This is a five-ingredient cucumber salad with a vinegar-sugar dressing and a lot of fresh dill. It takes 15 minutes, needs no cooking, and holds up well in the fridge — which makes it genuinely useful on busy weeks when you want something ready to pull out alongside whatever you’re serving for dinner.

The short version of why this works

Two things actually matter here. First, salting the cucumbers before dressing them draws out excess water, so the dressing coats the slices instead of getting diluted into a puddle at the bottom of the bowl. Second, the dressing is an emulsion — you whisk the oil in slowly after the vinegar and sugar are combined. That step keeps the dressing from separating and clinging unevenly. Skip either one and the salad still tastes fine, but the texture and consistency are noticeably better when you follow both.

Troubleshooting

  • Salad tastes flat after sitting overnight: The vinegar mellows as it sits. Taste before serving and add a small splash — half a teaspoon is usually enough to bring it back.
  • Cucumbers are limp, not crisp: This usually means the cucumbers weren’t dried well enough after salting, or the salad sat undressed in the fridge too long before being tossed. Salt and drain them, pat firmly with a paper towel, and dress only what you plan to eat within a day or two.
  • Dressing tastes sharp and one-note: The sugar isn’t just for sweetness — it rounds out the vinegar. If the balance feels off, add sugar in small pinches (not teaspoons) and whisk again before tasting.
  • Oil is pooling at the bottom instead of coating the cucumbers: The emulsion broke, likely because the oil was added too fast. For the next batch, drizzle it in a thin stream while whisking constantly. It comes together quickly once you slow down.
  • Dill flavor is barely noticeable: Fresh dill loses punch fast once chopped. If yours has been sitting in the fridge for a few days, use a little more than the recipe calls for — up to 3 tablespoons won’t overwhelm the salad.

Storage and reheating

Store dressed salad in an airtight container in the fridge for up to two days. By day two the cucumbers will have softened slightly and released more liquid — drain the bowl before serving and add a small splash of vinegar to freshen it up. If you’re making a larger batch to use across several meals, keep the dressing separate and dress only what you need each time; undressed, salted-and-drained cucumber slices keep well for up to three days. This salad doesn’t freeze — cucumbers turn watery and soft, and there’s no recovering them. Skip the garnish of extra dill sprigs on top before serving — not worth the extra dish when the dill is already mixed through.

Instructions
 

  • Thinly slice the cucumbers using a sharp knife or mandoline. Place them in a medium bowl and sprinkle with sea salt. Toss gently and let sit for 10 minutes to draw out moisture.
  • While cucumbers are resting, whisk together the vinegar, sugar, cold water, and black pepper in a separate bowl until the sugar dissolves. Slowly drizzle in the oil while whisking to emulsify.
  • Drain any excess liquid from the cucumbers. Lightly pat dry with a paper towel, then add the fresh dill and dressing. Toss until cucumbers are fully coated.
  • Refrigerate for at least 5 minutes before serving to allow flavors to meld, though it's also delicious served immediately.

  • If you prefer a creamier version, substitute half of the oil with sour cream or crème fraîche.
  • For a crisper cucumber, salt and drain them longer (up to 20 minutes), but don’t forget to pat them dry before dressing.
