This Mississippi Mud Pie has three layers: a crushed Oreo crust, a baked dark chocolate filling made with eggs and brown sugar, and a whipped cream topping finished with chocolate shavings. It takes about an hour start to finish and serves eight. The honest reason to make it is that the filling bakes up somewhere between a brownie and a custard — rich enough to satisfy serious chocolate fans, but not so intense that kids push it away.

The technique that matters

Two things decide whether this pie works. First, melt the chocolate gently and let it cool for a few minutes before you fold it into the egg mixture. If it goes in too hot, it can scramble the eggs and you’ll end up with specks instead of a smooth filling. Second, pull the pie at 25 minutes even if the center still has a slight wobble — it will firm up as it cools. Overbaking dries out the filling and kills the fudgy texture that makes this worth making in the first place.

If something goes sideways

  • The crust crumbles when you slice it: It wasn’t pressed firmly enough before baking. Next time, use the flat bottom of a measuring cup to compact it. For now, serve slices with a wide spatula and accept that the first piece is always the messiest.
  • The filling cracked on top: The oven was too hot or the pie baked too long. Cracks don’t affect flavor at all — the whipped cream covers them completely.
  • The whipped cream is weeping or sliding off: The pie wasn’t fully cool when you topped it. Warm filling melts cream fast. Give it at least an hour at room temperature, then another 30 minutes in the fridge before topping.
  • The filling looks greasy after baking: The chocolate and egg mixture split, usually because the chocolate was too hot when added. The pie is still edible, but the texture will be denser than intended.
  • The crust stuck to the pan: A tart pan with a removable base is specified for a reason. If you used a fixed pan, run a thin knife around the edge while it’s still slightly warm — don’t wait until it’s fully cold.

Smart swaps

  • Dark chocolate (70% cocoa): This is the backbone of the filling, so quality matters more here than anywhere else in the recipe. That said, if 70% is too bitter for your crowd, a 55–60% semi-sweet chocolate works fine and produces a milder, sweeter result that tends to go over better with kids.
  • Light brown sugar: Dark brown sugar can substitute — it adds a slightly deeper molasses flavor, which pairs well with chocolate.
  • Chocolate shavings for garnish: Skip the garnish — not worth the extra dish. A light dusting of cocoa powder does the same job in five seconds.
  • Heavy cream in the filling: Half-and-half works in a pinch, though the filling will be slightly less rich.

Keeping and reheating

Store the finished pie covered in the fridge for up to 4 days. The crust softens a little after day two, but the flavor is actually better on day one or two once the filling has fully set. If you want to freeze it, do so before adding the whipped cream topping — wrap the cooled pie tightly in plastic wrap and then foil, and freeze for up to 6 weeks. Thaw overnight in the fridge, then add fresh whipped cream before serving. Don’t try to reheat slices; this pie is meant to be served cold or at cool room temperature.

  • 2½ cups chocolate cookies preferably Oreos, crushed
  • 4 tablespoons unsalted butter melted, 56g / 2 oz

Filling

  • 1¼ cups dark chocolate 70% cocoa, chopped
  • ¾ cup light brown sugar
  • ¼ cup heavy cream preferably organic
  • 3 tablespoons all-purpose flour sifted, 24g
  • 4 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Topping

  • 1 cup heavy cream chilled, 240ml
  • 2 tablespoons powdered sugar sifted, 16g
  • 1 cup dark chocolate shavings for garnish

Instructions
 

  • Preheat your oven to 350°F / 180°C (160°C fan-forced).
  • Combine the crushed chocolate cookies and melted butter in a bowl until evenly moistened. Press this mixture firmly and evenly into the base and up the sides of a 9-inch (23cm) tart pan with a removable base. Use the flat bottom of a measuring cup or glass to compact the base evenly. Bake for 10 minutes, then let cool.
    2½ cups chocolate cookies, 4 tablespoons unsalted butter
  • For the filling, place the chopped dark chocolate in a heatproof bowl. Melt gently over a pot of simmering water or microwave until smooth and glossy. Set aside to cool for 3-5 minutes — the chocolate should be warm but not hot to the touch before folding into the egg mixture.
    1¼ cups dark chocolate
  • In a separate bowl, whisk together the light brown sugar, heavy cream, sifted flour, and salt until smooth. Add the eggs one at a time, beating well after each addition until fully incorporated. Beat in the vanilla extract with the final egg.

  • Fold the melted chocolate into the egg mixture until fully incorporated. Pour this filling over the prepared crust.

  • Bake for 25 minutes, or until the center is set with a slight wobble. Cool completely in the pan on a wire rack for at least 1 hour at room temperature, then refrigerate for at least 2 hours until fully set before removing the tart ring and transferring to a serving plate.
  • To make the topping, whip the chilled heavy cream with powdered sugar until soft peaks form. Spread over the cooled pie.

Freezing: Freeze without the whipped cream topping — wrap tightly in plastic wrap then foil for up to 6 weeks. Thaw overnight in the fridge and add fresh whipped cream before serving.
Make-Ahead: Bake the pie and crust a day ahead and refrigerate. Add whipped cream topping 2-3 hours before serving for the best texture. Allow at least 3 hours of cooling and chilling time before adding the whipped cream topping and serving.
Substitution: Swap the Oreo crust for a graham cracker crust (150g crushed graham crackers + 4 tablespoons melted butter) for a less intense chocolate base.
Pro Tip: Let the melted chocolate cool for 3-5 minutes before folding into the egg mixture. If it’s too hot, it will cook the eggs and leave grainy specks in the filling.

Can I make this pie the day before I need it?

Yes, and it’s actually a good idea. The filling sets more firmly overnight in the fridge, which makes it much easier to slice cleanly. Just hold off on adding the whipped cream topping until a few hours before you serve it.

Does the filling have raw egg in it after baking?
