This is a from-scratch banana pudding built on a cooked egg-yolk custard — not instant pudding mix. It takes about 45 minutes of active work plus a 2-hour chill, and the result is noticeably richer and less sweet than the boxed version. If you want something the whole table will finish, this is it.

Before you start

The custard is the one step that needs your full attention. You’re tempering egg yolks — which means slowly adding hot liquid to them before they go back into the pan. Skip the slow part and you’ll scramble the eggs. Whisk a small ladleful of the hot milk mixture into your beaten yolks first, then another, then stir everything back into the saucepan over low heat. The second thing that matters: don’t rush the chill. Two hours is the minimum for the wafers to soften and the layers to set. Made the night before, it’s actually better.

Ingredient notes

  • Egg yolks: Three yolks give the custard its color and body. Don’t substitute whole eggs — the extra whites will thin it out.
  • Vanilla wafers: A standard 11 oz box is just enough for two full layers. If your box is smaller, buy two — running short mid-assembly is frustrating.
  • Bananas: Use ripe ones with plenty of yellow and a few spots. Underripe bananas taste starchy once chilled. Overripe ones go mushy — avoid anything with large brown patches.
  • Whipped cream: Freshly whipped holds up better than canned when it sits on the pudding. If you’re making this ahead, wait and add the topping right before serving.

Mistakes to avoid

  • Boiling the custard after the eggs go in: Once the yolks are in the pan, keep the heat low. A full boil will break the custard and leave you with sweet scrambled eggs in milk. Pull it off the heat the moment it coats the back of a spoon.
  • Adding the custard while it’s too hot: Pouring scalding custard straight over the banana slices turns them brown and mushy fast. Let it cool for 5–10 minutes before layering — warm is fine, steaming is not.
  • Cutting the chill time short: At one hour the wafers are still crunchy and the layers slide around when you scoop. Two hours is the real minimum; overnight is better.
  • Uneven layers: Spread the custard all the way to the edges of the dish so every scoop gets wafer, banana, and custard together. A thin or patchy custard layer means dry bites.
  • Skipping the plastic wrap during chilling: Press wrap directly onto the surface of the top custard layer before refrigerating. It stops a rubbery skin from forming.

Storage and reheating

Cover the dish tightly and refrigerate for up to 3 days. The bananas will darken slightly by day two but the flavor stays good. Freezing isn’t recommended — the custard weeps and the bananas turn gray when thawed. There’s no reheating here; this dessert is served cold. Skip the garnish of crushed wafers until you’re ready to serve — not worth the extra dish, and they go soggy fast if added ahead of time.

  • 2-quart glass trifle dish or 9×9 inch (23x23cm) serving dish
  • Plastic wrap

Ingredients
 
 

  • ¾ cup granulated sugar 150g
  • ⅓ cup all-purpose flour 40g
  • ¼ teaspoon salt
  • 2 cups whole milk 480ml, preferably organic
  • 3 large egg yolks
  • 1 teaspoon pure vanilla extract
  • 3 large bananas ripe, sliced
  • 1 box vanilla wafers approximately 11 oz / 310g, such as Nilla Wafers
  • 1 cup cold heavy whipping cream 240ml, whipped to soft peaks

Instructions
 

  • In a medium heavy-bottomed saucepan, whisk together the granulated sugar, all-purpose flour, and salt until evenly combined. Gradually pour in the whole milk, whisking constantly until the mixture is completely smooth with no lumps.

  • Heat the mixture over medium heat, stirring constantly, until it thickens and begins to bubble. Reduce heat and cook for an additional 2 minutes. Remove from heat.
  • Beat the egg yolks in a separate large bowl. Slowly ladle about ½ cup of the hot milk mixture into the yolks, whisking constantly to temper them. Add another ½ cup, still whisking, then pour the tempered yolk mixture back into the saucepan. Cook over low heat, stirring constantly with a whisk, until the custard thickens enough to coat the back of a spoon (about 2-3 minutes). Do not allow it to boil or the eggs will curdle.

  • Remove from heat and stir in the pure vanilla extract. Let cool slightly.

  • In a 2-quart trifle dish or 9×9 inch (23x23cm) serving dish, arrange a single layer of vanilla wafers across the bottom and slightly up the sides. Top with a layer of sliced bananas, then spoon about one-third of the warm custard over the bananas. Repeat the layers two more times, ending with a final layer of custard on top.

  • Press plastic wrap directly onto the surface of the custard to prevent a skin from forming. Refrigerate for at least 2 hours, or ideally overnight for the best texture.
  • Just before serving, whip the cold heavy cream to soft peaks and spread or dollop it over the top of the pudding. Garnish with lightly crushed vanilla wafers for texture contrast. Add the crushed wafers at the last moment — they go soggy within minutes.

Storage: Cover tightly and refrigerate for up to 3 days. Bananas will darken slightly by day two but flavour remains excellent.
Make-Ahead: Assemble the full pudding the night before. Press plastic wrap directly onto the custard surface to prevent a skin forming. Add whipped cream and crushed wafers just before serving.
Substitutions: Use vanilla bean paste instead of extract for a more complex vanilla flavour. For dairy-free, swap whole milk for full-fat coconut milk and use coconut cream for the topping.
Freezing: Not recommended — the custard weeps and bananas turn grey when thawed.
Pro Tip: If your custard has any lumps, pour it through a fine-mesh strainer while still warm and whisk smooth on the other side.

Your questions, answered

Can I make this the day before?

Yes, and it’s actually one of the better make-ahead desserts. Assemble the full pudding, press plastic wrap onto the custard surface, and refrigerate overnight. Hold off on the whipped cream topping until just before you serve it.

My custard turned out lumpy — can I fix it?

Pour it through a fine mesh strainer while it’s still warm and whisk it smooth on the other side. If it’s badly scrambled, the eggs got too hot too fast — next time temper more slowly and keep the heat on low once the yolks go in.

Do the kids have to eat the banana slices if they pick around them?

The bananas soften considerably after chilling and blend into the layers, which makes them less noticeable for picky eaters. If banana texture is the issue, slice them thinner — about a quarter inch — so they almost melt into the custard after a few hours in the fridge.
