These garlic butter steak bites come together in 25 minutes using one pan and a handful of ingredients you likely already have. The steak gets a proper sear, the garlic butter sauce builds right in the same skillet, and cleanup is minimal. That’s the honest reason to make this on a weeknight.

Why this recipe works

Two things make this recipe reliable. First, cutting the sirloin into 1-inch cubes means each piece has a high surface-area-to-thickness ratio — they sear fast and stay juicy inside without any guesswork about internal temperature. Second, the garlic goes in after the steak comes out. Garlic burns quickly in a screaming-hot pan, and burnt garlic ruins the sauce. Dropping the heat to medium before adding it gives you fragrant, golden garlic instead of bitter, blackened bits. The butter then goes in right behind it, which cools the pan just enough and picks up all the browned bits left from the steak. That’s where most of the flavor lives.

About the ingredients

  • Beef sirloin: A good default cut here. If your store has sirloin tip or top sirloin on sale, both work. Avoid anything labeled “stew beef” — those cuts need long, slow cooking and will be chewy after a quick sear.
  • Unsalted butter: The recipe calls for grass-fed, which does have a slightly richer flavor, but standard unsalted butter is completely fine. Just use unsalted so you control the salt level.
  • Fresh parsley: Skip the garnish — not worth the extra dish if you’re washing up. The flavor contribution at this quantity is negligible once everything is coated in garlic butter.

Make-ahead notes

The steak bites are best eaten right away, but leftovers keep well in an airtight container in the fridge for up to 3 days. To reheat, put them back in a skillet over medium heat for 2 to 3 minutes — the microwave works in a pinch but tends to make the beef rubbery. You can also cut and season the raw steak cubes up to 24 hours ahead and store them uncovered on a plate in the fridge; the surface dries out slightly, which actually helps the sear. Freezing cooked steak bites is possible (up to 2 months), though the texture softens a bit after thawing.

If something goes sideways

  • The steak is steaming instead of searing: The pan wasn’t hot enough, or the pieces were crowded. Pull some out, let the pan recover its heat, and continue in smaller batches. A proper sear needs dry meat and a genuinely hot surface.
  • The butter sauce is greasy and separated: The heat was too high when you added the butter. Take the pan off the burner entirely for 30 seconds, then add the butter off the heat and swirl — it will come together.
  • The steak bites are tough and chewy: They were overcooked. At 1-inch cubes, 2 to 3 minutes per side over medium-high heat is enough for medium doneness. Pull them earlier than you think you need to — they carry over a little while resting.
  • The garlic tastes bitter: It cooked too long or the heat was still too high. Thirty seconds is the ceiling. If it’s already bitter, there’s no fixing it in the pan — start the sauce again with fresh garlic and a clean pan if you have time.
  • The seasoning tastes flat: Salt was added too early or the pieces weren’t dried before seasoning. Pat the cubes dry with a paper towel before seasoning, and taste the finished sauce — a small pinch of flaky salt added at the table fixes most flat-tasting results.

Ingredients
 
 

  • 1.1 lbs beef sirloin cut into 1-inch (2.5cm) cubes, about 500g
  • 2 tablespoons olive oil 30ml
  • 4 cloves garlic minced
  • 3 tablespoons unsalted butter preferably grass-fed, 42g
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon sea salt 6g
  • 1 teaspoon black pepper freshly ground, 2g

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat until the oil shimmers and just begins to smoke.

  • Season the beef sirloin cubes generously with sea salt and freshly ground black pepper.

  • Add the seasoned steak bites to the hot skillet in a single layer, cooking in batches if needed. Sear for 2-3 minutes on each side until deeply golden brown. For medium, the cubes should feel firm at the edges but still have a little give in the centre. Do not move the pieces while each side sears — let the crust develop. Avoid overcrowding to ensure a perfect sear.

  • Once seared, remove the steak bites from the skillet and set them aside. Reduce the heat to medium.
  • In the same skillet, add the minced garlic. Stir continuously for 30-45 seconds until the garlic is fragrant and just turning golden. If it starts to darken, immediately add the butter to cool the pan.

  • Add the butter to the skillet and swirl until melted and foamy. Use a spoon or spatula to scrape up any browned bits (fond) from the bottom of the pan — this is where most of the flavour lives.
