This is a quinoa-based tabbouleh with cherry tomatoes, cucumber, fresh parsley and mint, and a handful of pomegranate seeds tossed through a simple lemon-olive oil dressing. The whole thing comes together in about 35 minutes, and it actually tastes better after a few hours in the fridge — which makes it genuinely useful on a busy day or when you’re feeding a crowd.

Why this recipe works

Two things matter here. First, the quinoa has to be fully cooled before it meets the herbs and dressing — warm quinoa wilts the parsley fast and turns the whole salad muddy. Give it real time on the counter, or spread it on a baking sheet to speed things up. Second, the dressing uses both lemon juice and lemon zest. The juice gives acidity, but the zest carries the actual lemon flavor without adding more liquid, which keeps the salad from going soggy as it sits. Those two details are the difference between a salad that holds up for a day and one that doesn’t.

About the ingredients

  • Pomegranate seeds: Pre-packaged arils (sold in small containers near the produce) save real time and work fine. If you’re seeding a whole pomegranate, do it in a bowl of water — it keeps the juice from spraying everywhere.
  • Fresh parsley and mint: Flat-leaf parsley only — curly parsley is too tough and grassy here. Dry both herbs well after washing; excess water dilutes the dressing.
  • Cucumber: English cucumber works best since the skin is thin and the seeds are small. If you’re using a regular cucumber, scoop out the seeds before dicing so the salad doesn’t get watery.
  • Quinoa: Any color works — white, red, or tri-color — though white quinoa has the mildest flavor and blends in most easily. Rinsing is not optional; it removes the bitter coating.

Keeping and reheating

This salad keeps well in an airtight container in the fridge for up to 3 days. The flavors actually improve after the first few hours, so making it the night before is a smart move. Give it a stir before serving and taste for seasoning — it often needs a small squeeze of fresh lemon juice after sitting. Skip the freezer entirely; the herbs and cucumber don’t survive it. This one is strictly a fridge dish, and it’s meant to be served cold or at room temperature, so no reheating needed.

If something goes sideways

  • Salad is watery at the bottom: The cucumber or tomatoes released liquid. Next time, lightly salt the diced cucumber, let it sit for 10 minutes, then pat it dry before adding it to the bowl.
  • Quinoa clumped together after cooling: It dried out unevenly. Break it up with a fork before adding it to the salad — a few seconds of work fixes it completely.
  • Herbs turned dark and limp: They were added while the quinoa was still warm, or the salad sat undressed for too long before refrigerating. Dress it, cover it, and get it in the fridge within 30 minutes of assembling. Skip the garnish of extra fresh herbs on top if you’re making this ahead — not worth the extra dish, and they’ll wilt anyway.
  • Dressing tastes flat: Lemon juice loses its punch quickly. If you squeezed the lemon more than an hour ago, add a fresh squeeze right before serving. A small pinch of extra salt also helps the flavors come forward.
  • Salad tastes bland overall: Quinoa absorbs seasoning as it sits. Taste again after 30 minutes in the fridge and adjust salt and lemon before serving rather than right after mixing.

For the Tabbouleh:

  • 1 cup quinoa rinsed thoroughly
  • 2 cups water
  • 1 cup fresh parsley finely chopped
  • ½ cup fresh mint finely chopped
  • 1 cup cherry tomatoes diced
  • ½ cup cucumber diced
  • ½ cup pomegranate seeds
  • 2 tablespoons green onions thinly sliced

For the Dressing:

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon freshly ground black pepper

Instructions
 

  • In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and let simmer for 12-15 minutes until the quinoa is tender and the water is absorbed.
  • Remove the quinoa from heat, fluff it with a fork, and let it cool completely.
  • Meanwhile, in a large mixing bowl, combine the chopped parsley, mint, diced cherry tomatoes, cucumber, pomegranate seeds, and green onions.
  • In a small bowl, whisk together the olive oil, fresh lemon juice, lemon zest, salt, and black pepper.
  • Once the quinoa has cooled, add it to the bowl with the chopped ingredients. Pour the dressing over the mixture and toss gently to coat everything evenly.
  • Taste and adjust seasoning as needed. Serve chilled or at room temperature.

Can I make this the day before?

Yes — this is one of the better salads to make a day ahead. The quinoa absorbs the dressing overnight and the flavors come together more fully. Just hold back a small squeeze of fresh lemon juice to add right before serving, since the acidity fades a little in the fridge.

Can I use dried parsley or mint instead of fresh?
