This salad is three citrus fruits, some olives, shaved fennel, and a two-ingredient dressing — ready in 20 minutes with no cooking at all. It works as a side next to grilled chicken or fish, or on its own with bread. The colors alone make it worth putting on the table.

Before you start

The one technique that actually matters here is removing the pith. Use a sharp knife, not a peeler — cut off the top and bottom of each fruit, stand it on the cutting board, and slice the skin off in downward strips, following the curve of the fruit. Get as much of the white layer off as you can. Pith is bitter, and with kids especially, that bitterness is the thing most likely to get a thumbs-down. The second thing worth knowing: whisk the dressing right before you pour it. Olive oil and lemon juice separate fast, and an uneven dressing means some bites are bland and some are sharp.

Troubleshooting

  • The salad is swimming in liquid by the time you serve it. Citrus releases juice quickly once cut. Assemble no more than 15 minutes before serving, or hold the fruit and dressing separately and combine at the table.
  • The fennel tastes too strong. Slice it as thin as you can — a mandoline helps, but a sharp knife works. Soaking the slices in cold water for 5 minutes before adding them to the salad softens the flavor noticeably.
  • You can’t find blood oranges. Just use three navel oranges. The salad loses some color contrast but the flavor is nearly identical. Skip the garnish on the fennel fronds too — not worth the extra dish if you’re already making swaps.
  • The dressing tastes flat. Lemon juice varies a lot in acidity. Taste the dressing before you pour it and add a small pinch of salt first — that usually fixes it before you reach for more lemon.
  • The olives are too salty for some at the table. Give Castelvetranos a quick rinse and pat them dry. They’re milder than most olives to begin with, but rinsing takes the edge off further without losing their flavor entirely.

Ingredient notes

  • Castelvetrano olives: These are the green olives sold in the deli section or jarred near the antipasto items. They’re buttery and mild — much less briny than Kalamata or canned black olives. If your store doesn’t carry them, use any mild green olive you can find, but avoid anything packed in heavy brine without rinsing first.
  • Meyer lemon: Sweeter and less sharp than a regular lemon. Use it if you see it, but a standard lemon works fine — just start with a little less juice and taste as you go.
  • Sicilian extra virgin olive oil: Any good-quality extra virgin olive oil does the job here. The label doesn’t need to say Sicilian for the salad to taste right.
  • Grapefruit: This is the most bitter element in the bowl. If you’re serving kids or anyone who finds grapefruit too sharp, swap it for a second navel orange or a cara cara orange, which is sweeter and less acidic.

Ingredients
 
 

  • 2 medium navel oranges peeled and sliced into rounds
  • 1 medium blood orange peeled and sliced into rounds
  • 1 medium grapefruit peeled and segmented
  • ½ cup Castelvetrano olives pitted and halved
  • ¼ cup thinly sliced fennel bulb fronds reserved
  • 2 tbsp extra virgin olive oil preferably Sicilian
  • 1 tbsp fresh lemon juice from Meyer lemon if available
  • ½ tsp sea salt or to taste
  • ¼ tsp freshly ground black pepper or to taste
  • 2 tbsp fresh mint leaves torn

Instructions
 

  • Carefully peel the navel oranges, blood orange, and grapefruit with a sharp knife, removing as much of the white pith as possible. Slice the oranges into thin rounds and segment the grapefruit. Remove any seeds.
  • Arrange the citrus slices and segments on a large plate or serving platter in a slightly overlapping pattern. This creates visual appeal and allows the juices to mingle.
  • Scatter the Castelvetrano olives and thinly sliced fennel bulb over the citrus. Use the reserved fennel fronds to add a touch of herbal freshness.
  • In a small bowl, whisk together the olive oil and lemon juice until emulsified. Season lightly with sea salt and freshly cracked black pepper.
  • Drizzle the dressing evenly over the salad. Finish with torn mint leaves and a final sprinkle of sea salt or cracked pepper, if desired.

  • Use a serrated knife for easier citrus slicing.
  • If you can't find Castelvetrano olives, try Manzanilla or another firm green olive, though Castelvetrano’s buttery flavor is ideal.

FAQ

Can I make this salad ahead of time?

You can prep the components ahead, but don’t assemble until close to serving. Cut the citrus and store it in a container in the fridge for up to a few hours, keep the dressing in a small jar, and combine everything within 15 minutes of eating — otherwise the fruit releases too much juice and the salad gets watery.

My kids don’t like olives. Can I leave them out?

Yes, just leave them out — the salad still works without them. If you want to keep some of that savory, salty contrast, a small crumble of mild feta scattered over the top is a good substitute that many kids take to more easily.

Do I have to use three different citrus fruits, or can I simplify?

You can absolutely use just one or two varieties. Two navel oranges and a grapefruit, or three navel oranges on their own, both work fine. Using a single type of citrus makes it easier to shop and still produces a good salad.

What do I serve this with to make it a meal?

It pairs well alongside grilled or baked chicken, white fish, or shrimp. A thick slice of crusty bread on the side turns it into a light lunch on its own, since the dressing pools at the bottom and is worth soaking up.
