This is a straightforward chicken pot pie built around a creamy vegetable filling and a refrigerated pie crust — no scratch pastry required. The filling comes together in one skillet, so the actual hands-on work is manageable even on a busy evening. It’s the kind of recipe that works whether you’re using leftover rotisserie chicken or a fresh breast you poached that afternoon.

What makes this version work

Two things matter most here. First, cooking the flour directly in the butter and vegetables for a full 1–2 minutes before adding any liquid — that step gets rid of the raw-flour taste that can make a pot pie filling feel starchy and flat. Second, letting the filling cool slightly before it goes into the crust. Hot filling steams the bottom pastry from the inside and you end up with a soggy base. Even 10–15 minutes off the heat makes a real difference. Everything else in this recipe is forgiving, but those two steps are worth doing right.

Common problems and fixes

  • Filling is too thin after baking: This usually means the filling wasn’t thick enough before it went into the pie. It should coat a spoon and hold its shape when you drag a spatula through it. If it looks loose in the skillet, let it simmer another 2–3 minutes before filling the crust.
  • Bottom crust is undercooked: Baking on a preheated baking sheet helps — put the sheet in the oven while it preheats, then set the pie dish on the hot surface. The direct heat from below jumpstarts the bottom crust.

Make-ahead notes

The filling keeps well in the fridge for up to 2 days — store it in an airtight container and bring it close to room temperature before assembling, since cold filling takes longer to heat through and can leave you with a done crust over a lukewarm center. You can also assemble the whole unbaked pie, wrap it tightly, and refrigerate it overnight; add 5–10 minutes to the bake time if it goes in cold. For freezing, the filling freezes better than the assembled pie — freeze it flat in a zip-lock bag for up to 3 months, thaw overnight in the fridge, then assemble and bake fresh. Leftover baked pie reheats well in a 350°F oven for 20–25 minutes; skip the microwave if you want the crust to stay crisp — it won’t.

  • 1 cup yellow onion small dice
  • 2 cloves garlic minced
  • 1 cup carrots peeled and diced
  • 1 cup celery sliced thinly
  • 0.5 cup frozen peas
  • 2 cups chicken breast cooked ; shredded or cubed
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper freshly ground
  • 3 tablespoons all-purpose flour
  • 1.5 cups chicken broth preferably low-sodium
  • 0.75 cup heavy cream

For the Crust

  • 1 package refrigerated pie crust dough two 9-inch rounds
  • 1 large egg beaten, for egg wash

Instructions
 

  • Preheat your oven to 400°F (205°C). Place a rack in the center of the oven.
  • In a large skillet, melt the butter over medium heat. Add the onion, garlic, carrots, and celery. Sauté for 6–8 minutes or until vegetables are softened and fragrant.
  • Stir in the flour and cook for 1–2 minutes to form a roux. Slowly whisk in the chicken broth, ensuring a lump-free mixture. Cook until thickened, about 4–5 minutes.
  • Add heavy cream, chicken, peas, salt, and pepper. Simmer for an additional 3 minutes, stirring well. Remove from heat and let cool slightly.
  • Roll out one pie dough round into a 9-inch pie dish and press gently to line the base. Trim excess edges. Spoon in the cooled filling evenly.
  • Cover with the second pie crust, sealing the edges by crimping with a fork or fingers. Cut 3–4 small slits in the center for steam to escape. Brush the top with beaten egg.
  • Place pie on a baking sheet and bake for 40–45 minutes or until golden brown and bubbling at the edges. If crust browns too quickly, cover loosely with foil.
  • Let rest for 10 minutes before slicing to allow the filling to set.
