This homemade hummus comes out genuinely smooth and creamy — not the grainy, dense kind you sometimes get from a tub. It takes about an hour start to finish, most of which is hands-off cooking time, and the ingredients list is short enough that you probably have most of it already. If you’ve been buying hummus every week, this is worth making at least once to see how different the real thing tastes.

Why this recipe works

Two things make this recipe work better than a basic blender-and-done approach. First, cooking dried chickpeas with baking soda genuinely softens them in a way that canned chickpeas can’t match — the skins loosen and the insides get tender all the way through, which means the food processor doesn’t have to fight them. Second, blending the tahini and lemon juice together before anything else goes in creates a pale, whipped base. It sounds like an unnecessary step, but it’s the reason the finished hummus is light and smooth rather than heavy and paste-like. Cold water added at the end loosens the texture without diluting the flavor. These two steps together are what separate this from a five-minute version.

Mistakes to avoid

  • Under-cooking the chickpeas. They need to be genuinely soft — almost falling apart — before you drain them. If there’s any resistance when you press one between your fingers, keep simmering. Firm chickpeas will leave the hummus gritty no matter how long you blend.
  • Using tahini straight from the fridge. Cold tahini seizes up and doesn’t emulsify well with the lemon juice. Let it sit at room temperature for 10–15 minutes first, and stir it thoroughly in the jar before measuring — the oil separates and the solids sink.
  • Adding all the water at once. Pour the cold water in gradually while the processor is running. A quarter cup is the starting point; you may need a splash more or less depending on how thick your tahini is. Adding too much too fast makes the hummus runny and hard to fix.
  • Raw garlic that’s too sharp. Two cloves is the right amount for most adults, but raw garlic can be intense — especially for kids. If you’re serving this to younger eaters or anyone sensitive to strong flavors, start with one small clove. You can always add more next time. Skip the garnish — not worth the extra dish.
  • Blending for too short a time. Give the food processor a full 3–4 minutes of run time after all the ingredients are in. It feels like a long time, but that’s what gets you a smooth result rather than a slightly chunky one.

Inspired by my travels through Lebanon and Israel, this recipe balances authenticity with chef-level techniques to ensure luscious, velvety results every time.

Ingredients
 
 

  • 1 cup dried chickpeas soaked overnight for optimal texture
  • 1 teaspoon baking soda to help soften chickpeas during cooking
  • 1⁄2 cup tahini use high-quality tahini like Soom or Seed + Mill
  • 1⁄4 cup fresh lemon juice juice from about 2 lemons
  • 2 cloves garlic fresh, peeled
  • 1⁄2 teaspoon kosher salt add more to taste
  • 1⁄2 teaspoon ground cumin optional, adds warmth
  • 1⁄4 cup cold water add more for smoother texture
  • 2 tablespoons extra virgin olive oil plus more for drizzling
  • 1 tablespoon chopped parsley for garnish
  • 1 teaspoon paprika or sumac for garnish

Instructions
 

  • Prepare and Cook Chickpeas: Drain the soaked chickpeas and add them to a medium saucepan with 1 teaspoon of baking soda. Cover with water by at least 2 inches and bring to a boil. Reduce heat and simmer for 40–45 minutes, or until chickpeas are very tender and skins are falling off. Skim off any foam. Drain and rinse well under cold water.
  • Blend Tahini and Lemon Juice: In a high-speed food processor, add the tahini and freshly squeezed lemon juice. Blend for 1–2 minutes until the mixture is creamy and slightly whipped—this emulsification step is key to a fluffy hummus base.
  • Add Garlic, Salt, and Cumin: Add the garlic cloves, salt, and cumin (if using) to the tahini-lemon base. Blend again for 30 seconds until combined and smooth.
  • Add Chickpeas: Add cooked chickpeas in batches to the processor, blending between additions. Scrape down the sides with a spatula as needed.
  • Adjust Texture: Slowly stream in cold water a tablespoon at a time until you reach a creamy, smooth consistency. Taste and adjust lemon, salt, or garlic as needed.
  • Final Touch: While the hummus is blending, add the olive oil for a silky mouthfeel. Blend one final time for 30 seconds.
  • Plating: Spread the hummus onto a wide shallow bowl or plate. Use the back of a spoon to create swirls, then drizzle generously with olive oil and sprinkle with chopped parsley and paprika or sumac.

Notes

  • For ultra-smooth hummus, peel chickpeas after cooking by gently rubbing them in a clean dish towel. It's tedious but worth it!
  • For a deeper flavor, roast a garlic clove and add for a subtle sweetness.
  • If you're short on time, canned chickpeas can be substituted (use two 15 oz cans, drained and rinsed), but boil them with baking soda for 15 minutes to mimic softness.
  • Store leftovers in an airtight container for up to 5 days, topped with a thin layer of olive oil.

Frequently asked questions

Can I use canned chickpeas instead of dried?

Yes, canned chickpeas work and will save you the soaking and cooking time. The texture won’t be quite as smooth or light, but it’s still a solid result — drain and rinse them well, then proceed from the blending step.

How long does homemade hummus keep in the fridge?

It keeps well for up to 5 days in an airtight container. Press a piece of plastic wrap directly onto the surface before sealing to slow down any drying or discoloration on top.

My hummus turned out thick and stiff — what went wrong?

It almost always needs more cold water. Add it a tablespoon at a time with the processor running until the texture loosens up. This can happen even after it’s been refrigerated, so stir in a little water when you take it out the next day too.
