This is a lobster roll built around a lemon butter that does double duty — it goes into the filling and onto the buns before toasting. The whole thing comes together in 25 minutes, and the filling can be made ahead, which makes it genuinely useful for lunches, cookouts, or any time you want something that feels special without a lot of last-minute work.

What makes this version work

Two things matter here. First, the lemon butter is made separately and used in two places — brushed onto the buns for toasting and drizzled over the finished roll. That repetition ties the whole sandwich together without adding complexity. Second, the lobster filling is bound with just enough mayonnaise to keep it cohesive, not saucy. Overmixing or adding too much mayo turns the lobster mushy and masks its flavor. Fold gently and stop as soon as everything is coated. The chives are stirred in at the same time, so they stay bright rather than wilting into the mix.

Troubleshooting

  • Buns tear when you open them: Split-top buns are more fragile than standard hot dog buns. Let them come to room temperature before opening, and use a gentle sawing motion rather than pulling them apart.
  • Filling is watery: Cooked lobster holds moisture. Pat the meat dry with paper towels before mixing. If you’re using frozen lobster that’s been thawed, squeeze it lightly in a clean kitchen towel first.
  • Buns burn before they’re golden: The lemon butter has a low smoke point because of the lemon juice. Keep the skillet at medium-low heat and watch closely — 2 minutes per side is often enough.

About the ingredients

  • Split-top buns: These are the flat-sided New England-style buns that toast on the outside rather than the cut face. If you can’t find them, a standard hot dog bun works — just toast the cut side instead and skip the garnish, not worth the extra dish. Look for split-top buns at most grocery stores near the specialty bread section, or at a fish market.
  • Lobster meat: Pre-cooked claw and knuckle meat from a seafood counter is a practical shortcut and works well here. Avoid canned lobster — the texture is too soft and the flavor is noticeably weaker. Frozen pre-cooked lobster is a reasonable middle option; thaw it overnight in the fridge.
  • Unsalted butter: Using unsalted lets you control the salt level in the lemon butter. Salted butter can make the buns taste sharp once toasted.

Storage and reheating

The lobster filling keeps well in an airtight container in the fridge for up to 2 days — this is the part worth making ahead. Keep it separate from the buns, which should be stored at room temperature and toasted just before serving. Do not freeze the assembled rolls or the dressed filling; mayonnaise breaks when frozen and the lobster texture suffers. If you want to freeze lobster meat for later use, do it before mixing — plain cooked lobster freezes for up to 3 months. To serve make-ahead filling, pull it from the fridge about 15 minutes before you plan to eat so it isn’t fridge-cold when it hits the warm bun, then toast the buns fresh and fill them.

  • 1 cup lobster meat fresh, cooked, and chopped
  • 2 tablespoons unsalted butter high quality
