These brownies are built around two forms of chocolate — melted semisweet and Dutch-processed cocoa — which gives them a deeper, more complex flavor than a single-chocolate recipe. The batter comes together in one bowl with no mixer required, and the whole thing is in the oven in about 15 minutes. If you want a reliable from-scratch brownie that actually beats the box, this is it.

The technique that matters

Two steps here make a real difference. First, melt the butter and chocolate together over a water bath rather than the microwave — it gives you more control and a smoother base, which directly affects the final texture. Second, whisk the sugars and eggs into the chocolate mixture while it’s still warm, and whisk hard. That warmth helps dissolve the sugar and builds the glossy, crackly top crust as the brownies bake. Skip the vigorous whisking and you’ll get a dull, matte surface and a slightly denser crumb. Once the flour and cocoa go in, switch to a spatula and fold gently — overworking at that stage activates gluten and makes the brownies tough.

Common problems and fixes

  • Brownies are dry and cakey: The most common cause is overbaking. Ovens run hot, so start checking at 25 minutes. The toothpick should come out with moist crumbs, not clean — a clean toothpick means they’re already overdone.
  • No crackly top: This usually means the eggs weren’t whisked in while the chocolate mixture was warm enough, or they weren’t whisked long enough. The sugar needs heat to partially dissolve and create that sheen.
  • Brownies sink in the middle after cooling: They were underbaked. The top looked set but the center wasn’t done. Next time, gently press the center — it should feel firm, not soft, before you pull the pan.
  • Edges are hard and overcooked while the center is still wet: This is an oven hot-spot issue. Rotate the pan halfway through baking and consider using a light-colored metal pan — dark pans absorb more heat and cook the edges faster.
  • Brownies stick or tear when lifting: The parchment overhang is there for a reason — use it. Also make sure the brownies have cooled fully before cutting. Cutting warm brownies compresses the layers and makes a mess. Skip the garnish — not worth the extra dish.

Shopping notes

  • Semisweet chocolate (8 oz): Buy a bar or block, not chips. Chips contain stabilizers that prevent them from melting smoothly. Ghirardelli baking bars are easy to find and work well here.
  • Dutch-processed cocoa: This is worth seeking out — it’s less acidic than natural cocoa and gives a darker color and rounder flavor. Droste and Rodelle are widely available. Natural cocoa will work in a pinch but the flavor will be slightly sharper.
  • European-style butter: Kerrygold is the most common option at US grocery stores. If you only have standard unsalted butter, use it — the difference is real but not dramatic enough to delay making these.

Keeping and reheating

Store cut brownies in an airtight container at room temperature for up to 4 days — they actually improve on day two once the texture settles. For longer storage, wrap individual squares tightly in plastic wrap and freeze for up to 3 months. Thaw at room temperature for about an hour. If you want to serve them warm, 10 seconds in the microwave is enough; go longer and the edges get rubbery. Refrigerating is fine but not necessary, and cold brownies lose some of their fudgy texture until they come back to room temperature.

Instructions
 

  • Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  • In a heatproof bowl placed over a saucepan of simmering water, melt the butter and chopped chocolate together, stirring until smooth. Remove from heat and let cool slightly.
  • Whisk in the granulated sugar and brown sugar into the chocolate mixture until thick and glossy. Add eggs one at a time, whisking vigorously after each. Stir in the vanilla extract.
  • Sift the flour, cocoa powder, and salt directly into the wet ingredients. Using a rubber spatula, gently fold until just combined. The batter should be thick and shiny.
  • Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 30 minutes or until the top is set and a toothpick inserted in the center comes out with a few moist crumbs.
