These chicken tenders get a pecan-and-panko crust, a quick sear in a skillet, then finish in the oven — so the outside stays crispy without the mess of deep frying. The whole thing takes 35 minutes, and the result is juicy chicken with a coating that actually sticks. If you want something better than a frozen bag of tenders without a lot of fuss, this is it.

The short version of why this works

Two things make this recipe reliable. First, the two-step cook — searing in the skillet sets the crust and gives you that golden color, then the oven finishes the inside gently without burning the pecans. If you skip the sear and just bake, the crust turns pale and soft. Second, pressing the coating firmly onto each tender before it hits the pan matters more than it sounds. Pecans are chunkier than plain breadcrumbs, so they need that extra pressure to bond to the egg wash. A light dip won’t hold. Press each piece down into the mixture, flip it, and press again.

Smart swaps

  • Pecans: These are the one ingredient worth buying specifically — walnuts work in a pinch but taste more bitter. Chop them fine enough that no large chunks stick out, or they’ll fall off during searing.
  • Panko breadcrumbs: Regular breadcrumbs can substitute, but the crust will be denser and less crunchy. Gluten-free panko also works well here.
  • Olive oil: Any neutral high-heat oil (avocado, vegetable) works fine. Butter burns too fast at this temperature, so skip it for the sear.
  • Eggs: If you need an egg-free binder, plain Greek yogurt or Dijon mustard spread thinly on each tender will hold the crust.

Troubleshooting

  • Crust falls off in the pan: The oil wasn’t hot enough before you added the chicken. Let the skillet heat for a full 2 minutes over medium before adding the tenders, and don’t move them for the full 3 minutes per side.
  • Pecans burning before the chicken is seared: Your heat is too high. Medium heat is the right setting — if the nuts are darkening in under 2 minutes, pull the pan off the burner for 30 seconds and lower the flame.
  • Chicken still pink inside after baking: Tenders vary in thickness. If yours are on the thicker side, add 3-4 minutes to the oven time. Use a meat thermometer if you have one — 165°F (74°C) at the thickest point is what you’re after.
  • Coating is soggy on the bottom: The baking sheet was overcrowded, trapping steam. Leave at least an inch between each tender, and make sure the parchment is flat with no pooled oil underneath.
  • Egg wash is sliding off before coating: Pat the chicken dry with paper towels before dipping. Wet chicken repels the egg wash and the whole crust follows.

Keeping and reheating

Leftovers keep in the fridge for up to 3 days in an airtight container. To reheat, skip the microwave — it makes the crust chewy. Instead, put the tenders on a wire rack set over a baking sheet and warm them in a 375°F (190°C) oven for 8-10 minutes. They come back close to crispy. For freezing, let the cooked tenders cool completely, then freeze them in a single layer on a baking sheet before transferring to a freezer bag — they’ll keep for up to 2 months. Reheat straight from frozen at 400°F (200°C) for about 15 minutes, flipping halfway through. Skip the garnish — not worth the extra dish.

  • 1 cup pecans finely chopped, about 110g
  • ½ cup panko breadcrumbs about 30g

  • 1 teaspoon garlic powder
  • ½ teaspoon salt to taste
  • ½ teaspoon black pepper freshly ground
  • 2 large eggs beaten
  • 2 tablespoons olive oil for searing

Instructions
 

  • Preheat your oven to 350°F / 180°C (160°C fan-forced). Line a rimmed baking sheet with parchment paper.
  • In a shallow dish, combine the chopped pecans, panko breadcrumbs, smoked paprika, garlic powder, salt, and pepper.

  • In another shallow dish, beat the eggs lightly until smooth.

  • Dip each chicken tender into the beaten eggs, letting excess drip off, then lay it in the pecan mixture and press down firmly with your palm. Flip and press again on the other side — pecans are chunkier than breadcrumbs and need firm pressure to adhere. Repeat until all tenders are coated.

  • Heat olive oil in a large skillet over medium heat. Working in batches to avoid overcrowding, add the chicken tenders and cook for about 3 minutes per side or until the crust is golden brown and crispy.

Can I make these ahead of time?

Do I have to use a skillet first, or can I just bake them?
