This potato leek soup skips heavy cream entirely — cauliflower blends in with the potatoes and does the same job, giving you a thick, smooth soup without the heaviness. It makes two generous dinner portions with enough left over for lunch the next day, and the whole thing takes about 55 minutes start to finish.

The technique that matters

The leeks need real time in the butter — a full 7 to 8 minutes over medium heat, stirring occasionally. This isn’t just about softening them; it’s where the soup’s base flavor comes from. Leeks that are rushed taste sharp and a little raw even after blending. You’re looking for them to turn completely translucent and smell sweet, not pungent. The second thing that matters is blending long enough. Sixty to ninety seconds with an immersion blender sounds like a lot, but stopping early leaves the soup slightly grainy rather than truly smooth. Run the blender until you can’t feel any resistance when you move it through the pot.

Common problems and fixes

  • Soup is too thin after blending: The potatoes or cauliflower weren’t fully cooked before blending. A fork should slide into both with zero resistance. If the soup is already blended and still thin, return it to medium heat uncovered for 5 to 10 minutes, stirring often, to reduce it slightly.
  • Soup tastes flat: This almost always means it needs more salt. Add it in small increments — a pinch at a time — after you stir in the milk, tasting as you go. A small squeeze of lemon juice can also sharpen the flavor if salt alone isn’t doing it.
  • Milk curdled or separated: The heat was too high when you added it. Always bring the soup back to low heat before stirring in the milk, and don’t let it boil after that point. If it does separate slightly, a quick 20-second blend will usually bring it back together.
  • Leeks are gritty in the finished soup: Dirt hides deep between leek layers and survives cooking. Slice them first, then soak the slices in a bowl of cold water for two or three minutes. Lift them out with your hands rather than pouring through a strainer — the grit sinks and stays in the bowl.
  • Soup sticks or scorches on the bottom: Your heat is too high during the simmer. Medium-low with the lid partially on is the right setting. If you smell anything catching, pull the pot off the heat immediately and switch to a lower burner setting before continuing.

Ingredient notes

Leeks: Use the white and light green parts only — the dark green tops are tough and fibrous and won’t soften properly. Yukon gold potatoes: These are worth seeking out specifically because they blend smoother than russets, which can turn gluey when over-processed. Cauliflower: Fresh or frozen both work here. If using frozen, no need to thaw — just add it straight to the pot with the potatoes and broth. Chicken broth vs. vegetable stock: Either works; vegetable stock keeps it fully vegetarian and produces a slightly sweeter result. Smoked paprika garnish: Skip the garnish — not worth the extra dish, and the soup is perfectly good without it.

  • 2 tablespoons unsalted butter
  • 4 medium leeks green and white parts sliced thinly
  • 2 cups cauliflower florets
  • 2 medium Yukon gold potatoes peeled and cut into ½-inch cubes
  • 4 cups low-sodium chicken broth or vegetable stock
  • ½ teaspoon salt plus more to taste
  • ¼ teaspoon black pepper freshly ground
  • 1 cup whole milk
  • ¼ teaspoon smoked paprika for garnish

Instructions
 

  • Melt the butter in a large pot or Dutch oven over medium heat. Add the sliced leeks and cook, stirring occasionally, for 7 to 8 minutes until softened and translucent. Do not let them brown.
  • Add the cauliflower florets, cubed potatoes, broth (or vegetable stock), and ½ teaspoon salt. Stir to combine and bring to a boil over medium-high heat.
  • Reduce the heat to medium-low, partially cover, and simmer for 20 to 25 minutes until the potatoes and cauliflower are completely fork-tender.
  • Remove the pot from the heat. Using an immersion blender, blend the soup directly in the pot until completely smooth, about 60 to 90 seconds. Return to low heat, stir in the milk, and warm through for 2 to 3 minutes — do not let it boil. Season with salt and pepper to taste. Ladle into bowls and finish with a light dusting of smoked paprika.

Your questions, answered

Can I make this soup ahead of time?

Yes — it keeps well in the fridge for up to 4 days and actually tastes better on day two. Store it without the milk stirred in if you want maximum flexibility, then add the milk when you reheat it over low heat.

Can I freeze potato leek soup?

You can, but the texture changes slightly after freezing — it may become a little grainy when thawed. Freeze it before adding the milk, then stir the milk in fresh when you reheat it to get the smoothest result.

I don’t have an immersion blender. Can I use a regular blender?

Yes, but let the soup cool for at least 15 minutes first. Fill the blender no more than halfway, hold the lid down firmly with a folded kitchen towel, and blend in batches — hot liquid expands and can blow the lid off if you rush it.

Can I use a different type of potato?

Yukon golds are strongly preferred here. Russets can work in a pinch, but they release more starch and can make the blended soup gluey if over-processed — blend them just until smooth and stop.

How do I know when the potatoes and cauliflower are done simmering?

Poke a potato cube with a fork — it should slide in and fall apart with almost no pressure. If there’s any resistance at all, give it another 5 minutes. Undercooked vegetables are the most common reason a blended soup turns out grainy.

Can I make this dairy-free?

Yes. Swap the butter for olive oil and use unsweetened oat milk or full-fat coconut milk in place of the whole milk. Oat milk gives the most neutral flavor; coconut milk adds a slight sweetness that works fine but is noticeable.
