This is a straightforward pineapple upside-down cake — buttery caramelized fruit on top, tender vanilla sponge underneath, baked in a single 9-inch pan. The honest reason to make it: it looks impressive, uses pantry staples, and comes together in about 80 minutes without any special skills. Kids love watching the flip, and there are almost never leftovers.

Shopping notes

  • Canned pineapple rings: Buy rings packed in juice, not syrup. Syrup adds extra sugar you don’t need on top of the brown sugar layer. Drain them well and pat dry with paper towels — wet fruit steams instead of caramelizing.
  • Maraschino cherries: The stemless kind are easier to work with. If your store only has cherries with stems, just pull them off. Drain and blot dry before placing them in the pan.
  • Dark rum (optional): A tablespoon goes into the batter for a mild tropical note. It bakes off completely, so it’s fine for kids. Skip it entirely if you prefer — the cake is good without it.
  • Whole milk: Don’t swap for low-fat here. The fat keeps the crumb tender. If you only have 2%, it’ll still work, but the texture will be slightly drier.

What makes this version work

Two things actually matter here. First, melting the butter directly in the pan in the oven — rather than spreading cold butter or using a separate saucepan — means the butter coats the bottom evenly and starts the caramelization process before the brown sugar even goes in. Second, patting the pineapple rings completely dry before arranging them is what separates a glossy, set topping from a watery, sunken one. Excess moisture from the canned fruit prevents the butter-sugar mixture from thickening properly, and you end up with a soggy layer instead of that firm, sticky caramel. Both steps take about 30 extra seconds and make a real difference in the final result.

If something goes sideways

  • The topping sticks to the pan when you flip: This usually means the cake cooled too long before flipping. Flip it at the 5-minute mark while the caramel is still warm and fluid. If you waited too long, set the pan over low heat on the stovetop for 30–60 seconds to re-melt the caramel, then try again.
  • The cake is raw in the center but brown on top: Your oven is running hot. Tent loosely with foil and continue baking in 5-minute increments, testing with a toothpick each time. An oven thermometer is worth buying if this happens regularly.
  • The pineapple rings shifted during baking: They were probably placed on a thin or uneven sugar layer. Next time, press each ring gently but firmly into the brown sugar after arranging. They don’t need to sink in, just make contact.
  • The caramel layer looks thin and pale: The butter likely separated from the sugar during baking, which can happen if the pan was too cold when the sugar went in. Make sure the butter is fully melted and the pan is still warm before you sprinkle in the brown sugar.
  • The cake domed so much it’s hard to flip flat: Skip the garnish of extra cherries on top of the dome — not worth the extra dish. Just level the dome with a serrated knife before flipping so the cake sits flat on the plate.

Make-ahead notes

The baked cake keeps well. Once fully cooled, cover it tightly with plastic wrap or transfer to an airtight container and store at room temperature for up to 2 days — the caramel topping actually gets a little stickier and more flavorful overnight. For longer storage, refrigerate for up to 4 days; bring slices to room temperature for 20–30 minutes before serving, or warm briefly in the microwave for 15–20 seconds. The cake also freezes well: wrap individual slices in plastic wrap, then foil, and freeze for up to 2 months. Thaw overnight in the fridge or at room temperature for a couple of hours.

  • 6 tablespoons unsalted butter cut into pieces
  • ¾ cup light brown sugar packed
  • 7 pieces pineapple rings canned in juice, drained and patted dry
  • 7 pieces maraschino cherries without stems

For the Cake Batter:

  • 1 ½ cups all-purpose flour sifted for best texture
  • 2 teaspoons baking powder
  • ¼ teaspoon kosher salt
  • ½ cup unsalted butter room temperature
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon pure vanilla extract real vanilla for best flavor
  • ½ cup whole milk room temperature

Instructions
 

Prepare the Topping:

  • Preheat the oven to 350°F (175°C). In a 9-inch round cake pan, add 6 tablespoons of unsalted butter and place pan in the preheating oven to melt the butter. Once melted (about 3–4 minutes), remove and swirl to coat the bottom evenly. Sprinkle 3/4 cup light brown sugar over the melted butter in an even layer.
  • Arrange the pineapple rings on top of the brown sugar mixture, placing one ring in the center and the others around it. Place one maraschino cherry in the center of each ring.

Make the Cake Batter:

  • In a mixing bowl, whisk together 1 1/2 cups all-purpose flour, 2 teaspoons baking powder, and 1/4 teaspoon kosher salt. Set aside.
  • In a separate bowl, cream 1/2 cup butter and 1 cup granulated sugar with an electric mixer on medium speed for 2–3 minutes, until light and fluffy. Add eggs one at a time, mixing well after each. Stir in the vanilla extract.
  • Alternate adding the dry flour mixture and 1/2 cup milk, starting and ending with flour. Mix until just combined, scraping down the sides as needed. Do not overmix.

Bake:

  • Gently spoon the batter over the arranged pineapples in the pan and spread evenly with a spatula. Bake in preheated oven for 45–50 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.

Cool and Invert:

  • Allow the cake to rest in the pan for 10 minutes. Run a knife along the edges to loosen. Place a serving plate over the cake pan and carefully invert. Let gravity help release the cake before lifting the pan.

FAQ

Can I use fresh pineapple instead of canned?

Yes, but you need to cook it first. Raw fresh pineapple contains an enzyme called bromelain that breaks down the proteins in the batter and can prevent the cake from setting properly. Simmer fresh pineapple slices in a little water for 5 minutes, then drain and dry them thoroughly before using.

Do I have to use a round pan, or can I use a square or rectangular one?
