same result. If your bunch is large, use the leaves generously; they mellow once the soup is warm.

What makes this version work

Two things matter most. First, letting the onion go properly golden — not just soft, but actually golden — before you add anything else. That extra few minutes of patience builds a savory base that carries the whole soup. Second, adding the cream and basil after blending rather than before. Blending hot cream can make it grainy, and basil loses its brightness fast under prolonged heat. Stir both in once the soup is smooth, then give it just five more minutes on low. That’s it. Skip the garnish — not worth the extra dish.

If something goes sideways

  • Soup tastes flat or acidic: A small pinch of sugar (start with a quarter teaspoon) balances out tomatoes that are underripe or too sharp. Add it after blending so you can taste as you go.
  • Texture is grainy or separated after adding cream: The heat was probably too high. Take the pot off the burner for a minute before stirring in the cream, then return it to the lowest setting.
  • Soup is too thin: Simmer uncovered for an extra 5–10 minutes after blending to reduce it. Don’t add flour or cornstarch — it changes the texture noticeably.
  • Blender lid blows off mid-blend: Hot liquid expands. If you’re using a countertop blender, fill it no more than halfway, hold the lid down with a folded dish towel, and start on the lowest speed.
  • Basil turned dark and dull: It was added too early or cooked too long. Stir it in right at the end and serve within a few minutes — the color fades quickly once it hits heat.

Leftovers and make-ahead

This soup keeps well in the fridge for up to 4 days in a sealed container. It also freezes cleanly for up to 3 months — freeze it before adding the cream if you want the best texture, then stir in the cream when you reheat. To reheat from the fridge, warm it gently in the same pot over medium-low heat, stirring occasionally; high heat can make the cream separate. If the soup thickens in the fridge, add a splash of broth or water to loosen it back up.

  • 2 tablespoons olive oil extra virgin for best flavor
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 800 grams heirloom tomatoes ripe and coarsely chopped
  • 3 cups chicken or vegetable broth, preferably homemade
  • 1 cup heavy cream for a velvety texture
  • 1 bunch fresh basil leaves only, torn
  • 1 pinch salt to taste
  • 1 pinch ground black pepper to taste

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until golden brown for about 5-7 minutes, stirring occasionally to prevent burning.
  • Add the minced garlic and cook for another minute or until fragrant.
  • Stir in the chopped tomatoes and cook until they start to break down, about 10-15 minutes, stirring occasionally.
  • Pour in the chicken or vegetable broth, bring to a boil, then reduce the heat and simmer for 20 minutes. Stir occasionally and allow the flavors to meld.
  • Use an immersion blender to purée the soup until smooth. Alternatively, blend in batches in a blender, ensuring the soup cools slightly to avoid splattering.
  • Stir in the heavy cream and torn basil leaves. Season with salt and black pepper to taste. Simmer gently for an additional 5 minutes.

For a dairy-free version, substitute the heavy cream with coconut cream. To enhance flavors, add a pinch of red pepper flakes or a splash of balsamic vinegar.

Can I use regular tomatoes instead of heirloom?

Yes, any ripe tomato will work. Roma or vine tomatoes are the most reliable substitutes because they’re fleshy and not too watery — just make sure they’re actually ripe, or the soup will taste thin and acidic.
