This is a two-serving mojito built around fresh pomegranate seeds, mint, lime, white rum, and club soda — ready in 10 minutes with no special equipment. The honest reason to make it: the pomegranate adds real tartness that a standard mojito lacks, and the color alone makes a tray of these look like you put in far more effort than you did.

What makes this version work

Two things matter here. First, how you muddle. You want to press the pomegranate seeds firmly enough to burst them and release the juice, but stop before the mint turns to pulp — over-muddled mint goes bitter fast. A few firm presses, not a grind. Second, the order of assembly: muddle first, add rum and stir, then add ice, then top with club soda. Adding soda before the ice causes it to go flat before the drink is even built. Get the order right and the fizz lasts through the whole glass.

Shopping notes

  • Pomegranate seeds: Pre-packaged arils sold in small tubs work perfectly and save a lot of time, especially if you’re making a batch. Fresh whole pomegranates are fine but take longer to break down.
  • White rum: Use a light, dry white rum — not gold or spiced. Gold rum changes the flavor profile noticeably. Bacardi Superior is the standard reference point for this style of drink.
  • Club soda: Use it fresh from a newly opened bottle or can. A half-flat soda makes a dull drink. If you’re scaling up, open a new bottle per round rather than pouring from one that’s been sitting.
  • Pomegranate molasses (optional swap): Thicker and more concentrated than juice, so start with half a teaspoon in place of the sugar and taste before adding more — it can easily overpower the mint.

Leftovers and make-ahead

You can’t store a finished mojito — the ice dilutes it and the soda goes flat within minutes. What you can do ahead is make a muddled base: combine the pomegranate seeds, sugar, mint, and lime juice (skip the whole wedges), muddle well, then strain out the solids and refrigerate the liquid in a sealed jar for up to 24 hours. When you’re ready to serve, pour roughly 2 tablespoons of the base into each glass, add rum, ice, and fresh club soda. This approach works well when you’re making drinks for six or eight people — the base scales easily and the actual pour takes about 30 seconds per glass.

What can go wrong

  • Drink tastes flat and watery: The ice melted before you served it. Build the drink just before serving, not in advance. If you’re making multiple glasses, keep the base and rum mixture chilled and add ice and soda at the last moment.
  • Too sweet or not tart enough: Pomegranate seeds vary in sweetness depending on the variety and season. Taste the muddled base before adding rum — if it needs more tartness, squeeze in a little extra lime juice rather than adding more seeds.
  • Mint flavor is bitter or harsh: You over-muddled. Next time, stop as soon as the mint releases its smell. Skip the garnish — not worth the extra dish — and focus on getting the muddling right instead.
  • Drink looks cloudy or has gritty texture: Pomegranate seed membranes and mint fragments are getting through. If a cleaner drink matters to you, strain the muddled mixture through a fine mesh strainer before adding rum and ice.
  • Scaling up and losing carbonation: Don’t mix a large batch with soda in a pitcher — it goes flat immediately. Mix the base and rum in bulk, then top each individual glass with soda right before handing it over.

Can I make this without alcohol?

Yes — replace the rum with an equal amount of cold sparkling water or a splash of white grape juice. The drink still works because the pomegranate, mint, and lime carry most of the flavor.

Can I use pomegranate juice instead of fresh seeds?
