Classic Caprese Salad With Balsamic Glaze

This caprese salad is three ingredients arranged on a plate, finished with olive oil, salt, pepper, and a balsamic glaze. It takes 15 minutes and no cooking. The honest reason to make it: when tomatoes are good, nothing beats it — and when they’re not, the balsamic glaze does a lot of heavy lifting.

What makes this version work

Two things actually matter here. First, slice both the tomatoes and mozzarella to the same thickness — about ¼ inch — so every forkful gets an even ratio of each. Uneven cuts mean you end up with a bite that’s mostly cheese or mostly tomato, and the whole point is the balance. Second, salt the tomato slices and let them sit for just two or three minutes before assembling. That brief rest draws out a little juice, which mixes with the olive oil on the plate and becomes its own light dressing. Skip that step and the salad can taste flat, no matter how good your olive oil is.

Mistakes to avoid

  • Using cold mozzarella straight from the fridge. Cold cheese is rubbery and has almost no flavor. Pull it out 20 minutes before you plate up.
  • Overdoing the balsamic glaze. Three tablespoons is the right amount for four servings — drizzle it in a thin zigzag rather than pooling it. Too much and the sweetness takes over.
  • Salting too early. If you season the assembled salad and then leave it sitting for more than 10 minutes, the tomatoes release so much liquid the plate becomes watery. Salt right before serving.
  • Using dried basil as a substitute. It won’t work — the texture and flavor are completely different. If you don’t have fresh basil, fresh mint is a better stand-in than dried anything.

Smart swaps

  • No heirloom tomatoes: Any ripe, in-season tomato works — beefsteak, vine-ripened, or even a mix of halved cherry tomatoes if that’s what you have. Out-of-season tomatoes are the one thing that genuinely hurts this salad, so if it’s January, wait.
  • No balsamic glaze: Simmer 3 tablespoons of regular balsamic vinegar with 1 teaspoon of honey in a small pan for about 5 minutes until slightly thickened — skip the garnish of extra fresh herbs on top of the glaze, not worth the extra dish.
  • No fresh mozzarella: Burrata is a direct upgrade if you can find it. Low-moisture mozzarella (the block kind) is a last resort — slice it thin and let it come fully to room temperature.
  • Olive oil quality: A decent everyday extra virgin olive oil is fine here. You don’t need the expensive finishing oil.

Leftovers and make-ahead

Caprese does not keep well once assembled — the tomatoes weep and the basil turns black within a couple of hours. If you want to get ahead, slice the tomatoes and mozzarella up to two hours in advance and store them separately in the fridge, covered. Bring both to room temperature before plating. Assembled leftovers can be refrigerated for up to one day; drain off the liquid and use the soggy result chopped up in a pasta or on toast rather than trying to serve it as a salad again. Do not freeze any component of this dish.

Ingredients
 
 

  • 3 large heirloom tomatoes approximately 1 lb / 450g total, sliced into ¼-inch (6mm) thick rounds
  • 7 oz fresh mozzarella 200g, sliced into ¼-inch (6mm) thick rounds
  • 20 leaves fresh basil
  • 2 tablespoons extra virgin olive oil high quality
  • 1 teaspoon coarse sea salt
  • ½ teaspoon freshly cracked black pepper or to taste
  • 3 tablespoons balsamic glaze store-bought or homemade

Instructions
 

  • Salt the tomatoes: Arrange the tomato slices on a cutting board or plate and sprinkle evenly with the coarse sea salt. Let them sit for 2-3 minutes — this draws out a little juice that will mix with the olive oil to create a light natural dressing.

  • Arrange the salted tomato slices on a large flat serving platter, slightly overlapping in a single layer.

  • Lay slices of fresh mozzarella atop the tomatoes, alternating between cheese and tomatoes to create a beautiful pattern.

  • Tuck whole basil leaves between the layers of tomato and mozzarella for a burst of freshness in each bite.

  • Gently drizzle the extra virgin olive oil over the entire salad, allowing its fruity aroma to enhance the tomatoes.

  • Add a generous grind of freshly cracked black pepper over the entire salad.

  • Finish the dish with a delicate drizzle of balsamic glaze over the salad, providing a sweet contrast to the savory elements.

Storage: Assembled caprese salad can be refrigerated for up to 1 day. Drain off accumulated liquid before eating. Chop soggy leftovers into pasta or pile onto toast — do not re-serve as a salad.

Freezing: Do not freeze any component of this dish — the tomatoes and mozzarella both lose their texture completely.
Substitutions: Burrata works beautifully in place of mozzarella. Add sliced avocado or prosciutto to make it more substantial. A fig balsamic glaze adds a sweeter note.

Can I use regular balsamic vinegar instead of balsamic glaze?

Yes, but reduce it first — plain balsamic vinegar is too thin and sharp to drizzle straight over the salad. Simmer 3 tablespoons of balsamic vinegar with a teaspoon of honey for about 5 minutes until it coats the back of a spoon, then let it cool before using.

What if my tomatoes aren’t very flavorful?

A pinch of sugar on the cut tomato slices helps, and letting them sit with a little salt for a few minutes concentrates what flavor is there. The balsamic glaze also compensates well — its sweetness and acidity fill in the gaps that a bland tomato leaves.

How much mozzarella do I need if I’m buying it in ounces?

200 grams is about 7 ounces, which is roughly one standard ball of fresh mozzarella. Most supermarket fresh mozzarella comes in 8-ounce containers, so one package is exactly right.

Can I make this salad a more filling lunch?

Yes — add a few slices of prosciutto layered between the tomato and cheese, or fan some sliced avocado alongside. Either addition turns it into something substantial enough to eat on its own without adding any cooking time.
