These are pan-fried pork and water chestnut dumplings made with store-bought wrappers — crispy on the bottom, steamed through on top, and ready in about an hour. The water chestnuts stay crunchy inside the cooked filling, which makes the texture genuinely interesting rather than just soft throughout. If you need a crowd-pleasing appetizer or a hands-on dinner that works for kids and adults alike, this is a reliable one to reach for.

The short version of why this works

Two things make this recipe succeed. First, the potsticker method — pan-fry the dumplings flat-side down until golden, then add water and cover immediately. The steam finishes the pork filling without drying it out, while the bottom stays crisp because it had a head start in hot oil. Second, the water chestnuts. Finely chopped, they don’t release liquid the way cabbage or mushrooms do, so the filling stays tight and doesn’t make the wrappers soggy before you even get them in the pan. Both techniques are simple, but skipping either one changes the result.

Shopping notes

  • Water chestnuts: Canned water chestnuts work perfectly here — drain and rinse them well, then chop finely. Fresh water chestnuts are crunchier if you can find them at an Asian grocery, but canned is the practical everyday choice.
  • Dumpling wrappers: Look for round wrappers labeled “dumpling” or “gyoza” wrappers in the refrigerated section of Asian grocery stores or many larger supermarkets. Wonton wrappers are square and thinner — they’ll work in a pinch but tear more easily when pleating.
  • Light soy sauce: This means standard soy sauce (like Kikkoman), not low-sodium. Dark soy sauce is thicker and much saltier — don’t swap it in here.
  • Ground pork: Shoulder-ground pork has enough fat to keep the filling juicy. Extra-lean ground pork can turn dry and dense after cooking.

Mistakes to avoid

  • Overcrowding the pan: Dumplings need space so steam can circulate evenly. Pack them too tight and the ones in the middle won’t cook through in the same time as the ones on the edge. Work in batches if needed.
  • Lifting the lid too early: Once you add the water and cover, leave it alone for the full 7–8 minutes. Lifting the lid releases steam and stalls the cooking, which can leave the filling undercooked in the center.
  • Too much filling: A teaspoon of filling per wrapper sounds skimpy, but overfilling makes sealing nearly impossible and causes blowouts in the pan. When in doubt, use less.
  • Not pressing out air when sealing: Air pockets expand during cooking and pop the seam open. Press the filling gently toward the center as you fold, then crimp the edge firmly.
  • Adding cold water to a hot pan: It will splatter hard. Have the water measured and ready, then pour it in quickly and get the lid on fast — this is the one moment in the recipe that requires quick hands.

Make-ahead notes

The filling can be made up to 24 hours ahead and kept covered in the fridge — the flavors actually settle nicely overnight. Assembled, uncooked dumplings freeze well: arrange them in a single layer on a parchment-lined baking sheet, freeze until solid (about 2 hours), then transfer to a zip-top bag. They keep for up to 2 months. Cook straight from frozen — skip the garnish on reheated batches, not worth the extra dish — just add 2–3 extra minutes to the steaming time and check that the filling is fully opaque before serving. Already-cooked dumplings can be refrigerated for up to 3 days and re-crisped in a dry non-stick pan over medium heat for 3–4 minutes.

Ingredients
 
 

Dumpling Filling

  • 1 lb ground pork 450g, preferably from shoulder meat
  • 1 cup water chestnuts 140g, drained and finely chopped (canned is fine)
  • 2 tbsp light soy sauce 30ml
  • 1 tbsp toasted sesame oil 15ml
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger about 15g, finely grated
  • 1 large egg beaten
  • ¼ tsp white pepper
  • 1 pinch salt to taste

Dumpling Dough

  • 1 pack round dumpling wrappers about 30-36 sheets, store-bought

Cooking Ingredients

  • 2 tbsp neutral oil 30ml, vegetable or canola
  • ½ cup water 120ml

Instructions
 

Make the Filling

  • In a large bowl, combine the ground pork, finely chopped water chestnuts, light soy sauce, sesame oil, minced garlic, grated ginger, beaten egg, white pepper, and a pinch of salt. Mix thoroughly until well integrated.

Assemble the Dumplings

  • Place about 1 heaped teaspoon (roughly 2 teaspoons / 10g) of filling in the centre of each dumpling wrapper. Don’t overfill — you need clear edges to seal. Dampen the edges with water and fold to seal, creating a pleated crescent shape. Ensure no air is trapped inside.

Cook the Dumplings

  • Heat the vegetable oil in a 10-inch non-stick skillet over medium-high heat. Once the oil shimmers, arrange the dumplings in the skillet, flat side down, without crowding. Cook undisturbed for 2–3 minutes until the bottoms are deep golden brown.

  • Carefully pour the water into the skillet (it will spit and steam — stand back). Cover immediately with a tight-fitting lid and reduce heat to medium. Steam for 7–8 minutes until the water has fully evaporated and the filling is opaque and cooked through. If water remains after 8 minutes, uncover and cook until the pan is dry to re-crisp the bottoms.

Storage: Cooked dumplings keep refrigerated in an airtight container for up to 3 days. Re-crisp in a dry non-stick pan over medium heat for 3–4 minutes.
Freezing: Arrange uncooked dumplings in a single layer on a parchment-lined baking sheet, freeze until solid (about 2 hours), then transfer to a zip-top freezer bag. Keeps for up to 2 months. Cook from frozen — add 2–3 extra minutes to the steaming time.
