The Applejack Rabbit is a four-ingredient shaken cocktail — apple spirit, orange juice, lemon juice, and maple syrup — that comes together in about five minutes with no special equipment beyond a shaker and a strainer. It’s genuinely good: the maple syrup rounds out the citrus without making it sweet-heavy, and the applejack gives it more character than a standard whiskey sour. If you want something interesting to pour for guests without spending the evening behind the bar, this is a solid choice.

Ingredient notes

  • Applejack: Laird’s is the most widely available brand and works well here. If your liquor store doesn’t carry it, a calvados (French apple brandy) is a closer substitute than regular brandy, though it will taste slightly drier.
  • Maple syrup: Dark amber (sometimes labeled “Grade A Dark” or “robust”) has a stronger maple flavor that holds up against the citrus. Light or golden syrup will work but tastes thinner in the finished drink.
  • Meyer lemons: Regular lemons are fine. Meyer lemons are less sharp, so if you use them, taste before adding and consider cutting the lemon juice very slightly if your orange is already tart.
  • Orange juice: Squeeze it fresh. Bottled OJ has added sweetness and a cooked flavor that throws off the balance in a drink this simple.

The short version of why this works

Two things matter here. First, the ratio: two parts spirit to one part orange juice to a half part each of lemon and maple syrup keeps the applejack in front without letting the citrus take over. Change that balance and the drink either tastes boozy and flat or like juice with a splash of something. Second, shaking hard for a full ten seconds does real work — it chills the drink fast, dilutes it just enough to soften the spirit’s edge, and gives the finished cocktail a slightly frothy, light texture that you won’t get from a quick stir.

Mistakes to avoid

  • Using warm or room-temperature juice: Cold juice straight from the fridge means your shaker chills faster and you get better dilution control. Warm juice makes the drink taste flat and slightly sharp.
  • Skipping the chilled glass: A warm coupe heats the drink within a minute. Pop the glass in the freezer for five minutes before you shake, or fill it with ice water while you prep and dump it right before straining.
  • Over-sweetening to compensate for cheap spirit: If the applejack tastes harsh on its own, adding more maple syrup won’t fix it — it just makes a cloying drink. Use the full 0.5 oz of syrup as written and choose a decent bottle.
  • Not straining firmly: Small ice chips in the finished drink dilute it unevenly as they melt. Press the strainer flat against the shaker opening and pour slowly.
  • Skipping the garnish — not worth the extra dish. An orange twist looks nice but adds nothing to the flavor once the drink is cold and strained.

Storage and reheating

This cocktail is best made and drunk immediately — the citrus starts to taste dull within about 20 minutes of shaking. If you’re making a batch for a group, you can combine the applejack, orange juice, lemon juice, and maple syrup in a pitcher and refrigerate it for up to 4 hours before serving; shake each portion individually over ice to order rather than shaking the whole batch at once. Do not freeze the pre-mixed liquid, as the juice separates and the texture suffers. There’s no reheating step relevant here.

  • 2 oz Applejack preferably Laird's Applejack
  • 1 oz freshly squeezed orange juice use freshly squeezed for optimal flavor
  • 0.5 oz freshly squeezed lemon juice Meyer lemons preferred for sweetness
  • 0.5 oz maple syrup Dark amber maple syrup for richness

Instructions
 

  • Fill a cocktail shaker with ice.
  • Add 2 oz of Applejack, 1 oz of freshly squeezed orange juice, 0.5 oz of freshly squeezed lemon juice, and 0.5 oz of maple syrup to the shaker.
  • Shake vigorously for about 10 seconds until the outside of the shaker is frosted and cool to the touch.
  • Strain the mixture into a chilled coupe glass.

Can I make this without a cocktail shaker?

Yes — a mason jar with a tight-fitting lid works fine. Shake it the same way for about ten seconds until the outside feels cold, then strain through a fine-mesh sieve into your glass.

Is there a non-alcoholic version?

Swap the applejack for unfiltered apple cider and reduce the orange juice to 0.5 oz so the drink doesn’t become too sweet. It won’t taste identical, but the citrus-and-maple combination still holds up well.

Can I use honey instead of maple syrup?

You can, but mix the honey with a small splash of warm water first so it dissolves fully before going into the shaker — cold honey clumps and doesn’t incorporate evenly. The flavor will be lighter and floral rather than earthy.
