This is a single-layer cake with a caramelized brown sugar and pineapple topping that flips out of the pan in one piece — the kind of dessert that looks impressive without requiring any decorating skills. It takes about 20 minutes to put together and bakes mostly hands-off. If you need something that travels well to a potluck or disappears fast at a family dinner, this is a reliable choice.

The short version of why this works

Two things actually matter here. First, the brown sugar and melted butter go directly into the bottom of the pan before any fruit — as the cake bakes, they bubble together and form a thick, sticky caramel layer that clings to the pineapple. If you skip properly coating the base, you get dry fruit sitting on plain cake instead of that glossy topping. Second, the batter uses the alternating method: dry ingredients and milk are added in turns, starting and ending with flour. This keeps the batter from getting overworked, which is what gives the cake a soft, even crumb rather than a dense or rubbery one. Neither step is complicated, but both are worth doing right.

About the ingredients

  • Pineapple rings: Canned rings in juice (not syrup) work well and are easier to slice evenly than fresh. If you use fresh pineapple, pat the rings dry with paper towels first — excess moisture can prevent the caramel from setting properly.
  • Maraschino cherries: These are purely visual. Skip the garnish — not worth the extra dish if you don’t already have them on hand. The cake is complete without them.
  • Whole milk: Don’t swap this for skim. The fat content keeps the crumb tender. Full-fat oat milk works as a dairy-free substitute without noticeably changing the texture.
  • Light brown sugar: Dark brown sugar will make the topping taste more intensely of molasses, which some people love. Either works, but the color of the topping will be darker with the dark variety.

Common problems and fixes

  • Topping sticks to the pan when you flip it: This almost always means the cake cooled too long before inverting. Flip it at the 5-minute mark after pulling it from the oven — the caramel is still fluid enough to release cleanly. If you wait until the cake is fully cool, the sugar hardens and bonds to the pan.
  • Caramel topping is watery or thin: The pan likely wasn’t hot enough, or the butter and sugar weren’t spread all the way to the edges. Make sure the melted butter fully coats the base before adding the sugar, and press the sugar into an even layer.
  • Cake is dense and gummy in the center: This usually means underbaking. Ovens vary — start checking at 45 minutes, but don’t pull the cake until a toothpick inserted into the cake portion (not through a pineapple ring) comes out clean. The fruit adds moisture, so the center takes longer than you’d expect.
  • Pineapple rings shift during baking: Gently press each ring into the sugar layer after arranging them. They don’t need to be perfect, but anchoring them slightly helps them stay put when the batter is poured over.
  • Batter looks curdled after adding eggs: This happens when the eggs are cold. Room-temperature eggs blend into the creamed butter and sugar smoothly. If yours look split, keep mixing — it usually comes back together once you start adding the flour.

Keeping and reheating

Cover the cake tightly and keep it at room temperature for up to 2 days — the caramel topping stays glossy and the crumb holds up well. After that, move it to the fridge where it will keep for another 3 days, though the topping firms up when cold. To bring a refrigerated slice back to life, microwave it for 20–25 seconds; the caramel softens and the cake warms through without drying out. For longer storage, wrap individual slices in plastic wrap and freeze for up to 2 months. Thaw overnight in the fridge and reheat the same way.

  • 1 cup light brown sugar packed, 220g
  • 7 rings pineapple from one 20 oz (567g) can, well drained (reserve juice for another use)
  • 7 pieces maraschino cherries
  • 1 tsp butter for greasing the pan sides

For the cake

  • 1 ¾ cups all-purpose flour 220g
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter softened, 115g
  • 1 cup granulated sugar 200g
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1 ¼ cups whole milk room temperature, 300ml

Instructions
 

  • Preheat your oven to 350°F / 180°C (160°C fan-forced). Prepare a 9-inch (23cm) round cake pan by generously buttering only the sides — the melted butter for the topping will coat the base in the next step.

  • Pour the melted butter into the bottom of the prepared cake pan, swirling to evenly coat the base. Sprinkle the brown sugar evenly across the melted butter, then arrange the pineapple slices in a single layer over the sugar. Place a maraschino cherry in the center of each pineapple ring.

  • In a medium bowl, whisk together the flour, baking powder, and salt. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.

  • Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Start and end with the flour. Mix until just combined, being careful not to overmix.

  • Pour the batter over the arranged pineapple and cherries, smoothing the top with a spatula.   • Allow the cake to cool in the pan on a wire rack for exactly 10 minutes, then place a serving platter face-down over the pan and carefully flip both together. Lift the pan straight up. Serve warm or at room temperature within 4 hours for the glossiest caramel finish.

Freezing: Wrap individual slices in plastic wrap, then foil, and freeze for up to 2 months. Thaw overnight in the fridge before reheating.
Reheating: Microwave a single slice for 20–25 seconds to re-soften the caramel without drying the cake.
Make-Ahead: Assemble the topping in the pan and prepare the dry ingredients the night before. In the morning, cream the butter and sugar, combine, pour, and bake.

Can I make this in a square or rectangular pan instead of a round one?

Yes, a 9-inch square pan works fine. The bake time stays roughly the same, but start checking at 40 minutes since corners can set faster than the center. The flip works the same way — just use a cutting board or baking sheet large enough to cover the pan completely.

Can I use a box cake mix for the batter?

You can, and it will still taste good. Use a yellow or vanilla box mix prepared according to package directions, then pour it over your homemade caramel-pineapple base.
