These are steamed chicken dumplings with a thin hand-rolled wrapper and a filling of ground chicken, cabbage, ginger, and garlic — straightforward to make and genuinely satisfying. The honest reason to try them: the active work is mostly folding, which you can do in stages, and the payoff is a meal that feels special without requiring anything unusual from your pantry.

What makes this version work

Two things matter most here. First, the dough rests for 30 minutes after kneading — skip that and the wrappers will tear when you roll them thin, because the gluten hasn’t had time to relax. Second, ground chicken thigh holds up better than breast during steaming; it stays moist where breast meat tends to go dry and grainy inside a sealed wrapper. The cabbage in the filling also pulls double duty: it adds bulk and releases just enough moisture during cooking to keep the filling from turning dense. Squeeze out any excess water from the cabbage before mixing if it seems very wet — that one step prevents soggy bottoms.

If something goes sideways

  • Wrappers sticking to the steamer: Parchment or cabbage leaves work, but make sure they’re not blocking steam circulation entirely. If momos are still sticking, lightly brush the liner with a neutral oil before placing them.
  • Filling leaking out during steaming: This usually means the seal wasn’t tight enough. Pinch the pleats firmly and press the gathered edge flat — a loose crimp will open under heat and steam pressure.
  • Dough drying out while you work: Keep the dough balls and any rolled wrappers you haven’t filled yet under a damp kitchen towel, not just covered loosely. Even a few minutes of air exposure makes them crack at the edges.
  • Momos sticking together in the steamer: Leave at least half an inch between each one. They puff slightly as they cook, and if they’re touching at the start, they’ll fuse and tear when you lift them.
  • Filling tastes flat after cooking: Season the raw filling and then pinch off a small piece, microwave it for 20 seconds, and taste before you wrap everything. Raw chicken filling is hard to judge by smell alone.

About the ingredients

  • Ground chicken: Buy it labeled as thigh meat if you can find it, or ask a butcher to grind thighs. Pre-packaged ground chicken at most stores is a breast blend and will work, but the texture is noticeably drier.
  • White pepper: It has a different heat profile than black — sharper and more aromatic, and it’s the right call here. If you only have black pepper, use half the amount.
  • Soy sauce: Low-sodium keeps the filling from tasting salty after steaming concentrates the flavors. Regular soy sauce works — just pull back to 1 tablespoon and taste the filling before wrapping.
  • Cilantro: Listed as optional and that’s accurate — skip it if your household is divided on it. The filling is complete without it.

Storage and reheating

Cooked momos keep in the fridge for up to 3 days in an airtight container. To reheat, steam them again for 4 to 5 minutes — microwaving makes the wrappers rubbery and uneven. For freezing, freeze them raw on a parchment-lined tray until solid (about 2 hours), then transfer to a freezer bag; they’ll keep for up to 2 months. Cook from frozen by steaming for 22 to 25 minutes with no thawing needed. Don’t freeze already-cooked momos — the wrappers turn gummy when reheated after freezing.

Instructions
 

  • Prepare the Dough: In a large mixing bowl, combine 2 cups of all-purpose flour and ½ teaspoon of salt. Gradually add ¾ cup of water and knead until a firm but pliable dough forms. Cover with a damp cloth and let it rest for 30 minutes.
  • Make the Filling: In a separate bowl, combine ground chicken, finely shredded cabbage, chopped onion, grated ginger, minced garlic, soy sauce, white pepper, and chopped cilantro. Mix well using clean hands or a spoon until evenly blended. Set aside.
  • Shape the Momos: Divide rested dough into small balls (about 1 inch each). Roll each into a thin disc about 3 inches in diameter. Place 1 tablespoon of filling in the center of each disc, then pinch and pleat the edges to seal, forming a crescent or round shape. Keep unused dough covered to prevent drying.
  • Steam the Momos: Heat a steamer with water and line it with parchment or cabbage leaves. Once steaming, place momos a bit apart to avoid sticking. Steam for 15–20 minutes, or until the wrappers turn translucent and slightly glossy, and filling is fully cooked (internal temp should reach 165°F or 74°C).
