This is a 30-minute shrimp salad with a chili-lime marinade, fresh avocado, cherry tomatoes, red onion, and a honey-Dijon dressing. It comes together fast enough for a weeknight and holds up well enough that cooking a double batch actually pays off. The flavors are bold without being complicated.

The short version of why this works

Two things make this salad worth repeating. First, the shrimp marinates for only 10 minutes, but that short rest in lime juice, chili powder, smoked paprika, and garlic powder is enough to season them all the way through before they hit the pan. Second, cooking the shrimp over medium-high heat without crowding the pan lets them caramelize slightly on the outside — that little bit of color adds a savory depth that plain steamed or boiled shrimp just doesn’t have. Both steps are quick, but skipping either one flattens the result.

Ingredient notes

  • Shrimp: Large shrimp (21–25 count) work best here — smaller ones overcook before they get any color. Frozen shrimp is fine; thaw overnight in the fridge or under cold running water for 10 minutes.
  • Smoked paprika: Regular paprika won’t give you the same depth. If you’re out, a small pinch of cumin is a reasonable stand-in, though the flavor shifts.
  • Avocado: Use one that gives slightly when pressed. A rock-hard avocado won’t slice cleanly and has no flavor. A very soft one will mash when you toss the salad.
  • Mixed greens: Baby arugula adds a peppery note that works well with the chili-lime shrimp. Romaine holds up better if you’re packing this for lunch.
  • Honey in the dressing: A small amount — just 1 teaspoon — rounds out the acidity without making the dressing sweet. Maple syrup works as a swap.

Leftovers and make-ahead

The shrimp keeps well in an airtight container in the fridge for up to 3 days, which makes it genuinely useful for meal prep. Cook a full pound even if you’re only feeding two people tonight — the extra shrimp can go into grain bowls, wraps, or scrambled eggs the next day without any reheating required; they’re good cold. The dressing keeps separately for up to 5 days in a jar in the fridge. Do not store dressed salad — the greens go limp within an hour. Keep the avocado separate until serving; if you’ve already sliced it, press plastic wrap directly against the surface and use it within 24 hours. The shrimp does not freeze well after cooking; the texture turns rubbery.

Troubleshooting

  • Shrimp turned rubbery: They cooked too long. Shrimp are done the moment they curl into a loose C-shape and turn opaque. A tight O-shape means overcooked. Pull them off the heat as soon as the color changes — residual heat keeps cooking them even in the pan.
  • Shrimp steamed instead of seared: The pan wasn’t hot enough, or the shrimp were too wet. Pat them dry with a paper towel after marinating and before they go in the pan. A wet surface creates steam and prevents browning.
  • Dressing separated and tastes flat: Whisk it again just before using — the Dijon helps it emulsify but it will still separate as it sits. Taste it before you dress the salad; lime juice varies in acidity, so you may need a pinch more salt to bring it together.
  • Salad is watery at the bottom of the bowl: The tomatoes or onion released liquid after sitting. Salt draws moisture out of both. Add them to the bowl right before serving, not ahead of time — skip the garnish of extra cilantro on top too, not worth the extra dish.
  • Avocado browned before serving: Toss the sliced avocado in a small squeeze of lime juice as soon as you cut it. This slows oxidation by 20–30 minutes, which is usually enough time to get the salad to the table.

  • 1 lb large shrimp, peeled and deveined preferably wild-caught
  • 2 tbsp olive oil
  • 1 tsp chili powder

  • ½ tsp garlic powder
  • ½ tsp salt
  • 1 tbsp lime juice freshly squeezed

For the Salad:

  • 4 cups mixed greens baby spinach, arugula, or romaine
  • 1 medium avocado, sliced ripe but firm
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped

For the Dressing:

  • 3 tbsp olive oil
  • 2 tbsp lime juice freshly squeezed
  • 1 tsp honey
  • ½ tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp freshly ground black pepper

Instructions
 

  • In a mixing bowl, combine the shrimp with olive oil, chili powder, smoked paprika, garlic powder, salt, and lime juice. Toss to coat evenly and let marinate for 10 minutes.
  • Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes per side until they turn opaque and slightly caramelized. Remove from heat and set aside.
  • In a small bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and black pepper until emulsified.
  • In a large serving bowl, combine mixed greens, sliced avocado, cherry tomatoes, red onion, and cilantro.
  • Drizzle the dressing over the salad and toss gently to coat.
  • Top the salad with the cooked shrimp and serve immediately.
