This Buffalo Chicken Dip comes together in 40 minutes with six ingredients, and the result is a hot, cheesy, spicy dip that holds its own against anything you’d order at a sports bar. It bakes in one dish, feeds six, and reheats well — which means it earns its place at the table well past game day. If you’ve got leftover cooked chicken sitting in the fridge, this is exactly where it should go.

Smart swaps

  • Cream cheese: Full-fat gives the creamiest result, but reduced-fat works fine here — the Buffalo sauce and cheddar carry enough flavor that you won’t notice much difference.
  • Ranch dressing: Blue cheese dressing is a straight swap if you prefer it; it sharpens the tang and pairs well with the heat.
  • Buffalo sauce: Frank’s RedHot is the most common choice. Avoid wing sauce labeled “Buffalo style” — it often has added butter and sweeteners that throw off the balance.
  • Cheddar: Sharp cheddar melts and tastes better than mild here. Pre-shredded bags work, but block cheese you shred yourself melts more evenly.

The short version of why this works

Two things matter most. First, mixing the cream cheese in while it’s at room temperature — not cold from the fridge — means it blends smoothly with the sauce and ranch instead of leaving lumps that never fully melt. Second, splitting the cheddar between the mix and the top layer gives you cheese flavor throughout the dip, not just a melted crust on the surface. Everything else is just assembly.

Troubleshooting

  • Dip looks greasy after baking: This usually means the cream cheese was too cold when mixed, causing it to separate in the oven. Let it sit out for 20–30 minutes before you start.
  • Too runny: Different brands of ranch dressing vary a lot in thickness. If yours is very thin, start with ⅓ cup and add more after mixing to check the consistency before baking.
  • Not hot in the center: Spread the mixture no more than 1½ inches deep in your baking dish. A thick layer insulates the middle and it won’t heat through evenly in 25 minutes.
  • Top cheese browning before the center is hot: Tent loosely with foil for the first 15 minutes, then uncover for the last 10 so the cheese bubbles without burning.
  • Dip dries out on the table: Keep it in the baking dish set over a folded kitchen towel, or transfer to a small slow cooker on the warm setting — it holds well for about 2 hours that way.

Leftovers and make-ahead

You can mix the unbaked dip up to 24 hours ahead, cover the dish tightly, and refrigerate it — just add 5 extra minutes to the bake time since it’s going in cold. Baked leftovers keep in the fridge for up to 4 days in an airtight container. Reheat individual portions in the microwave in 30-second bursts, stirring between each, or warm the whole dish covered with foil at 325°F (160°C) for about 15 minutes. Skip the garnish when reheating — not worth the extra dish. The dip also freezes well for up to 2 months; thaw overnight in the fridge before reheating. Leftovers work great stuffed into a wrap with lettuce, spooned over baked potatoes, or stirred through cooked pasta for a quick weeknight dinner.
