Ensaladang Talong is a Filipino grilled eggplant salad dressed with vinegar, fish sauce, tomatoes, and red onion. The whole thing comes together in 25 minutes, and it actually tastes better after it sits — which makes it one of the most useful sides you can have ready before guests arrive or before a busy weeknight dinner hits the table.

The technique that matters

Charring the eggplant properly is the only technique here that really counts. You want the skin fully blackened — not just softened — before you pull it off the flame. That deep char is what drives smoky flavor into the flesh. If you stop too early, the eggplant tastes flat and watery. Use medium heat and keep the eggplant directly over the flame, turning it every couple of minutes. When it collapses slightly and the skin blisters and peels away easily, it’s done. Let it cool completely before peeling — trying to rush this step tears the flesh and makes a mess. Once peeled, press the flesh gently with a paper towel to remove excess liquid before you dress it; this keeps the salad from turning soupy.

Mistakes to avoid

  • Dressing it while the eggplant is still warm. Warm eggplant soaks up vinegar fast and can turn sharp and overpowering. Cool it fully first, then dress.
  • Slicing the onion too thick. Thick onion pieces stay raw and harsh. Slice thin so they soften slightly in the vinegar within a few minutes of mixing.
  • Using regular white distilled vinegar as a swap. It’s much sharper than cane vinegar or apple cider vinegar and throws off the balance. Stick to the milder options listed in the recipe.
  • Skipping the resting time when you’re short on it. Even 15 minutes of rest after mixing makes a noticeable difference — the onion mellows and the dressing pulls into the eggplant. If you can give it 30, even better.
  • Adding the cilantro too early. Skip the garnish — not worth the extra dish if you’re making this ahead, since cilantro wilts and turns slimy. Stir it in right before serving instead.

Smart swaps

  • Cane vinegar is the traditional choice and worth finding at an Asian grocery store. Apple cider vinegar is the closest substitute in terms of mildness and slight sweetness. Rice vinegar also works.
  • Fish sauce gives the dressing its savory depth. Soy sauce or coconut aminos are reasonable swaps for a vegetarian version, though the flavor will be slightly different — less funky, more straightforward salty.
  • Calamansi juice can replace the vinegar entirely if you can find the fruit or bottled juice. It gives a softer, citrusy tang that works especially well in summer.
  • Salted duck egg (itlog na maalat), sliced and added at serving, is a common regional addition that makes the salad more substantial — worth trying if you can find it at an Asian market.

Storage and reheating

Store the salad in an airtight container in the fridge for up to 3 days. The flavor actually improves on day two as everything marinates together. Give it a quick stir before serving and taste for seasoning — you may want a small splash more vinegar after it sits. This salad is meant to be served at room temperature or cold, so no reheating needed. Freezing is not recommended; the eggplant turns mushy and the tomatoes break down completely. If you’re prepping for a gathering, you can grill and peel the eggplant up to a day ahead, store it separately, and combine everything a few hours before serving.

  • In a mixing bowl, combine the tomatoes, red onion, charred eggplant, cane vinegar, fish sauce, olive oil, and red chili if using.
  • Gently toss the ingredients to ensure even coating and mixture.
  • Garnish with freshly chopped cilantro before serving.

My salad turned out watery. What went wrong?

The most likely cause is excess moisture in the eggplant after peeling. After you peel and chop the eggplant, press it gently with a paper towel to absorb liquid before mixing. Tomatoes also release water over time, so if the salad has been sitting a while, just drain off any pooled liquid before serving.
