These are pan-fried dumplings with a homemade dough wrapper, a pork and chive filling seasoned with ginger, garlic, soy sauce, and sesame oil, and crispy bottoms from a steam-fry method. The honest reason to make them at home: the wrapper texture is noticeably better than most store-bought options, and once you have the folding down, you can knock out a large batch in a single session.

The technique that matters

The steam-fry method is what separates these from boiled dumplings, and it only works if you get the sequence right. You need a hot pan and enough oil to actually crisp the bottoms before the water goes in — if the pan isn’t hot enough, the dumplings just steam from the start and the bottoms turn soft. Once you add the water and cover the pan, don’t lift the lid early. Let the steam do its work for the full 5–6 minutes. Then, when the water is gone, leave the lid off and give the bottoms another minute to re-crisp. That final uncovered minute is where the crunch actually sets. The other thing worth getting right is the filling consistency: stir it vigorously until it feels sticky and holds together. A loose filling leads to gaps inside the wrapper, and those gaps fill with steam and can burst the seam during cooking.

If something goes sideways

  • Wrappers tearing when you fold: The dough is probably too dry or hasn’t rested long enough. If it tears, cover it with a damp cloth and let it rest another 10 minutes before rolling again. Don’t skip the rest — it makes the gluten relax and the dough much easier to work with.
  • Dumplings sticking to the pan and ripping when you lift them: This usually means the oil wasn’t hot enough before you added them, or you moved them too soon. Let them sit undisturbed for the full 2–3 minutes before checking. A non-stick pan helps, but the real fix is patience.
  • Filling is watery after mixing: Chives release moisture once chopped and salted. If your filling looks wet, let it sit uncovered for 5 minutes, then drain off any pooled liquid before filling the wrappers. Wet filling makes the wrappers soggy and hard to seal.
  • Seams opening during cooking: Either too much filling or air trapped inside. Use no more than 1 teaspoon of filling per wrapper, press out any air pockets before pleating, and make sure the edges are damp enough to stick — dry edges won’t seal properly.
  • Bottoms burning before the tops are cooked through: Your heat is too high. Medium-high works for the initial sear, but if the bottoms are browning in under 2 minutes, drop to medium before adding the water.

Leftovers and make-ahead

Uncooked dumplings freeze well — skip the fridge and go straight to freezer if you’re making a big batch. Arrange them in a single layer on a parchment-lined baking sheet, freeze until solid (about 2 hours), then transfer to a zip-lock bag. They keep for up to 3 months. Cook straight from frozen using the same steam-fry method; just add an extra 2–3 minutes of steaming time and make sure the water fully evaporates before uncovering. Already cooked dumplings can be refrigerated for up to 3 days — reheat them in a dry non-stick pan over medium heat with a splash of water and a lid on for 3–4 minutes. Skip the microwave; it makes the wrappers gummy and the bottoms lose any crispness entirely.

  • 1 pound ground pork preferably 80/20 for moisture and flavor
  • 1 ½ cups chives finely chopped, fresh Chinese garlic chives preferred
  • 1 tablespoon soy sauce light soy sauce recommended
  • 1 teaspoon sesame oil toasted for richer flavor
  • 1 teaspoon fresh ginger minced
  • 1 clove garlic minced
  • ¼ teaspoon white pepper optional, for subtle heat

For the Dough:

  • 2 cups all-purpose flour plus extra for dusting
  • ¾ cup warm water not boiling, around 120°F (49°C)

For Cooking:

  • 2 tablespoons vegetable oil for pan-frying
  • ¼ cup water for steaming in the pan

Instructions
 

  • Prepare the Dough: In a mixing bowl, combine the flour and slowly pour in the warm water while mixing with chopsticks or a spoon. Knead the dough by hand for 8–10 minutes until smooth and elastic. Cover with a damp cloth and let rest for 30 minutes.
  • Make the Filling: In another bowl, mix the ground pork, chopped chives, soy sauce, sesame oil, ginger, garlic, and white pepper until well combined. Stir vigorously until the mixture is sticky and cohesive. Set aside.
  • Roll Out the Wrappers: On a floured surface, divide the rested dough into four portions. Roll each into a rope and cut into 1-inch pieces. Flatten each piece into a disk and roll into a 3-inch circle using a rolling pin.
  • Shape the Dumplings: Place 1 teaspoon of filling in the center of each wrapper. Wet the edge with a little water, fold the dough over, and pleat the edges to seal. Ensure no air is trapped inside.
  • Steam and Fry: Heat 1 tablespoon of oil in a non-stick skillet over medium-high heat. Add dumplings and cook for 2–3 minutes until the bottoms are golden. Add 1/4 cup of water, cover with a lid, and steam for 5–6 minutes or until the water evaporates. Uncover and let the bottoms crisp up again for 2 minutes.
