This is a partially blended tomato soup built around chili flakes, paprika, and white pepper, with kidney beans stirred in at the end for substance. It takes about 70 minutes start to finish, most of that hands-off simmering time. If you want a bowl that actually fills you up without much effort, this is a solid weeknight option.

The technique that matters

The 30-minute uncovered simmer is the step that makes or breaks this soup. It gives the tomatoes time to fully break down and the acidity to mellow out — cut it short and the soup tastes sharp and thin rather than rounded. The partial blending matters too. You want to run the stick blender in short pulses, not hold it down continuously. A few passes is usually enough. Stop when the soup looks mostly smooth but still has some visible texture. If you blend it completely smooth, it loses the rustic quality that makes it feel like real food rather than something from a carton.

Shopping notes

  • Chili flakes: Standard red pepper flakes from the spice aisle work fine. The heat level varies a lot by brand, so if yours is particularly fiery, start with 1 teaspoon and taste before adding more.
  • White pepper: It has a different heat profile than black pepper — sharper and more lingering. If you only have black pepper, use half the amount. It won’t be identical, but it won’t ruin the soup.
  • Tomato paste: A 6-ounce can is more than you need for this recipe. Freeze the leftover paste in tablespoon-sized portions on a lined tray, then transfer to a bag — it keeps for months and is useful for dozens of other recipes.
  • Kidney beans: Canned is fine and what the recipe calls for. Skip the garnish cheese if you’re short on dishes — the sour cream and chips do the job on their own.

Leftovers and make-ahead

This soup keeps well. Store it in an airtight container in the fridge for up to 4 days — the flavor actually improves overnight as the spices settle in. To reheat, warm it gently in a small pot over medium-low heat, stirring occasionally; it can thicken up in the fridge, so add a splash of water or stock to loosen it. For freezing, leave out the kidney beans and add fresh ones when you reheat — beans that have been frozen and thawed can go mushy. The base freezes well for up to 3 months. Thaw overnight in the fridge before reheating.

Troubleshooting

  • Soup tastes flat or bland: This is almost always a salt issue. Taste after the beans have warmed through and season again at the very end — the beans absorb some salt as they heat, so what tasted right before may need another pinch.
  • Soup is too thin after simmering: Make sure the pot is uncovered the whole 30 minutes. If it still looks watery, give it another 5–10 minutes on medium heat before blending. A wider pot speeds this up because more surface area means faster evaporation.
  • Soup is too thick after blending: Stir in a little water, a few tablespoons at a time, until it reaches the consistency you want. Do this before adding the beans so you can judge the final texture accurately.
  • Beans are falling apart: They only need 15 minutes on low heat to warm through — don’t let them boil. High heat breaks down canned beans quickly, so keep it at a gentle simmer once they go in.
  • Soup tastes too acidic: This usually means the simmer was too short. If you’re already past that point, stir in a small pinch of sugar — half a teaspoon is enough to take the edge off without making it taste sweet.

Ingredients
 
 

  • 1 tablespoon neutral oil (vegetable or canola), for sautéing
  • 14 ounces tomatoes chopped
  • 1 cup vegetable stock
  • 1 cup water
  • 2 tablespoons tomato paste
  • 1 teaspoon garlic crushed
  • 2 teaspoons chili flakes
  • 1 teaspoon paprika
  • ¼ teaspoon white pepper
  • ½ cup canned red kidney beans drained and rinsed
  • salt to taste
  • 2 tablespoons sour cream for serving
  • ¼ cup shredded cheese for serving
  • 1 cup tortilla chips or crusty bread (2 slices), for serving

Instructions
 

  • Heat 1 tablespoon of oil in a medium pot over medium heat. Add the crushed garlic and sauté for 30 seconds until fragrant. Add the vegetable stock, chili flakes, paprika, and white pepper. Stir to combine and let simmer for 5 minutes.
  • Add the tomato paste and whisk until fully dissolved. Add the chopped tomatoes and water. Season with salt to taste and stir well.
  • Simmer uncovered for 30 minutes, stirring occasionally, until the tomatoes have broken down and the soup has thickened slightly. Remove from the heat and allow to cool for 5 minutes. Use a stick blender to blend to your desired consistency — leave a few chunks for texture if you prefer. Stir in the drained kidney beans and return to low heat for another 15 minutes until the beans are heated through.
  • Ladle into bowls and serve topped with a dollop of sour cream, shredded cheese, and your favourite tortilla chips or crusty bread.

Your questions, answered

Can I use fresh tomatoes instead of canned?

Yes, fresh tomatoes work, but you’ll need to account for extra liquid and less concentrated flavor. Use about 1 pound of ripe tomatoes, chop them roughly, and expect the simmer time to run a little longer since fresh tomatoes release more water than canned.

Do I need a stick blender, or can I use a regular blender?

A regular blender works fine — just let the soup cool for at least 10 minutes first and fill the blender no more than halfway to avoid hot liquid expanding under the lid. Blend in batches, hold the lid down with a folded towel, and return the soup to the pot before adding the beans.

Is this soup very spicy? Can I make it milder for kids?

At the full 2 teaspoons of chili flakes it has a noticeable kick — warm rather than fiery, but some kids will find it too much. Drop the chili flakes to half a teaspoon and it becomes a mildly spiced tomato soup that most kids handle easily.
