This rack of lamb is built around a two-day salt-and-garlic marinade that does most of the flavour work before you even turn on the stove. On the night, you sear, glaze with honey and agave, and roast — the whole active cook time is under 30 minutes. It serves two, which makes it a genuinely practical choice for a special dinner without a pile of leftovers.

Ingredient notes

  • New Zealand rack of lamb: New Zealand lamb is leaner and smaller than American lamb, which suits this recipe’s cook time. If you buy American, the rack will likely be thicker — check doneness with a thermometer rather than relying on timing alone.
  • Raw agave nectar: It’s thinner than honey, which helps the glaze spread easily. If you can’t find it, a light corn syrup or extra honey works, but the glaze will be slightly stickier and may catch faster in the oven.
  • Aged balsamic vinegar: The aging matters here — it’s thicker and less sharp than everyday balsamic, which balances the papaya without overpowering the mint. A cheap balsamic will make the compote taste acidic rather than rounded.
  • Ripe papaya: The papaya needs to be fully ripe (deep orange flesh, gives slightly when pressed). Underripe papaya is starchy and won’t work as a fresh compote.
  • Pine nuts: Skip toasting them in a separate pan — scatter them on the plate and they pick up enough warmth from the resting lamb. Skip the garnish if you’re short on time; it’s not worth the extra dish.

The technique that matters

The two-day marinade is not optional decoration — salt applied directly to the meat draws moisture out and then back in, seasoning the lamb all the way through rather than just on the surface. The garlic slices pressed into the meat do the same thing slowly over 48 hours. When you remove the garlic before searing, you’re preventing it from burning in the hot pan, which would turn bitter. The second technique is the sear-then-roast sequence: a screaming-hot cast-iron pan builds the crust that holds the glaze, and the oven finishes the interior gently. Skipping the sear and roasting from raw produces a grey exterior and a glaze that slides off rather than caramelising into the meat.

Troubleshooting

  • Glaze burns before the lamb is cooked through: Your oven runs hot, or the rack is thicker than average. Tent loosely with foil after the first 10 minutes and check internal temperature — 57°C / 135°F for medium-rare.
  • Meat is tough and chewy: It was likely overcooked past medium. Lamb rack is lean and goes from tender to tough quickly above 65°C / 150°F. A cheap instant-read thermometer removes the guesswork entirely.
  • Couscous is clumpy or gummy: The water ratio was off, or it sat covered too long. Use exactly 1⅓ cups water per ½ cup dry couscous, and fluff with a fork at the 5-minute mark — don’t leave it sitting.
  • Papaya compote is watery: Very ripe papaya releases liquid quickly once cut. If it looks soupy, drain off the excess liquid before plating so it doesn’t bleed into the couscous.
  • Lamb sticks to the pan during searing: The pan wasn’t hot enough, or you moved the rack too early. Let it sear undisturbed — it will release naturally once a proper crust has formed, usually after 2 to 3 minutes.

Leftovers and make-ahead

The papaya compote can be made up to two days ahead and kept in a sealed container in the fridge — the flavours actually improve after the first day. Cooked lamb keeps refrigerated for up to three days; reheat sliced chops in a covered pan over low heat with a splash of water for about 3 to 4 minutes, just until warmed through. Avoid the microwave, which makes the meat tough. Couscous reheats well with a fork and a few drops of water, covered loosely in the microwave for 60 to 90 seconds. The glazed lamb does not freeze well — the honey glaze turns grainy and the texture suffers — so plan to eat it within the three-day window.

Ingredients
 
 

  • 1 rack lamb 6 ribs (approximately 1.5 lbs / 680g)
  • 4 cloves garlic thinly sliced
  • ½ tablespoon coarse black pepper
  • ½ tablespoon coarse sea salt
  • 2 tablespoons clover honey
  • 1 tablespoon raw agave nectar
  • 1 cup ripe papaya diced
  • ¼ cup fresh mint minced
  • 1 tablespoon aged balsamic vinegar
  • ¼ cup pine nuts
  • ½ cup dry couscous plain
  • 1 ⅓ cups water (for couscous)
  • ½ teaspoon turmeric powder
  • ½ teaspoon ground cumin
  • 1 tablespoon olive oil
  • salt to taste
  • freshly ground black pepper to taste

Instructions
 

Two Days Before Cooking

  • French your rack of lamb by trimming the fat cap to a thin, even layer and scraping each rib bone completely clean of meat, fat, and membrane. Season the lamb all over with coarse salt and pepper, then lay the thinly sliced garlic cloves evenly across the meat. Wrap tightly in plastic wrap (cling film) and refrigerate for at least 2 days.
  • Dice ripe papaya into tiny chunks, combine with freshly minced mint and season with salt and pepper and drizzle with balsamic vinegar and agave nectar. Refrigerate in an airtight Tupperware container until ready to serve. This process can be done right before plating, but the extra time marinating will reduce the harshness of the fresh mint, enabling the flavours to merge and mellow.

Dinner Day Cooking

  • Take the lamb out of the refrigerator, unwrap it, and remove all garlic from the flesh. Before grilling the meat, allow it to come to room temperature.
  • Preheat your oven to 220°C / 425°F (200°C fan-forced). Heat a cast-iron grill pan or heavy skillet over high heat until smoking. Sear the lamb rack for 2-3 minutes per side to produce a deep golden crust.
  • When the rack of lamb is seared, remove it from the griddle and brush it with the honey and agave glaze before placing it in the preheated oven for 15-20 minutes (depending on the thickness of lamb).  Allow around 5 minutes for the lamb to rest before slicing.
  • Start preparing the couscous while the lamb is in the oven. Bring 1⅓ cups (315ml) water, the ground cumin, turmeric, and 1 tablespoon olive oil to a boil. Stir in the couscous, remove from the heat immediately, cover, and let stand for 5 minutes. Fluff with a fork and season with salt and pepper to taste.
  • Pack the couscous into a mould and place it in the centre of your dish. Next, position the lamb chops in a radial arrangement around the couscous mould, and finally, plate the papaya mint compote opposite the lamb.

Plating

  • Scatter the toasted pine nuts over the couscous and around the plate for crunch and visual contrast.
