This homemade gingerbread cake is one of those recipes that fills your entire kitchen with the most incredible aroma the moment it goes into the oven. The combination of blackstrap molasses, honey, ground ginger, cinnamon, and a hint of black pepper creates a deeply flavoured, beautifully moist cake that needs very little fuss.

I grew up loving spice cakes, and when I switched to eating gluten-free, gingerbread became my go-to. The generous amount of butter and molasses in this batter means the crumb stays wonderfully soft — you would never guess it uses gluten-free flour.

This recipe makes a double layer gingerbread cake that is perfect for birthdays, holiday gatherings, or a showstopping after-dinner dessert. You can frost it with cream cheese frosting, dust it with icing sugar, or serve warm slices with a scoop of vanilla ice cream.

The batter comes together in one saucepan and one bowl, so cleanup is minimal — and the result is an impressive cake that tastes like you spent hours on it.

As a child, my favourite sort of cake was a spice cake with vanilla frosting. I suppose I liked the sweetness of the frosting coupled with the mild scents of cinnamon, allspice, and cloves even back then. 
Cakes with a natural moistness translate extremely well to my current diet because I must eat gluten-free. That means my current favourite cake is gingerbread cake rather than spice cake. Because of the amount of butter and molasses, gingerbread has a lovely moist texture.
Because the cinnamon, ginger, and pepper begin to perfume the kitchen once the batter starts to bake, this is a delightful recipe to hang out near the stove. This double layer cake is perfect for a special birthday cake or a lovely after-dinner dessert.

Ingredients
 
 

  • 1 cup unsalted butter (2 sticks)
  • 1 ⅓ cups brown sugar packed
  • ⅔ cup granulated sugar
  • 1 cup whole milk
  • 1 cup blackstrap molasses
  • ½ cup honey
  • 3 cups gluten-free flour
  • 2 tablespoons ginger ground
  • 1 teaspoon cinnamon ground
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • ½ teaspoon baking soda
  • ½ teaspoon black pepper ground
  • 4 large eggs lightly beaten
  • 1 tablespoon ginger fresh ginger, finely grated

Instructions
 

  • Preheat the oven to 350°F (175°C / 180°C fan-forced). Grease and line two 9-inch (23cm) round cake pans with parchment paper, then lightly grease the parchment.
  • Combine the butter, brown sugar, milk, molasses, and honey in a medium saucepan. Heat until the butter has completely melted and the mixture has come together. Make sure it doesn’t get too hot, or the milk will curdle. Set aside after removing from the heat.
  • Combine the gluten-free flour, ground ginger, cinnamon, baking powder, salt, baking soda, and black pepper in a large mixing bowl.
  • Add the butter-molasses mixture into the dry ingredients, stirring until smooth.
  • Incorporate the lightly beaten eggs and 1 tablespoon of finely grated fresh ginger into the mixture, stirring until just combined. Make sure the mixture has cooled to lukewarm (around 100°F / 38°C) before adding the eggs to prevent them from scrambling.
  • Divide the batter evenly between the two prepared cake pans and bake for 35-40 minutes, or until a toothpick inserted into the centre comes out mostly clean with a few moist crumbs attached.
  • Allow the cakes to cool for 10-15 minutes before transferring them to a cooling rack.

Adding freshly grated ginger on top of the ground ginger creates layers of ginger flavour — warm and mellow from the powder, bright and sharp from the fresh root.

Because this recipe uses gluten-free flour, it is naturally suitable for anyone avoiding gluten without any compromise on taste or texture. The molasses and honey provide so much moisture that the absence of gluten is genuinely undetectable.

Tips for Best Results

  • Cool the wet mixture before adding eggs. The melted butter and molasses mixture will be very hot straight off the stove. Let it cool to lukewarm — you should be able to comfortably touch the side of the saucepan — before stirring in the eggs. If the mixture is too hot, the eggs will scramble and create lumps.
  • Use a good quality gluten-free flour blend. Look for one that contains xanthan gum, as this helps bind the cake and prevent a crumbly texture. If your blend does not contain xanthan gum, add ½ teaspoon to the dry ingredients.
  • Do not overmix. Once you combine the wet and dry ingredients, stir just until no dry pockets remain. Overmixing can make gluten-free batters gummy.
  • Check for doneness at 35 minutes. Every oven is different. The cake is ready when a toothpick inserted into the centre comes out with a few moist crumbs — not wet batter. If it is still wet, continue baking in 3-minute increments.
  • Line your pans with parchment. Gingerbread batter is sticky. A parchment round at the bottom of each cake pan ensures the layers release cleanly.

  • Add a stout: Replace half the milk with a dark stout beer for a rich, complex adult version of this cake.

Storage and Reheating

Unfrosted gingerbread cake layers keep beautifully at room temperature for up to 3 days when wrapped tightly in cling film or stored in an airtight container. If frosted, store in the refrigerator for up to 5 days and bring to room temperature for 30 minutes before serving so the frosting softens.

To freeze, wrap each unfrosted layer individually in cling film, then in a layer of aluminium foil. Freeze for up to 3 months. Thaw overnight in the refrigerator, then bring to room temperature before frosting or serving. The molasses and honey content means this cake freezes exceptionally well without drying out.

To reheat individual slices, microwave for 15-20 seconds or warm in a 300°F (150°C) oven for 5-8 minutes. Warm gingerbread cake with a scoop of vanilla ice cream is an absolute treat.

  • Cream cheese frosting — the tangy cream cheese is the classic pairing with rich, spiced gingerbread. Spread between the layers and over the top.
  • No-churn vanilla ice cream — a scoop alongside a warm slice is pure comfort food.
