These pancakes use whipped egg whites folded into a standard batter — a simple technique that produces noticeably taller, lighter results than baking powder alone can manage. The ingredient list is completely ordinary: flour, sugar, baking powder, salt, eggs, milk, and oil. The extra few minutes of whipping is the only real difference, and it’s worth it.

What makes this version work

Two things actually matter here. First, whipping the egg whites to soft peaks — not stiff ones — keeps them pliable enough to fold without deflating. Stiff whites are harder to incorporate and you end up overworking the batter trying to get rid of lumps. Second, the two-addition fold is doing real work: stirring in the first third loosens the thick batter so the remaining whites can be folded in gently without losing the air you just built up. Skip either of these and you’ll get a denser result — still a fine pancake, but not the point of this recipe.

Mistakes to avoid

  • Any grease in the egg white bowl. Even a trace of fat — residual oil, an unrinsed bowl, a speck of yolk — will prevent the whites from whipping at all. Wipe the bowl and whisk with a paper towel before you start.
  • Letting the batter sit too long. The air bubbles in whipped whites start to collapse within minutes. Have your pan hot and ready before you fold in the whites, then cook immediately.
  • Cranking the heat too high. Medium heat is right for most stovetops. Too hot and the outside sets before the inside cooks through — you’ll get raw centres even after a full flip. If your first pancake browns in under 90 seconds, turn it down.
  • Pressing down on the pancakes. It’s tempting, but pressing deflates the structure you worked to create. Leave them alone after the flip.
  • Using cold eggs straight from the fridge. Cold whites take longer to whip and don’t hold volume as well. Pull your eggs out 15–20 minutes before you start.

Smart swaps

The recipe calls for whole milk — lower-fat milk works but produces a slightly less tender crumb. Non-dairy milks (oat, soy) are fine; avoid anything sweetened or heavily flavoured. Neutral oil (vegetable or canola) is the right call here; skip the olive oil. If you only have salted butter for greasing the pan, that’s fine — just reduce the salt in the batter by a pinch. There’s no unusual ingredient in this recipe that needs a substitute, so skip the garnish on the plate — not worth the extra dish.

Storage and reheating

Cooked pancakes keep in the fridge for up to 4 days in a sealed container with parchment between layers so they don’t stick together. For longer storage, freeze them flat on a baking sheet for an hour first, then transfer to a zip-lock bag — they’ll keep for up to 2 months. Reheat straight from frozen in a toaster on a medium setting (2 cycles usually does it) or in a 180°C / 350°F oven for 8–10 minutes. The toaster gives you a slightly crisper edge; the oven keeps them softer all the way through. Microwaving works in a pinch — 30–45 seconds per pancake — but they go a little rubbery, so use it only when speed matters.

Ingredients
 
 

  • 1 ½ cups all-purpose flour sifted if possible
  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • 2 large eggs separated (whites and yolks)
  • 1 cup whole milk room temperature
  • 2 tablespoons neutral oil vegetable or canola oil
  • 1 tablespoon butter or neutral oil for greasing skillet

Instructions
 

  • Combine flour, sugar, baking powder, and salt in a big bowl.
  • Create a well in the flour mixture and separate the eggs, placing yolks in the well inside the large bowl and whites in a medium-sized bowl off to the side.
  • Add milk and oil to the well-created flour mixture. Stir to combine the wet and dry, careful not to over mix.
  • Beat the egg whites in the other bowl on medium until the egg whites form fluffy white peaks. This will take a few minutes, but the effort is worth it.
  • Gently fold the whipped egg whites into the batter in two additions. First, stir one-third of the egg whites into the batter to lighten it. Then add the remaining egg whites and fold gently with a spatula until just combined — some white streaks are fine. Add any desired mix-ins, such as berries or chocolate chips, and fold in gently.
  • Lightly grease a non-stick skillet or griddle with butter or oil and heat over medium to medium-high heat. To test if the pan is ready, flick a few drops of water onto the surface — they should sizzle and evaporate within a couple of seconds.
  • Pour about 1/3 cup of batter per pancake onto the skillet. Cook for 2–3 minutes until bubbles form across the surface and the edges look set. Flip and cook for another 1–2 minutes until golden brown on both sides. Check the first few pancakes by pressing the centre gently with a fork — it should spring back when fully cooked.
  • Repeat with the remaining batter, adding more butter or oil to the pan as needed between batches. Keep cooked pancakes warm on a plate tented with foil or in a 95°C / 200°F oven while you finish cooking. Serve immediately with your favourite toppings. Store any leftovers in the fridge or freezer.

Common questions

Can I make the batter ahead the night before?

No — this batter needs to be cooked immediately after the egg whites are folded in. The whipped whites collapse as they sit, so there’s no practical way to prep this one in advance. You can, however, mix the dry ingredients the night before and refrigerate the milk and eggs separately, which cuts your morning prep to about 10 minutes.

Do I really need an electric mixer, or can I whip the whites by hand?

You can whip by hand with a balloon whisk, but expect 8–10 minutes of continuous effort. An electric hand mixer gets you to soft peaks in 3–4 minutes. If hand-whipping, make sure the bowl is cold — set it in a larger bowl of ice water — which helps the whites whip faster.

Why are my pancakes coming out flat even though I whipped the whites?

The most likely cause is that the whites sat too long before cooking, or the batter was overmixed during folding. Cook the pancakes as soon as the whites are folded in, and stop folding the moment the batter looks mostly combined — a few white streaks are fine and won’t affect the result.

Can I double the batch to have extras for the week?

Yes, and it’s a smart move. Double all ingredients and cook in batches, keeping finished pancakes warm in a low oven. Cool completely before storing so condensation doesn’t make them soggy in the container. They reheat well from both fridge and freezer.

My pancakes are browning on the outside but still gooey in the middle — what’s wrong?

The pan is too hot. Lower the heat to medium and give the pan a minute to adjust before pouring the next batch. These pancakes are thicker than standard ones, so they need a slightly longer, gentler cook to set all the way through.

Can I use this batter for waffles?

It works well in a waffle iron — the whipped whites give you a crisp exterior and an airy interior. Add a tablespoon of extra oil to the batter to help with crisping and prevent sticking, and don’t open the waffle iron early or the waffle will tear.
