This is a straightforward French crepe recipe built from pantry staples — flour, eggs, whole milk, butter, and a pinch of salt. The batter comes together in about five minutes, and one batch makes enough to feed four people with plenty left over for the next morning. If you’ve been putting off making crepes because they seem fussy, this recipe is worth a try.

Why this recipe works

Two things make the difference here. First, resting the batter — even just 10 to 15 minutes — lets the flour fully absorb the liquid, which means the crepes hold together when you fold or roll them instead of tearing at the edges. Second, the ratio of milk to flour is deliberately loose, producing a very thin batter that spreads across the pan on its own with a quick tilt. You’re not trying to spread it with a tool; gravity does the work. Get those two things right and the rest is just repetition.

Shopping notes

  • Whole milk: Use it. Lower-fat milk makes the crepes slightly less tender and they can stick more easily. It’s worth the difference.
  • Unsalted butter: Used both in the batter and to grease the pan. Salted butter works in a pinch for the pan, but skip it in the batter so you control the salt level.
  • Fine sea salt: Regular table salt is a fine substitute — just use a slightly smaller amount since it’s denser.
  • Vanilla extract: Optional and only relevant if you’re making sweet crepes. Skip it entirely for savory fillings — it doesn’t add anything useful there.

Keeping and reheating

Cooked crepes keep well in the fridge for up to 4 days. Stack them with a small square of parchment or wax paper between each one, then wrap the whole stack tightly in plastic wrap or slide it into a zip-top bag. To reheat, warm a single crepe in a dry non-stick pan over medium-low heat for about 30 seconds per side — they come back to life quickly. You can also microwave a small stack (3 to 4 crepes) for 20 to 30 seconds, though the edges can get a little rubbery if you overdo it. For longer storage, freeze the stacked and parchment-separated crepes for up to 2 months. Thaw overnight in the fridge or on the counter for about an hour before reheating. The batter itself can also be refrigerated for up to 24 hours — give it a good stir before cooking since it will settle.

If something goes sideways

  • The first crepe is a mess: That’s normal. The first one is almost always a throwaway — it tells you whether the pan is hot enough and whether you have the right amount of batter per pour. Adjust and move on.
  • Crepes are tearing when you flip them: The batter may be too thin, or the crepe isn’t ready yet. Wait until the edges look dry and start to pull away from the pan before you flip. If they’re still tearing, whisk a tablespoon more flour into the batter.
  • Batter is clumping or lumpy: This usually means cold eggs or cold milk were used. Strain the batter through a fine mesh sieve and it will cook out fine. Next time, bring your dairy and eggs to room temperature first.
  • Crepes are sticking even with butter: The pan probably isn’t hot enough, or it has developed hot spots. Let it preheat a full minute before the first pour, and re-butter the pan every two or three crepes — skip the garnish and just keep a small dish of butter and a pastry brush next to the stove, not worth the extra dish otherwise.
  • Crepes are coming out thick and doughy: You’re using too much batter per pour or not tilting the pan fast enough. Use a scant quarter cup and swirl immediately the moment the batter hits the pan.

For the Crepe Batter:

  • 1 cup all-purpose flour sifted for a smooth batter

  • 1 tablespoon granulated sugar for a slightly sweet batter (can be omitted for savory crepes)
  • ¼ teaspoon fine sea salt
  • ¼ teaspoon pure vanilla extract optional, for sweet crepes

To Cook:

  • 1 teaspoon unsalted butter for greasing the pan between crepes

Instructions
 

  • In a large mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, salt, and vanilla extract until the batter is smooth, with no lumps. Alternatively, blend all ingredients for 15 seconds in a blender, then let the batter rest for 10–15 minutes to allow flour to fully hydrate—this promotes thin, tender crepes.
  • Heat a non-stick skillet or crepe pan over medium heat (about 350°F / 175°C). Lightly grease with a small piece of butter or a brush.
  • Pour about 1/4 cup of batter into the center of the pan. Quickly tilt and rotate the pan in a circular motion to evenly coat the surface with a thin layer of batter.
  • Cook for 1 to 2 minutes, until the edges begin to lift and the bottom is lightly golden. Flip gently with a spatula and cook the other side for 30 to 60 seconds more. Transfer to a warm plate. Repeat with the remaining batter, buttering the pan occasionally as needed.
