This is baked mac and cheese made with a quick stovetop roux, sharp cheddar, Gruyère, and chunks of cooked lobster — finished under a panko crust until golden. It takes about 75 minutes start to finish and feeds four. The honest reason to make it: it tastes genuinely special without requiring any unusual skills.

Before you start

The roux is the one technique worth getting right. Melt the butter over medium heat, whisk in the flour, and keep it moving for a full minute before you add any milk — that minute of cooking removes the raw flour taste. Then add the milk slowly, a splash at a time at first, whisking constantly. Rush this step and you get lumps; take your time and the sauce comes together smoothly in about five minutes. The other thing that matters: your lobster is already cooked, so it only needs to warm through in the oven. Fold it in gently at the end so the chunks stay intact rather than shredding into the sauce.

Mistakes to avoid

  • Adding cheese to a boiling sauce. Take the pan off the heat or drop it to low before stirring in the cheddar and Gruyère. High heat makes the proteins seize and the sauce turns grainy instead of smooth.
  • Skipping the al dente step. The pasta bakes for another 20–25 minutes in the oven. If you cook it fully soft on the stovetop, it will be mushy by the time it comes out. Pull it a minute or two early.
  • Using pre-shredded cheese. Bags of shredded cheese are coated with anti-caking starch that prevents clean melting. Grate the cheddar and Gruyère yourself — it takes two minutes and makes a real difference to the sauce texture.
  • Overloading the baking dish. If the dish is too deep and packed tight, the center stays cold while the edges overcook. Use a wide, shallow baking dish so the heat reaches everything evenly and the panko gets properly crispy on top.
  • Cutting into it straight from the oven. Let it sit for five minutes before serving. The sauce tightens up slightly and you get clean spoonfuls instead of a runny pool on the plate.

Storage and reheating

Leftovers keep in the fridge for up to three days in a sealed container. To reheat, add a small splash of milk — about a tablespoon per portion — stir it in, and warm it covered in a 325°F (160°C) oven for 15 minutes, or on the stovetop over low heat, stirring occasionally. The milk loosens the sauce back up so it doesn’t dry out. Skip the garnish — not worth the extra dish — just reheat and serve as-is. Freezing is possible but not ideal; the sauce can separate and the pasta softens further on thawing. If you do freeze it, do so before baking, thaw overnight in the fridge, add fresh panko, and bake from cold, adding about ten minutes to the bake time.

  • 1 cup sharp cheddar cheese grated, 115g
  • 1 cup Gruyère cheese grated, 115g
  • 7 oz lobster meat cooked, cut into chunks, about 200g
  • 1 teaspoon Dijon mustard
  • ½ teaspoon paprika
  • 1 pinch salt to taste
  • 1 pinch ground black pepper to taste
  • ½ cup panko breadcrumbs for topping, 30g
  • 2 tablespoons fresh flat-leaf parsley finely chopped, for garnish, about 8g
  • 1 tablespoon butter or olive oil for greasing the baking dish, optional

Instructions
 

  • Preheat your oven to 350°F / 180°C (160°C fan-forced).
  • Bring a large pot of salted water to a boil, add the macaroni, and cook until al dente, about 7-8 minutes. Drain and set aside.

  • In a large saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute until the mixture turns a light golden color.

  • Slowly whisk in the milk and bring to a simmer, stirring constantly, until the sauce thickens and coats the back of a spoon.

  • Add the cheddar and Gruyère cheese, stirring until melted and smooth. Add the Dijon mustard and paprika, then season with salt and pepper to taste — start with ½ teaspoon of salt and a few grinds of black pepper, then adjust after tasting.

  • Fold the cooked macaroni into the cheese sauce until evenly coated, then gently fold in the lobster meat — use a light hand so the chunks stay intact.

  • Transfer the mixture to a 2-quart / 2L (approximately 8×8 inch / 20x20cm) baking dish and sprinkle evenly with panko breadcrumbs.

  • Bake in the preheated oven for 20–25 minutes, until the top is golden brown and the sauce is bubbling around the edges. Let it rest for 5 minutes before garnishing with chopped parsley and serving.
