This orange and fennel salad takes about 20 minutes, uses one bowl and one platter, and needs no cooking at all. It works as a starter, a side next to grilled fish or chicken, or a light lunch on its own. The combination of sweet citrus, crisp fennel, and briny olives is genuinely good — not just pretty.

The technique that matters

Two things make or break this salad. First, how thinly you slice the fennel. Raw fennel cut too thick is tough and aggressive — you want it shaved almost translucent so it turns tender within a minute or two of sitting under the dressing. A mandoline is the easiest way to get there; a very sharp knife and patience work too. Second, how you peel the oranges. Use a knife, not your hands — cut away the peel and all the white pith. Pith left on turns bitter fast, especially once the vinaigrette hits it. Slice the rounds a consistent quarter-inch so they hold their shape on the platter rather than falling apart when served.

Mistakes to avoid

  • Dressing too early. The vinaigrette pulls moisture out of the oranges quickly. Dress the salad right before you bring it to the table, not while you’re still setting out plates.
  • Using canned olives. Canned black olives are soft and bland here. Dry-cured or Niçoise olives have the firm texture and salt you actually need to balance the sweet citrus.
  • Skipping the emulsification step. If you just drizzle oil and vinegar separately, the dressing pools unevenly. Whisk them together until they come together — it only takes 30 seconds and makes a real difference in how the salad tastes in every bite.
  • Slicing the red onion too thick. Raw onion cut thicker than paper-thin dominates everything else. If yours is sharp or pungent, soak the slices in cold water for five minutes, then pat dry before adding them.
  • Crowding the platter. Piling everything into a heap means the bottom layers get soggy. Lay the orange rounds flat first, then spoon the fennel mixture on top — that layering keeps textures distinct until serving. Skip the garnish — not worth the extra dish — unless you already have the fennel fronds sitting right there from trimming the bulb.

Storage and reheating

This salad does not store well once dressed — the oranges release juice and the fennel softens significantly within an hour. If you want to get ahead, prep the components separately: shaved fennel and sliced onion can sit in the fridge in a covered bowl for up to 4 hours, and the vinaigrette keeps in a small jar for up to a week. Peeled and sliced oranges are best cut the same day. There is no reheating — this is a cold salad only — and freezing is not an option for any of the fresh ingredients here.

Ingredients
 
 

  • 2 medium navel oranges peeled and sliced into 1/4-inch rounds
  • 1 large fennel bulb fronds reserved, thinly shaved with a mandoline or very sharp knife
  • ⅓ cup pitted black olives preferably dry-cured or Niçoise, halved
  • ¼ small red onion very thinly sliced
  • 2 tablespoons extra virgin olive oil Spanish Arbequina if available
  • 1 tablespoon sherry vinegar or red wine vinegar
  • ½ teaspoon flaky sea salt such as Maldon, or to taste
  • ¼ teaspoon freshly ground black pepper or to taste
  • ½ teaspoon orange zest freshly grated

Instructions
 

  • Remove the peel and white pith from the oranges using a sharp knife. Slice into 1/4-inch rounds, removing seeds as needed, and set aside.
  • Trim the fennel bulb, reserve a few tender fennel fronds for garnish. Using a mandoline or very sharp knife, shave the fennel lengthwise into paper-thin slivers. Place in a mixing bowl.
  • Add the sliced red onion and halved olives to the fennel. Gently mix with your hands to combine, being careful not to bruise the fennel.
  • Arrange the orange slices in a single, overlapping layer on a serving platter. Spoon the fennel mixture over the top.
  • In a small bowl, whisk together the olive oil, sherry vinegar, orange zest, salt, and pepper until emulsified. Drizzle this vinaigrette evenly over the salad.
  • Garnish with reserved fennel fronds and a light crack of fresh black pepper before serving.

  • For a more filling variation, add shaved Manchego cheese or slivers of lightly toasted Marcona almonds.
  • Hearts of romaine can be used as a crisp base or bed for added volume.
  • Make sure the fennel is ultra fresh and firm—it sweetens as it ages, impacting the crispness.
  • For vegan guests, ensure olives are not packed with anchovy paste which some varieties include.
  • If oranges are very juicy, drain slices slightly to retain vinaigrette potency.

Common questions

Can I use a different type of orange?

Yes — blood oranges work especially well when they’re in season, and cara cara oranges are a good swap too. Avoid very thick-skinned varieties like navel oranges that are past their prime, since they tend to be dry and less flavorful.

I don’t have sherry vinegar. What can I use instead?

Red wine vinegar is the closest substitute and is listed in the recipe as an alternative. Apple cider vinegar also works in a pinch, though it’s slightly sweeter — use the same amount.

Do I really need a mandoline, or can I just use a knife?

A knife works fine if it’s sharp and you take your time. The goal is slices thin enough to be almost see-through — that’s what makes raw fennel pleasant rather than tough.
