Marry Me Chicken is a skillet dinner built around seared chicken breasts finished in a creamy sun-dried tomato and Parmesan sauce. It takes about 50 minutes start to finish, uses one pan, and produces enough sauce that you’ll want something — pasta, mashed potatoes, crusty bread — to soak it up. The name is a bit of a joke, but the recipe itself is genuinely good on a Tuesday night.

Why this recipe works

Two things make this dish reliable. First, searing the chicken before it goes into the sauce — 4 to 5 minutes per side over medium-high heat — builds a golden crust that holds up during the final simmer and adds flavor to the pan drippings. Second, deglazing with chicken broth and scraping up those browned bits before adding the cream means the sauce has real depth instead of tasting flat. Skip either step and you lose most of what makes this worth making.

About the ingredients

  • Sun-dried tomatoes: Use oil-packed, not the dry-packed kind sold in bags. Dry-packed tomatoes are tough and won’t soften properly in the short simmer time. Drain off most of the oil before adding them.
  • Heavy cream: The recipe calls for it at room temperature — this matters. Cold cream added to a hot pan can cause the sauce to break or curdle. Pull it out of the fridge when you start prepping.
  • Parmesan: Pre-grated cheese from a canister has anti-caking powder in it and won’t melt smoothly. A block you grate yourself takes 90 seconds and makes a noticeably better sauce.
  • Fresh basil: Added at the end only. It wilts and loses its brightness if you cook it into the sauce — stir it in right before serving.

Mistakes to avoid

  • Skipping the pound step: Chicken breasts are thick on one end and thin on the other. If you don’t pound them to an even thickness, the thin end overcooks by the time the thick end is done. A few firm taps with a rolling pin is all it takes.
  • Cranking the heat during the final simmer: Once the chicken goes back in, keep the heat low. A hard boil will tighten the chicken and can cause the cream sauce to separate. Low and slow for those last 8 to 10 minutes.
  • Not tasting the sauce before the chicken goes back in: The Parmesan and sun-dried tomatoes both carry salt. Taste the sauce after the cheese melts and adjust before you add the chicken — it’s much harder to fix seasoning at the end.
  • Overcrowding the pan: Four chicken breasts in a small skillet will steam instead of sear. Use a pan that fits them in a single layer with a little room between each piece — a 12-inch skillet works well.
  • Serving it plain: The sauce is the point. Have pasta, polenta, rice, or bread ready to go — skip the garnish beyond the fresh basil, not worth the extra dish.

Keeping and reheating

Leftovers keep in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet over low heat with a splash of chicken broth or water to loosen the sauce — it thickens considerably when cold. The microwave works in a pinch but use 50% power in short bursts, stirring between them, or the cream sauce can turn grainy. This dish freezes reasonably well for up to 2 months; thaw overnight in the fridge before reheating and expect the sauce to need a little extra liquid to come back together.

Ingredients
 
 

  • 4 pieces boneless, skinless chicken breasts pounded to even thickness, around 6 oz each
  • 1 tsp kosher salt divided
  • ½ tsp freshly ground black pepper
  • 2 tbsp olive oil extra virgin
  • 2 cloves garlic minced
  • 1 cup chicken broth low-sodium
  • ¾ cup heavy cream room temperature
  • ½ cup grated Parmesan cheese freshly grated preferred
  • ½ tsp crushed red pepper flakes optional – adjust to heat preference
  • ½ cup sun-dried tomatoes oil-packed, sliced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ¼ cup fresh basil chiffonade or roughly torn

Instructions
 

  • Season chicken breasts with 1/2 teaspoon of kosher salt and the black pepper on both sides.
  • Heat olive oil in a large skillet over medium-high heat (375°F / 190°C). Sear chicken breasts for 4–5 minutes per side, until golden brown and nearly cooked through. Remove and set aside.
  • In the same skillet, reduce heat to medium. Add minced garlic and sauté for 30 seconds until fragrant—do not burn the garlic.
  • Deglaze the pan with chicken broth, scraping up browned bits from the bottom. Let simmer 2–3 minutes to reduce slightly.
  • Stir in heavy cream, Parmesan cheese, remaining 1/2 teaspoon salt, oregano, thyme, and red pepper flakes. Stir continuously until the cheese melts and the sauce is smooth.
  • Add sun-dried tomatoes and simmer the sauce for another 2–3 minutes to intensify flavors.
  • Return chicken to the skillet, nestling it into the sauce. Cover and simmer for 8–10 minutes on low heat (300°F / 150°C), until chicken is fully cooked (internal temp 165°F / 74°C).
  • Finish with fresh basil before serving.
