This is a spinach and strawberry salad with a homemade balsamic reduction — balsamic vinegar and honey cooked down into a thick, glossy drizzle that beats any bottled dressing. It comes together in 25 minutes, the ingredient list is short, and it works as a side or a light lunch without much fuss.

What makes this version work

Two things matter here. First, the balsamic reduction is made fresh rather than poured from a bottle. Simmering the vinegar with honey for 8–10 minutes concentrates the flavor and thickens it just enough to cling to the leaves instead of pooling at the bottom of the bowl. Second, the reduction has to be fully cooled before it hits the salad — pour it on warm and the spinach wilts immediately. Give it 10 minutes on the counter after you pull it off the heat. While it cools, you have exactly enough time to hull the strawberries, toast the pecans, and slice the onion, so the timing works out naturally.

Keeping and reheating

This salad does not keep once dressed — the spinach goes limp within 20 minutes. If you want to get ahead, store the components separately: washed and dried spinach in a zip bag with a paper towel lasts 2 days in the fridge, sliced strawberries stay good for about 24 hours covered in the fridge, and the balsamic reduction keeps in a small jar in the fridge for up to 2 weeks. The reduction will firm up when cold; just let it sit at room temperature for a few minutes or give it 10 seconds in the microwave and it loosens right back up. There is nothing to freeze here.

If something goes sideways

  • The reduction hardened into a sticky solid: It cooked too long. Add a teaspoon of warm water to the saucepan over low heat and stir — it will loosen. Next time, pull it off the heat when it coats the back of a spoon; it thickens more as it cools.
  • The salad tastes too sharp or vinegary: The reduction needed more time to mellow, or the ratio was off. Stir in a small drizzle of extra honey and toss again. A pinch of salt on the finished salad also helps balance the acidity.
  • Kids are picking around the red onion: Skip the red onion entirely or soak the slices in cold water for 10 minutes before adding them — it takes the sharp edge off significantly. Skip the garnish too — not worth the extra dish.
  • The pecans taste bitter or rubbery: They were either under-toasted or stale. Toast them in a dry pan over medium heat for 3–4 minutes, stirring constantly, until you can smell them. Let them cool completely before adding to the salad or they will soften the other ingredients.
  • Goat cheese is clumping instead of crumbling: It is too warm. Pop it in the freezer for 5 minutes, then crumble it straight from cold — it breaks apart cleanly.

Instructions
 

  • In a small saucepan over medium heat, combine the balsamic vinegar and honey. Bring to a gentle simmer, stirring occasionally.
  • Let the mixture reduce for about 8-10 minutes until it thickens to a syrupy consistency. Remove from heat and season with salt and black pepper. Let it cool.
  • While the reduction cools, prepare the salad. In a large mixing bowl, combine baby spinach, sliced strawberries, toasted pecans, red onions, and crumbled goat cheese.
  • Drizzle the cooled balsamic reduction over the salad and gently toss to coat.
  • Serve immediately, garnished with additional pecans or goat cheese if desired.
