Çoban Salatası is a Turkish chopped salad made from tomatoes, cucumbers, bell pepper, red onion, parsley, and a lemon-olive oil dressing — ready in 15 minutes with no cooking required. It holds up well in the fridge, which makes it genuinely useful on busy weeks when you want something fresh alongside whatever else you’re eating. The recipe serves four, but it scales easily and the components prep fast in larger batches.

Before you start

The one technique that actually changes this salad is how uniformly you cut everything. Aim for pieces roughly the same size — about half an inch — so each forkful gets a bit of everything rather than one giant chunk of cucumber dominating the bite. The second thing worth doing is salting the diced tomatoes lightly and letting them sit in a colander for five minutes before mixing. Tomatoes release a lot of water, and skipping this step means the dressing gets diluted and the salad turns watery within an hour. If you’re making a larger batch to eat over a few days, keep the dressing separate and toss each portion just before serving — it takes thirty seconds and keeps the vegetables crisp.

Ingredient notes

  • Persian vs. English cucumber: Persian cucumbers have thinner skin and fewer seeds, so they stay crunchier longer — worth seeking out if you plan to store leftovers. English cucumber works fine; just scoop out the seed core if it looks watery.
  • Green bell pepper: A traditional Turkish green pepper (sivri biber) is thinner-walled and slightly more bitter than a standard bell pepper. If you find them at a Middle Eastern or Mediterranean grocery, use them. Otherwise a regular green bell pepper is the right substitute — not red or yellow, which are too sweet here.
  • Fresh lemon juice: Bottled lemon juice tastes flat in a dressing this simple. One medium lemon gives you the two tablespoons you need.
  • Mint: Listed as optional, but if you have it, use it — it adds a cooling note that works especially well when the salad is served alongside grilled meat.

Keeping and reheating

This salad doesn’t freeze — the vegetables turn to mush. In the fridge, undressed salad keeps well for up to three days in an airtight container; dressed salad is best eaten within 24 hours before it gets soggy. If you’re batch-cooking, prep a double or triple batch of the chopped vegetables and store them dry, then mix the dressing fresh each time — it takes under a minute to whisk together. Leftover dressed salad that has gone a bit soft is still good chopped finer and spooned into a wrap with hummus and grilled chicken, or stirred into a grain bowl where the extra liquid soaks into the base rather than pooling at the bottom.

Mistakes to avoid

  • Skipping the rest time — but resting it too long dressed: The recipe calls for a five-minute rest after dressing, which helps flavors come together. Beyond about 20 minutes, though, the tomatoes keep releasing liquid and the cucumbers soften. Dress it close to when you’re eating.
  • Using underripe tomatoes: This salad has nowhere to hide a flavorless tomato. If yours aren’t ripe, add an extra squeeze of lemon and a small pinch of sugar to compensate — it won’t fix the texture, but it helps the flavor.
  • Not drying the vegetables after washing: Wet produce dilutes the dressing immediately. Pat everything dry or spin it before you start chopping.
  • Slicing the onion too thick: Red onion cut thickly is sharp and overpowering. Thin slices — or a quick ten-minute soak in cold water to mellow the bite — make a real difference, especially if you’re serving this to kids or people who find raw onion harsh. Skip the soak if you’re short on time; just slice as thin as you can.
  • Adding feta directly to the full batch: If you’re storing leftovers, keep feta on the side and add it per serving. Feta breaks down and makes the stored salad salty and wet — not worth it.

  • 4 medium tomatoes diced; preferably ripe and juicy
  • 2 medium Persian cucumbers diced; or use 1 English cucumber

  • 1 medium green bell pepper diced; or use a more traditional Turkish green pepper
  • ¼ cup fresh parsley finely chopped
  • ¼ cup fresh mint leaves optional; finely chopped

For the Dressing:

  • 3 tablespoons extra virgin olive oil use high-quality olive oil
  • 2 tablespoons fresh lemon juice about 1 medium lemon, freshly squeezed
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon freshly ground black pepper for best flavor

Instructions
 

  • Wash and dry all fresh produce before chopping.
  • Dice the tomatoes and cucumbers into small, uniform pieces.
  • Thinly slice the red onion and dice the green bell pepper.
  • Finely chop the parsley and, if using, the mint leaves.
  • In a large mixing bowl, combine the chopped tomatoes, cucumbers, onion, and bell pepper.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  • Pour the dressing over the salad and gently toss to combine.
  • Let the salad rest for 5 minutes to allow flavors to develop before serving.
