This is a one-pot pork and butternut squash stew spiced with saffron, cinnamon, cumin, and a pinch of heat. It uses pork tenderloin, which cooks fast and stays lean, so the whole thing is on the table in under an hour. The honest reason to make it: the spice combination is genuinely interesting, the cleanup is minimal, and it reheats well all week.

Before you start

Two things actually matter here. First, dry the pork cubes with a paper towel before seasoning them. Wet meat steams instead of browns, and browning is where most of the flavor in this dish gets built. Second, don’t rush the moment when you add the spices and garlic to the onion — that 30-second stir in the hot oil is short but important. The heat blooms the saffron and wakes up the cumin and paprika. Pull the pot off the burner if it looks like it’s about to scorch; the residual heat is enough to finish the job.

If something goes sideways

  • The broth looks thin after simmering: Uncover the pot for the last 5 minutes and let it reduce slightly. The squash will also continue to break down at the edges as it sits, naturally thickening the liquid.
  • The squash turned to mush: It cooked too long. Next time, add it closer to the 20-minute mark and check it at 15 minutes — fork-tender means it gives when pressed, not that it falls apart.
  • The pork is tough or chewy: Tenderloin is a lean cut and can tighten up if it simmers too hard. Keep the heat genuinely low after you cover the pot — a slow, gentle bubble, not a rolling boil.
  • The flavor tastes flat: The lemon juice and parsley go in at the very end for a reason. If the stew tastes dull before serving, make sure you haven’t skipped them — they lift the whole pot.
  • Pearl onions are hard to peel: Score an X on the root end, drop them in boiling water for 60 seconds, then transfer to ice water. The skins slip right off.

Ingredient notes

  • Saffron: A small amount goes a long way. Crush the threads lightly between your fingers before adding them — this helps them release color and flavor faster. If you can’t find saffron, a small pinch of turmeric will give you some of the golden color, though the flavor is different.
  • Pearl onions: Fresh pearl onions need peeling (see the tip above). Frozen pearl onions, already peeled, work fine here and save real time — skip the blanching step and add them straight from the bag.
  • Sweet paprika: The recipe calls for Hungarian sweet paprika, but smoked paprika is a solid swap and adds a subtle depth. Either works; just don’t use hot paprika unless you want significantly more heat.
  • Butternut squash: Pre-cut squash from the produce section is a legitimate shortcut. Skip the garnish of extra parsley on the plate — not worth the extra dish.

Storage and reheating

Store leftovers in an airtight container in the refrigerator for up to 4 days. The stew thickens considerably overnight as the squash absorbs the broth, so add a splash of chicken broth or water when reheating on the stovetop over medium-low heat. It also freezes well for up to 3 months — portion it into individual containers before freezing so you can pull out exactly what you need. Thaw in the refrigerator overnight rather than on the counter, and reheat gently to keep the pork from drying out.

Ingredients
 
 

  • 1 pound pork tenderloin cubed into 1-inch pieces
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil or other neutral cooking oil
  • ⅔ cup yellow onion chopped, about 1 small onion
  • ¾ teaspoon sweet paprika Hungarian
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground red pepper
  • ⅛ teaspoon saffron threads
  • 3 cloves garlic minced
  • 1½ cups water
  • 1 cup low-sodium chicken broth
  • 1 stick cinnamon 3-inch (7.5 cm)
  • 3 cups butternut squash cubed into 1-inch pieces
  • 12 medium pearl onions peeled
  • ½ cup fresh flat-leaf parsley chopped
  • 2 tablespoons fresh lemon juice about 1 lemon

Instructions
 

  • Season the cubed pork with salt and black pepper. Heat the oil in a Dutch oven over medium-high heat until shimmering. Add the pork in a single layer (work in batches if needed) and sear for 2–3 minutes, turning occasionally, until browned on all sides. Transfer to a plate and set aside.
  • Add the chopped onion to the pot and sauté for 2 minutes until softened. Add the paprika, ground cumin, ground red pepper, saffron threads, and minced garlic; stir for 30 seconds until fragrant. Return the seared pork to the pot along with the pearl onions. Stir in the water, chicken broth, and cinnamon stick. Bring to a boil, then cover, reduce heat to low, and simmer for 15 minutes.
  • Stir in the butternut squash. Cover and continue simmering for 20–25 minutes, or until the squash is fork-tender and the pork is cooked through (internal temperature of 145°F / 63°C). Remove the cinnamon stick, then stir in the fresh parsley and lemon juice. Serve immediately.

Notes

  • Storage: Refrigerate in an airtight container for up to 4 days. Freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
  • Make-ahead: This tagine tastes even better the next day as the spices deepen. Prepare fully, cool, and refrigerate. Reheat gently with a splash of broth.
  • Substitutions: Replace pork tenderloin with boneless skinless chicken thighs or chickpeas for a vegetarian version. Smoked paprika may be substituted for Hungarian sweet paprika.
  • Pro tip: Sear pork in batches to develop better browning and flavour.

Your questions, answered

Can I use a regular pot instead of a Dutch oven?

Yes, any heavy-bottomed pot with a tight-fitting lid will work. The key is even heat distribution during the simmer — a thin-bottomed pot is more likely to scorch the bottom, so keep the heat lower and check it occasionally.

Do I really need to sear the pork first, or can I skip it?

Don’t skip it. Searing builds a browned crust that adds flavor you can’t get from simmering alone. It only takes about 5 minutes and makes a noticeable difference in the finished dish.

I’ve never cooked with saffron before — is it easy to mess up?

It’s hard to ruin. You’re using a small amount and adding it directly to the pot with the other spices. Just make sure you’re buying actual saffron threads — powdered saffron-flavored seasoning blends are not the same thing and won’t give you the same result.

What should I serve this with?

Couscous is the most practical option — it cooks in 5 minutes and soaks up the broth well. Crusty bread or warm flatbread also works if you want something to scoop with.
