Salade Liégeoise is a warm Belgian salad built from baby potatoes, green beans, crispy lardons, and a quick pan dressing made with the bacon drippings. It takes about 50 minutes start to finish and uses one pot, one pan, and a bowl — which makes it a realistic weeknight dinner, not just a weekend project. The warm dressing soaks into the potatoes while everything is still hot, and that’s what makes it worth making.

What makes this version work

Two things actually matter here. First, the potatoes need to go into the bowl while they’re still warm. Hot potatoes absorb the vinegar dressing in a way that cold ones simply don’t — you get flavor all the way through, not just on the surface. Second, the dressing is built directly in the pan after the lardons come out, which means the bacon fat, the vinegar, the olive oil, and the mustard all come together warm and pick up every bit of flavor left in the pan. Whisk it quickly and pour it straight over the salad. If you let it sit and cool in the pan, it separates and loses that coating quality that holds the whole dish together.

Storage and reheating

Store leftovers in an airtight container in the fridge for up to 3 days. The salad does not freeze well — the potatoes turn grainy and the green beans go soft. To reheat, put it in a skillet over medium-low heat with a small splash of water or a drizzle of olive oil, and stir gently for 3 to 4 minutes until warmed through. Microwaving works in a pinch — cover loosely and heat in 60-second bursts, stirring between each — but the pan method keeps the texture closer to fresh. The lardons will soften slightly after refrigeration regardless of how you reheat, so expect that.

Mistakes to avoid

  • Overcooking the green beans. Five minutes in boiling water is enough. Pull them out while they still have a little snap, because they continue to soften once they hit the warm dressing. Mushy green beans make the whole salad feel heavy.
  • Skipping the ice bath for the beans. It’s not just about color. Stopping the cooking immediately keeps the texture firm enough to hold up against the warm potatoes and dressing. A bowl of cold tap water with a handful of ice cubes does the job.
  • Crowding the lardons in the pan. If you pile them in, they steam instead of crisping. Cook them in a single layer and give them space. Crispy lardons add texture; steamed ones just add grease.
  • Using cold potatoes from the fridge. If you’re working with leftover cooked potatoes, warm them in the microwave before adding the dressing. Cold potatoes won’t absorb anything and the salad will taste flat.
  • Over-salting before tasting. The lardons are already salty, and so is the cooking water from the potatoes. Taste the finished salad before adding any extra salt — skip the garnish if you’re short on time, but do taste first.

  • 500 g baby potatoes halved, preferably new potatoes
  • 250 g green beans trimmed
  • 150 g lardons smoked bacon strips cut into matchsticks
  • 1 large onion thinly sliced
  • 30 ml vinegar red wine vinegar or cider vinegar
  • 45 ml olive oil
  • 5 g Dijon mustard
  • 1 pinch salt to taste
  • 1 pinch black pepper freshly ground, to taste

Garnish

  • 4 g parsley fresh, finely chopped

Instructions
 

  • Place the potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil, then simmer for 15 minutes until tender. Drain and set aside.
  • While the potatoes cook, stir the green beans into another pot of boiling salted water. Cook for 5 minutes, then immerse in icy water to maintain their vibrant green color and crisp texture. Drain and set aside.
  • In a sauté pan over medium heat, cook the lardons until crispy, about 5–7 minutes. Remove and drain on paper towels, leaving the drippings in the pan.
  • In the same pan with the lardon drippings, add the sliced onion and sauté gently until translucent and sweetly aromatic, roughly 5 minutes. Incorporate vinegar, olive oil, and Dijon mustard, whisking to create a warm dressing.
  • In a large mixing bowl, combine potatoes, green beans, and lardons. Drizzle the warm dressing over the top, tossing gently to coat. Season with salt and black pepper to taste.
  • Garnish with freshly chopped parsley before serving. For a refined touch, serve in warmed shallow bowls.

Can I use regular bacon instead of lardons?

Yes, regular smoked bacon cut into small strips works fine. Aim for pieces roughly the size of a matchstick so they crisp up evenly and distribute through the salad without big chunks in every other bite.

Can I make this ahead for dinner?

You can prep the components — boil the potatoes, blanch the beans, cook the lardons — up to a day ahead and store them separately in the fridge. Warm everything through before combining, then make the dressing fresh in the pan just before serving.

What kind of vinegar works best?

Red wine vinegar gives a slightly sharper result; cider vinegar is a little milder and fruitier. Both work well here. White wine vinegar is also fine in a pinch, but plain distilled white vinegar is too harsh — avoid it.

Is this a main dish or a side?

It works as either. As a main for four people it’s filling on its own, especially with some crusty bread on the side. As a side dish it pairs well with grilled sausages, roast chicken, or a simple pork chop.

Can I make this vegetarian?

You can, but you’ll need to replace the lardons and the fat they render. Sauté diced smoked tofu or use a tablespoon of olive oil as the base for the dressing instead of bacon drippings. The smoky depth will be lighter, but the salad still holds together.

My dressing looks separated — did I do something wrong?

Not necessarily. The mustard acts as an emulsifier, but if the pan cooled down before you whisked, the dressing can break. Reheat the pan gently, add the mustard last, and whisk vigorously while everything is still warm. Pouring it over the salad immediately also helps it coat rather than pool.
