Ensalada Criolla is a raw-vegetable salad from Argentina and Uruguay — tomatoes, red onion, cucumber, and red bell pepper dressed with olive oil, red wine vinegar, and garlic. It comes together in 15 minutes with one bowl and a whisk. If you need a side dish that doesn’t heat up the kitchen and goes with almost anything off the grill, this is it.

The short version of why this works

Two things make this salad actually good rather than just fine. First, thin, even slicing matters — red onion especially. Thick chunks stay sharp and bitter; thin slices soften quickly once the vinegar hits them. Second, the dressing needs to be whisked until it emulsifies, not just drizzled on. An emulsified dressing coats every piece of vegetable instead of pooling at the bottom of the bowl. Those two steps take an extra two minutes and make a real difference in the finished dish.

Troubleshooting

  • Salad is watery by the time you serve it: Tomatoes release liquid fast once salted. Don’t dress the salad until right before serving, or briefly drain the tomatoes in a colander after dicing.
  • Red onion is too harsh: Soak the sliced onion in cold water for 10 minutes, then drain and pat dry before adding it. This pulls out the sharpest sulfur compounds without killing the flavor entirely.
  • Dressing tastes flat: Vinegar strength varies by brand. Taste the dressing before it goes on the salad and add a small pinch of salt first — salt amplifies acidity and often fixes a flat dressing without needing more vinegar.
  • Cucumber makes everything soggy: If your cucumber has a thick, waxy skin, peel it. Also, if you’re prepping ahead, keep the cucumber separate and stir it in just before serving — it releases more water than the other vegetables.
  • Garlic flavor is too aggressive: Raw minced garlic sharpens as it sits. If you’re making this more than 30 minutes ahead, use slightly less than the recipe calls for, or let the minced garlic sit in the vinegar for a few minutes before whisking in the oil — it mellows noticeably.

Substitutions that actually work

  • Red wine vinegar: White wine vinegar works almost identically. Regular white vinegar is sharper — use about two-thirds the amount. Skip balsamic; it changes the flavor profile completely.
  • Heirloom tomatoes: Any ripe, in-season tomato works. Roma tomatoes are a practical choice — they’re less watery than beefsteak and hold up better once dressed. Skip the recipe in January with hard, pale tomatoes; it won’t be worth it.
  • Fresh parsley: Skip the garnish — not worth the extra dish. The salad is complete without it, and dried parsley adds nothing here.
  • Red bell pepper: Orange or yellow bell pepper swaps in cleanly. Green pepper works but adds a slightly bitter edge that not everyone likes in a raw salad.

Make-ahead notes

You can prep the vegetables and dressing up to 4 hours ahead, but keep them separate in the fridge until you’re ready to serve. Once dressed, the salad is best within about 30 minutes — after that, the tomatoes break down and the cucumbers soften. Leftovers keep in an airtight container for up to one day in the fridge; the vegetables will be softer and the liquid will separate, but the flavor is still good. This salad doesn’t freeze.
