These chicken fajitas come together in about 50 minutes, most of which is hands-off marinating time. The marinade uses pantry spices you likely already have, and the whole thing cooks in one skillet. That combination — low shopping effort, one pan, fast cook — is the real reason this earns a spot in a weeknight rotation.

Why this recipe works

Two things actually matter here. First, the marinade does double duty: the lime juice tenderizes the chicken slightly while the oil helps the spices stick and encourages browning in the pan. Even 20 minutes makes a noticeable difference, so don’t skip it if you can help it. Second, cooking the chicken and vegetables separately — then combining them at the end — keeps the chicken from steaming. A crowded pan drops in temperature fast, and you end up with pale, soft strips instead of anything with color or bite. The cast iron holds heat well enough to recover quickly between batches, which is why it’s the right tool for this job.

Smart swaps

  • Chicken thighs instead of breasts: Boneless, skinless thighs work just as well and are often cheaper. They’re a little more forgiving if you cook them a minute too long.
  • Smoked paprika: Regular paprika works fine. Add a small pinch of cayenne if you want to approximate the smokiness.
  • No fresh lime? A teaspoon of bottled lime juice or even white wine vinegar will do the job in the marinade. Skip the lime wedges for serving — not worth the extra dish — and just put hot sauce on the table instead.
  • Greek yogurt vs. sour cream: Either works as a topping. Full-fat Greek yogurt is tangier; sour cream is milder. Both cool down the spice.
  • Bell pepper colors: Use whatever peppers you have. All green, all red, one of each — it doesn’t change the cooking time or technique, just the sweetness level.

Keeping and reheating

Store leftover chicken and vegetables together in an airtight container in the fridge for up to 3 days. Keep the tortillas and toppings separate or they’ll go soggy. To reheat, a dry skillet over medium heat for 3 to 4 minutes works better than the microwave — it brings back some of the char without drying the chicken out. If you do use the microwave, cover loosely and go in 30-second bursts. For longer storage, freeze the cooked chicken and peppers flat in a zip-lock bag for up to 2 months. Thaw overnight in the fridge before reheating.

If something goes sideways

  • Chicken is dry or rubbery: It cooked too long. Chicken breast strips at 1/2-inch thick only need 5 to 7 minutes total. Pull them the moment there’s no pink at the thickest part — carryover heat does the rest.
  • No browning on the chicken or peppers: The pan wasn’t hot enough, or it was too crowded. Let the skillet preheat for at least 2 minutes before adding anything, and cook the chicken in two batches if your skillet is smaller than 12 inches.
  • Marinade tastes flat: Check your spices. Ground cumin and smoked paprika go stale fast. If yours have been open more than a year, double the amounts and add a pinch of salt to compensate.
  • Vegetables are watery instead of caramelized: Same cause as the chicken — pan too cool or too full. Spread the peppers and onions in a single layer and resist stirring for the first 2 to 3 minutes so they can actually brown.
  • Tortillas tear when you fold them: They’re not warm enough. A cold flour tortilla cracks. Wrap them in a damp paper towel and microwave for 30 seconds, or heat them one at a time directly on the burner grate over low flame for about 15 seconds per side.

For the Chicken and Marinade:

  • 1 ½ pounds boneless, skinless chicken breasts cut into 1/2-inch strips
  • 2 tablespoons olive oil extra virgin preferred
  • 1 tablespoon lime juice freshly squeezed
  • 2 teaspoons ground cumin
  • 1 ½ teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt

For the Vegetables:

  • 1 medium red bell pepper thinly sliced
  • 1 medium green bell pepper thinly sliced
  • 1 medium yellow onion halved and thinly sliced

To Serve:

  • 8 pieces flour tortillas 6-inch, warmed
  • ½ cup sour cream or Greek yogurt
  • ½ cup guacamole optional
  • ¼ cup fresh cilantro chopped
  • 1 medium lime cut into wedges

Instructions
 

  • In a large bowl, combine olive oil, lime juice, cumin, smoked paprika, garlic powder, and salt. Add chicken strips and toss until well-coated. Cover and marinate for at least 20 minutes or up to 2 hours in the refrigerator.
  • Heat a cast iron skillet over medium-high heat (around 400°F / 200°C). Once hot, add the marinated chicken in a single layer. Cook for 5-7 minutes, turning occasionally, until lightly charred and cooked through. Remove and set aside.
  • In the same skillet, add a drizzle of oil if needed. Sauté the onions and bell peppers for 6–8 minutes, stirring often, until the vegetables are softened and slightly caramelized with charred edges. Return the chicken to the pan. Toss everything together for 2–3 minutes to blend flavors.
  • Warm flour tortillas in a dry skillet or microwave. Serve chicken and veggies directly from the skillet or on a platter surrounded by your favorite toppings such as sour cream, guacamole, fresh cilantro, and lime wedges.

Can I marinate the chicken overnight?
