The Fallen Leaves cocktail is a shaken bourbon drink with apple cider, maple syrup, lemon juice, and aromatic bitters — ready in 10 minutes with no special skills required. It’s genuinely good for a weeknight drink or a casual gathering, and every ingredient is easy to find or swap out depending on what’s already in your kitchen.

Before you start

Two things make a real difference here. First, shake hard and long enough — a full 15 seconds until the outside of the shaker is cold and frosty. That’s what properly dilutes and chills the drink so the maple syrup doesn’t taste heavy or cloying. Second, use freshly squeezed lemon juice rather than bottled. The bottled kind has a flat, slightly bitter edge that throws off the balance with the maple syrup; a single lemon gives you more than enough juice for several rounds.

Smart swaps

  • Bourbon: Any mid-range bourbon works fine. If you only have rye whiskey on hand, it works — the drink will be a little spicier and less sweet, which some people prefer.
  • Apple cider: Unfiltered fresh cider is ideal, but regular filtered apple juice from a carton is a perfectly usable substitute. It’s thinner and less tart, so cut the maple syrup to about a third of an ounce to keep things balanced.
  • Maple syrup: Pure maple syrup is worth using here since it’s a primary flavor, not just background sweetness. In a pinch, honey works — use the same amount and shake a little longer since honey takes more effort to dissolve in cold liquid.
  • Aromatic bitters: Angostura is the standard and widely available. If you don’t have any bitters at all, a small pinch of cinnamon stirred in before shaking gets you some of that spice note, though the complexity won’t be quite the same.

Make-ahead notes

You can pre-batch the non-ice components — bourbon, cider, maple syrup, lemon juice, and bitters — up to 24 hours ahead. Store the mixture in a sealed jar in the fridge. When you’re ready to serve, give the jar a quick stir (the maple syrup can settle), measure out a single serving, add it to a shaker with ice, and shake as normal. Don’t shake the whole batch at once; shaking in bulk over-dilutes it. The pre-batched mix holds well for a day but the lemon juice starts to go flat after that, so don’t push it further.

If something goes sideways

  • The drink tastes too sweet: Add a few more drops of lemon juice directly to the glass and stir. Next time, reduce the maple syrup by a quarter ounce — ciders vary a lot in natural sweetness, so you may need to adjust batch to batch.
  • The maple syrup clumps or doesn’t mix in: It’s too cold to dissolve properly before shaking. Stir the maple syrup with the lemon juice in the shaker first for a few seconds before adding the ice and other ingredients — the acid helps it loosen up.
  • The drink is watery: Your ice was probably wet or half-melted before you started. Use ice straight from the freezer, and shake for the full 15 seconds rather than longer — over-shaking melts more ice than you want.
  • It tastes flat or thin: Check your bitters — skip the garnish, not worth the extra dish — but don’t skip the bitters themselves. Even two small dashes add a backbone that keeps the drink from tasting like spiked juice. If your bitters bottle is old, give it a smell; bitters do lose potency over time and you may need an extra dash.
  • Too tart: Add a small splash more apple cider directly to the glass and stir gently. Lemons vary in acidity, so if yours were particularly sharp, a touch more cider brings the sweetness back into line.
