The Delmonico Cocktail is a stirred drink built from gin, cognac, sweet vermouth, dry vermouth, and orange bitters — finished with a lemon twist. It’s in the same family as a Martini or Manhattan but a little softer, because the cognac rounds out the gin’s sharper edges. If you’re putting together drinks for a group, this one scales cleanly and can be batched ahead so you’re not stuck at the counter all night.

About the ingredients

  • Gin: London Dry is the right call here. Its clean, juniper-forward flavor holds up against the cognac without getting lost. Avoid anything too floral or heavily botanical — it muddies the balance.
  • Cognac: A VSOP is the sweet spot. VS works in a pinch but tastes a bit thin. XO is overkill for a mixed drink.
  • Sweet vermouth: Italian-style (like Carpano Antica or Martini Rosso) gives you the right richness. Keep your vermouth in the fridge after opening — it goes stale fast and a flat vermouth will flatten the whole drink.
  • Dry vermouth: French-style (like Noilly Prat) keeps things from tipping too sweet. Same rule applies: refrigerate it.
  • Orange bitters: Angostura Orange or Regans’ both work. Two dashes is the right amount — more and it starts to taste medicinal.

The technique that matters

Stirring — not shaking — is what makes this drink work. Shaking aerates the liquid and creates tiny air bubbles, which gives you a cloudier, slightly frothy result. That’s fine for a Daiquiri, but this cocktail is meant to be clear and silky. Stir steadily for a full 30 seconds with plenty of ice; you’re chilling and diluting at the same time, and both matter. Under-stirring leaves the drink too cold-sharp and boozy. The other thing worth doing is actually chilling your glass before you pour — a warm glass heats the drink up within a minute. Fill it with ice water while you stir, dump it right before straining, and the temperature holds much longer.

Common problems and fixes

  • Drink tastes harsh or boozy: You didn’t stir long enough. More dilution from stirring is a feature, not a flaw — give it the full 30 seconds.
  • Drink tastes flat or slightly off: Your vermouth has gone stale. Vermouth is wine; an open bottle left at room temperature for more than a week or two loses its brightness. Buy smaller bottles if you don’t use it often.
  • Drink is too sweet: Swap ratios slightly — pull the sweet vermouth back to 0.25 oz and add that 0.25 oz to the dry vermouth instead. Small adjustments make a real difference here.
  • Batching for a crowd goes wrong: When scaling up, pre-mix the spirits and vermouths in a pitcher and refrigerate. Stir each individual serving over ice to order, or stir the whole batch over a large quantity of ice for about 90 seconds, then strain into a chilled carafe. Don’t add ice to the carafe itself or it will over-dilute as it sits.
  • Lemon twist is hard to work with: Skip the garnish — not worth the extra fuss if you’re making a round of drinks. The bitters already carry the citrus note.

Keeping and reheating

This is a spirit-forward cocktail with no juice or dairy, so a pre-batched, unstirred mixture keeps well. Combine the gin, cognac, sweet vermouth, dry vermouth, and bitters in a sealed jar or bottle and refrigerate for up to 5 days. Don’t stir it over ice until you’re ready to serve — once diluted, the drink should be consumed within a few hours and kept cold. Freezing the pre-batched mix is also an option; the alcohol content keeps it from freezing solid, and it’ll keep for up to a month. Pull it from the freezer about 10 minutes before serving, then stir over ice as usual.

  • 1.5 ounces gin Preferably a London Dry Gin for a crisp finish
  • 0.5 ounces cognac Use a good quality VSOP Cognac
  • 0.5 ounces sweet vermouth Italian vermouth recommended
  • 0.5 ounces dry vermouth French vermouth for balance
  • 2 dashes orange bitters Enhances the citrus notes
  • 1 twist lemon peel For garnish and aromatic enhancement

Instructions
 

  • Chill a cocktail glass with ice and water. In the meantime, gather your ingredients.
  • In a mixing glass, add the gin, cognac, sweet vermouth, dry vermouth, and orange bitters.
  • Fill the mixing glass with ice and stir gently for about 30 seconds or until well chilled. You should hear the ice softly clinking as you stir, ensuring a silky texture.
  • Empty the chilled cocktail glass of ice and water. Strain the cocktail mixture into the glass.
  • Garnish with a twist of lemon peel, expressing the oils over the drink’s surface before dropping it in to enhance the citrus aroma.

Common questions

Can I make a big batch of Delmonico Cocktails for a party?

Yes, and it’s one of the easier cocktails to batch. Multiply all the liquid ingredients by however many servings you need, combine them in a pitcher or bottle, and refrigerate until you’re ready. Stir each drink over ice individually, or stir the full batch over ice in a large vessel for about 90 seconds and strain into a chilled carafe — just don’t leave ice sitting in the carafe.

What’s the difference between using VS and VSOP cognac?

VSOP is aged longer and has more depth, which you can actually taste in a simple drink like this. VS is younger and a little rougher around the edges — it works, but the drink won’t be quite as smooth.

Do I have to use both sweet and dry vermouth, or can I just use one?

You can use just one, but the drink changes character noticeably. All sweet vermouth makes it richer and closer to a Manhattan; all dry vermouth pushes it toward a Martini. The split is what gives this cocktail its particular balance.

I don’t have orange bitters — can I leave them out or substitute something?

You can leave them out and the drink is still good, just a little flatter. A small strip of orange peel stirred in with the ice is a reasonable substitute if you have one on hand.

How do I know when I’ve stirred long enough?

The outside of the mixing glass should feel very cold and slightly frosted — that’s a reliable sign the drink is properly chilled. Thirty seconds of steady stirring with a full glass of ice usually gets you there.

My vermouth has been open for a while — is it still okay to use?

Smell it first. If it smells flat, vinegary, or like oxidized wine, it’s past its best and will drag the whole drink down. Vermouth stored at room temperature goes off within a couple of weeks; refrigerated, it holds for about a month.
